INSTANT POT PIZZA CASSEROLE
All the flavors of your favorite pizza cooked as a casserole right in your Instant Pot/Ninja Foodi.

Steps:
- Turn on pot to the Sauté setting. Once the display reads HOT, add the sausage and onion and sauté until the sausage is completely cooked.
- Add Italian seasoning, oregano, garlic powder, red pepper flakes, salt, and pepper and stir. If you are using green pepper or mushroom, add them here.
- Add the broth and stir, scraping the bottom of the pot to deglaze by removing any browned bits stuck on the bottom of the pan. Cancel the Sauté function.
- Add the pasta evenly over the mixture and DO NOT STIR.
- Pour the pizza sauce over the pasta and to cover it completely and DO NOT STIR.
- Lock the lid in place and move the valve to the Sealing position. Pressure Cook/Manual on HIGH pressure for 4 minutes (half of the boiling time as instructed on the box).
- When finished cooking perform a Quick Release of the pressure by slowly moving the valve to the venting position. Do it slowly to prevent any splattering.
- Carefully open the lid and stir in half of the cheese and all but 9 pieces of pepperoni. Stir in olives or cooked bacon if using.
- Sprinkle the remaining Mozzarella cheese on top and then place the remaining pepperoni on top of the cheese. Close the lid and let the cheese melt.
- Serve immediately.

- Turn Instant Pot to sauté setting. When display says HOT add in the sausage and break it up*. Add in the onion. Brown the sausage for about 5 minutes. Add in garlic and sauté for 30 seconds. Drain any grease.
- Add in the broth and scrape the bottom of the pot so that nothing is sticking.
- Add in the pasta and press to submerge as much as possible but do not stir.
- Dump the pizza sauce over the pasta. Sprinkle the Italian seasoning over the sauce. Layer the pepperoni over the top. Don't stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let the pot sit for 5-10 minutes and then move the valve to venting. Remove the lid.
- Sprinkle cheeses on top and let melt. Stir and serve.

- Select saute setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, cook and stir sausage and onion until sausage is no longer pink and onion is tender, 5-7 minutes, breaking up sausage into crumbles; drain. Press cancel., Stir in mushrooms and broth. Add quinoa (do not stir). Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 2 minutes. Quick-release pressure. Press cancel., Stir in pizza sauce, pepperoni and green pepper; cover and let stand until pepper softens slightly, 5-10 minutes. Sprinkle servings with cheeses. - Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil, sausage, onion, and anchovies to the Instant Pot® once hot. Cook and stir, breaking up sausage until browned, about 5 minutes. Mix in bell pepper, mushrooms, and olives; stir to combine. Cancel Saute function.
- Scatter pasta evenly on top of sausage mixture. Pour in red wine. Spread pasta sauce evenly on top of the pasta, but do not stir.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 20 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid.
- Sprinkle mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper on top of the pasta. Stir to incorporate. Serve immediately.

PIZZA PASTA CASSEROLE
All your favorite pizza toppings mixed together with pasta make this Pizza Pasta Casserole a family favorite!

- Preheat oven to 350 degrees. Prepare the pasta as directed on the package.
- While the pasta is cooking, place a large skillet over medium high heat on the stove top. Warm up the olive oil in the skillet and then add the onions and green pepper.
- Cook for a few minutes until vegetables are tender, then add the mushrooms and garlic. Cook for 1 more minute. Push everything to the side of the pan and add the sausage.
- Cook the sausage, breaking it into small pieces as it cooks. Cook until it's no longer pink. Drain grease. Add in the pepperoni slices and stir together.
- Add in remaining ingredients to the skillet except for Mozzarella cheese.
- Turn the heat down to medium and let the mixture simmer for 2-3 minutes so that the flavors can meld together.
- Turn off the heat and add the cooked pasta to the skillet pan. Mix everything together.
- Spray a large 9 x 13 inch baking pan with non-stick cooking spray.
- Dump the pasta mixture into the pan. Top with Mozzarella cheese and any other toppings you prefer.
- Bake in the oven (uncovered) for about 30 minutes or until cheese is melted and pasta is heated through.
