This Instant Pot pork chili verde is packed full of tomatillos, cilantro, diced green chiles, fork-tender pork shoulder, and white beans. It's perfect for cold snowy days and tastes great when topped with Cotija cheese, cilantro, and crispy corn chips.

4 pounds boneless pork shoulder, cut into 1 inch chunks, extra fat cut off
Kosher salt, to taste
Black pepper, to taste
1 tablespoon olive oil
1 small yellow onion, diced
1-1/2 pounds tomatillos, husked and quartered
2 (4 ounce) cans diced green chilies, not drained
2 cups packed cilantro leaves and stems
4 garlic cloves
2 jalapenos, seeded
1 tablespoon dried oregano
1 teaspoon cumin
1-1/2 cups chicken stock
2 (15 ounce) cans white beans, drained
Fresh minced cilantro, for topping
Corn chips, for topping
Cotija cheese, for topping

Steps:

  • Season your chunked meat with a desired amount of kosher salt and black pepper.
  • Add oil to your Instant Pot and press the saute button.
  • When the oil is hot add the pork in batches and brown. Add your brown meat to a plate and add more oil between batches if necessary.
  • After all your pork is browned add in the onion and saute for about 5 minutes just to help soften the onions. Turn the Instant Pot off.
  • Let the pork and onions hang out while you make the puree for your soup. The Instant Pot will be off so the onions should be ok and not brown much.
  • In the jar of a blender add tomatillos, green chilies with liquid, cilantro, garlic cloves, jalapeños, oregano, cumin and the chicken stock.
  • Puree on high until the mixture is smooth.
  • Add the pork back to the Instant Pot and pour the soup puree over the pork. Stir to combine.
  • Secure the lid, make sure the nozzle is placed to "seal" and cook on the high manual setting for 50 minutes. The Instant Pot will take about 10 minutes to reach pressure.
  • When the cooking time is over manually release the pressure and remove the lid when unlocked.
  • Stir to combine and remove about 1/2 of the meat.
  • Shred and add back ot the pot and stir.
  • Stir in the white beans.
  • If the soup is thinner than you like you can put the Instant Pot on saute and cook down until your desired consistency is met.
  • To serve, top with a desired amount of fresh cilantro, corn chips and Cotija cheese.

1 tablespoon refined coconut or vegetable oil
2 pounds boneless pork, cubed
1 onion, chopped,
1 teaspoon garlic, minced
1/4 cup flour
2 teaspoons ground cumin
1 1/2 cups roasted green chile, skins, stems, seeds removed, chopped
6 to 8 tomatillos, peeled and quartered
2 cups chicken broth
1 teaspoon salt
cilantro and lime wedges (to garnish)

Steps:

  • Brown the pork cubes in the oil, add the onion followed by the flour, sauté until pork begins to brown.
  • Add the ground cumin and garlic. Stir to combine.
  • Add the green chile and tomatillos.
  • Stir in the broth/stock and salt. Be sure to stir and scrape vigorously! Any flour stuck to the bottom can potentially cause a "burn" error.
  • Lock the lid on the Instant Pot, and set for 30 minutes under high pressure. When the cycle is complete, you can allow it to de-pressurize naturally, or you can do a quick release. 30 minutes is adequate to get tender pork chunks! Check seasoning. Garnish as desired.
  • Serve with rice, quinoa, farro, etc. or rolled up in a tortilla. Enjoy!

Chili is best simmered low and slow, but sometimes you don't have the time. A pressure cooker helps tenderize pork shoulder, a cut of meat that's usually tough, in minutes rather than hours. A mixture of green chiles, cilantro, garlic and lime brighten up this easy and wonderfully speedy.

8 scallions, cut into 2-inch lengths
3 cloves garlic, peeled
1 poblano pepper, stemmed and cut into small chunks
1 jalapeno, stemmed and cut into small chunks
1/2 cup packed cilantro leaves and stems
4 to 5 pounds boneless pork shoulder, cut into 1 1/2-inch cubes
Two 7-ounce cans mild diced green chiles
2 tablespoons ground cumin
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
Two 16-ounce cans pinto beans, rinsed and drained
Juice of 2 limes
Thinly sliced avocado
Crumbled Cotija
Cilantro leaves
Lime wedges

Steps:

  • For the chili: In a small food processor, combine the scallions, garlic, poblano, jalapeno and cilantro. Process until a chunky paste forms, 2 to 3 minutes. Scrape into a 6-quart Instant Pot®, add the pork, canned chiles with their liquid, the cumin, salt and pepper. Stir together.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 35 minutes. After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete.
  • Being careful of any remaining steam, unlock and remove the lid. Set the pot to saute on high and stir in the beans and lime juice. Taste for seasoning and add more salt or pepper, if needed. Simmer, stirring occasionally, until thickened slightly, 10 to 15 minutes. For a thicker chili, simmer until it reaches your desired consistency.
  • Meanwhile, prepare the toppings. When ready to serve, ladle the chili into shallow bowls and garnish with avocado, Cotija, cilantro and lime wedges.

½ cup all-purpose flour
1 teaspoon salt
1 tablespoon ground black pepper
½ teaspoon ground cumin
1 (3 pound) boneless pork shoulder roast, trimmed of excess fat and cut into 1-inch cubes
2 tablespoons olive oil, or more if needed
1 large onion, chopped
3 cloves garlic, minced
2 cups chopped fresh tomatillos
1 (7 ounce) can diced green chiles, drained
2 fresh jalapeno peppers, seeded and chopped
2 teaspoons dried marjoram
½ cup chopped fresh cilantro
1 cup water
1 pinch salt, or to taste
2 tablespoons sour cream, divided
6 sprigs cilantro

Steps:

  • Stir together the flour, 1 teaspoon salt, pepper, and cumin in a large bowl. Place the cubed pork into the mixture, and stir well to coat the meat with the seasonings.
  • Heat the olive oil in a large, heavy pan or Dutch oven over medium-high heat until the oil shimmers. Working in batches if necessary, place the meat into the hot pan in a single layer. Pan-fry the pork until brown on all sides, about 15 minutes. Remove the pork to a bowl, and cover to keep warm.
  • Cook and stir the onion in the hot pan over medium heat, adding more olive oil if necessary, until the onion is translucent and beginning to brown, about 7 minutes. Return the meat to the pan and stir in the garlic, tomatillos, chiles, marjoram, chopped cilantro, and water. Check seasoning and add 1 pinch of salt to taste, if needed. Cover and simmer over low heat, stirring occasionally, until the meat is tender, about 1 hour. Skim excess fat off the stew before serving in bowls, garnished with a dollop of sour cream and a cilantro sprig on each bowl.

3 ½ pounds pork tenderloin, cut into 1/2-inch cubes
½ cup all-purpose flour, or as needed
salt and ground black pepper to taste
2 tablespoons olive oil, divided
¾ pound fresh tomatillos, husks removed and halved
4 cloves garlic, minced
2 medium onion, chopped
2 cups chicken broth
½ tablespoon ground cumin
½ teaspoon chopped fresh oregano
1 bay leaf
½ pound serrano chile peppers, seeded and chopped
½ pound green chile peppers, seeded and chopped
1 jalapeno pepper, seeded and chopped
⅛ cup chopped fresh cilantro

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Dust pork cubes in flour and season with salt and pepper.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Brown pork in the hot oil, about 5 minutes. Set aside. Place tomatillos and garlic cloves into a baking pan.
  • Broil tomatillos and garlic in the preheated oven for 7 minutes. Turn off the broiler and let rest in the oven for 15 minutes. Remove from the oven and let cool enough to handle, about 10 minutes. Mince roasted garlic.
  • Heat remaining tablespoon oil in a pot over medium-high heat. Saute onion in the hot oil until softened, about 5 minutes. Add browned pork, chicken broth, minced garlic, cumin, oregano, and bay leaf; reduce heat to low and let simmer.
  • Mix roasted tomatillos, serrano peppers, green chile peppers, and jalapeno pepper together in a bowl. Add to the pot. Continue to simmer over low heat until pork is tender and an instant-read thermometer inserted into the center of a cube reads at least 145 degrees F (63 degrees C), about 20 minutes. Stir in cilantro and remove bay leaf before serving.

Steps:

  • Remove the roast pieces from the Instant Pot and shred using two forks (it will literally fall apart).
  • Add pork back into Instant Pot and mix with all the flavorful liquid.
  • Serve on tortillas and topped with pico de gallo, fresh cilantro, shredded cheese, or your favorite toppings.

10 tomatillos - husked, stemmed, and halved
3 jalapeno peppers, halved and seeded

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), select Saute function, and add 1 tablespoon olive oil. Add tomatillos, jalapenos, and crushed garlic to the hot oil. Saute, flipping once or twice, until lightly browned, 6 to 7 minutes. (Remove garlic earlier if it browns sooner.)
  • Transfer vegetables to the bowl of a food processor and puree with 2 cups chicken broth until smooth.
  • Clean and dry the inner pot of the Instant Pot®. Select Saute function and heat remaining olive oil. Add pork, onion, bell pepper, oregano, cumin, salt, and pepper. Stir and saute, adding more oil if necessary, until pork is browned on all sides and vegetables are soft, 7 to 8 minutes. Cancel Saute function. Pour in remaining chicken broth and scrape the bottom of the pot with a wooden spoon to loosen any browned bits. Stir in reserved tomatillo puree.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Unlock and remove the lid. Stir in chopped cilantro.
