MOCHA BANANA BREAD



Mocha Banana Bread image

Classic banana bread gets a facelift with the addition of espresso and mini chocolate chips studded throughout. It all comes together with a sweet espresso glaze.

Nonstick cooking spray, for greasing
2 cups all-purpose flour, plus more for dusting
1/4 cup plus 2 tablespoons instant espresso powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 cup granulated sugar
1/2 cup vegetable oil
4 very ripe bananas, mashed (about 2 cups)
2 large eggs
1 teaspoon pure vanilla extract
1 cup mini semisweet chocolate chips
1/2 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick cooking spray; dust with flour and tap out the excess.
  • Combine the 2 cups flour, 1/4 cup espresso powder, the baking soda, baking powder, cinnamon and salt in a large bowl. Whisk together the granulated sugar, oil, bananas, eggs and vanilla in another large bowl until smooth. Fold in the flour mixture, a third at a time, until just combined after each addition. Fold in 3/4 cup of the chocolate chips. Pour the batter into the prepared pan.
  • Bake until the bread starts to puff and is just set at the edges, about 40 minutes. Reduce the oven temperature to 325 degrees F, then continue to bake until a toothpick inserted into the center comes out clean, about 35 minutes more. Transfer the pan to a wire rack to cool completely, about 3 hours. Flip the bread out of the pan and place onto a serving platter.
  • Just before serving, mix the confectioners' sugar with the remaining 2 tablespoons espresso powder and 1 tablespoon water in a small bowl until smooth. Spread the glaze on top of the banana bread and sprinkle with the remaining 1/4 cup chocolate chips.

1/2 (15-ounce) box refrigerated pie crust, thawed
2 cups heavy whipping cream
1 can light coconut milk
4 teaspoons instant espresso powder
1 teaspoon coconut extract
2 (1-ounce) boxes cheesecake flavored sugar-free instant pudding
1 cup sweetened flake coconut, plus 1/3 cup toasted coconut, for garnish
Whipped topping, for garnish

Steps:

  • Preheat oven to 450 degrees F. Lightly spray backside of muffin pan with cooking spray; set aside.
  • Unroll pie crust. With a 3 1/4-inch round cutter (or an 8 ounce pineapple can with the top and bottom removed), cut out 6 rounds. Form rounds over the back of prepared muffin cups to make dessert cups. Prick cups lightly with a fork. Bake in preheated oven for 8 to 10 minutes or until golden. Remove from oven; set aside to cool.
  • While dessert cups are baking, add cream, coconut milk, instant espresso powder, and coconut extract to a small mixing bowl. Stir to combine. Sprinkle instant pudding mix over cream mixture and with an electric hand mixer on low speed beat until medium stiff beaks form; about 6 minutes. Fold in half of the coconut until combined.
  • Spoon pudding mixture into cooled dessert cups. Top with a dollop of whipped topping and sprinkle with toasted coconut.

Steps:

  • Place ingredients in bread machine pan in the order suggested by the manufacturer. Select white bread setting. Start.
  • To bake bread in oven: select dough or manual cycle. Once cycle is complete, shape dough and place in a greased loaf pan. Allow to rise in a warm spot until doubled in size. Bake in a preheated 350 degrees F (175 degrees C) oven for 35 to 45 minutes or until a thermometer inserted in the center of the loaf reads 200 degrees F (95 degrees C).

I was inspired one day in culinary school after one of our bread baking sessions and came up with this bread. I have tweaked it a little bit to improve it. It is good served with a sweet cinnamon butter.

Number Of Ingredients 12

6 cups ap flour
3/4 cup cocoa powder
3/4 cup brown sugar, packed
1/2 cup super strong coffee (I've used espresso and New Orleans iced coffee concentrate)
1 1/2 cups warm water
1 tablespoon yeast
1 egg
3 tablespoons butter
2 tablespoons bittersweet chocolate chips
1 teaspoon salt
2 tablespoons milk
2 tablespoons melted butter

Steps:

  • Heat the coffee and water to 110 - 130 deg F.
  • Melt the chocolate chips and butter together.
  • In the bowl of a standing mixer, mix 4 c flour, salt, brown sugar, yeast and cocoa powder.
  • On low speed, slowly add the water and coffee.
  • Mix until incorporated, scraping the sides of the bowl as necessary.
  • Add the chocolate/butter mixture and the egg.
  • Increase the speed of your mixer to medium, add the remaining flour a couple of tablespoons at a time, until the dough forms a ball and scrapes the sides of the bowl pretty well clean.
  • Knead in the mixer for 5 - 7 minutes, until the dough is smooth and elastic.
  • Remove the dough from the bowl, knead briefly on a very lightly floured counter.
  • Form the dough into a ball, place it back in the bowl, cover it with a lint free towel and let it rise until doubled in size - 45 minutes to an hour.
  • Punch the dough down, shape into two round loaves. Cover and let rise again, until double, about 30 - 45 minutes.
  • Preheat the oven to 350.
  • Mix the 2 tbsp milk and the 2 tbsp melted butter in a small bowl. Brush over the tops of your loaves.
  • Bake for 35 - 40 minutes.

1 cup heavy whipping cream
1/2 cup confectioners' sugar
MOCHA FROSTING:
1 teaspoon vanilla extract

4 ounces unsweetened chocolate, chopped
1/2 cup brewed coffee
2 teaspoons vanilla extract
3 to 3-1/4 cups confectioners' sugar

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Line three 9-in. round baking pans with waxed paper; set aside. , Meanwhile, preheat oven to 375°. In another bowl, beat egg yolks until slightly thickened. Gradually add 1/2 cup sugar, beating until thick and lemon-colored. Beat in vanilla. Combine nuts, crumbs, baking powder and 1/2 teaspoon salt; stir into yolk mixture until combined. , Add remaining salt to egg whites; with clean beaters, beat on medium until soft peaks form. Gradually add remaining sugar, 2 tablespoons at a time, beating on high after each addition until sugar is dissolved. Continue beating until soft glossy peaks form. Fold a fourth of the egg whites into batter, then fold in remaining whites. Divide among prepared pans. , Bake 20-25 minutes or until tops spring back when lightly touched. Invert pans; cool 20 minutes. Remove from pans to wire racks; cool completely. Remove waxed paper., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar and vanilla; beat until stiff peaks form. Cover and refrigerate until assembling., In a large saucepan, melt butter and chocolate over low heat. Remove from heat. Stir in coffee, vanilla and enough confectioners' sugar to achieve frosting consistency. Spread filling between layers. Frost top and sides of cake. Garnish with pecans if desired.
