ASPARAGUS ROLL-UPS
These roll-ups are simply divine. A friend shared the recipe after serving them at a church brunch, where they disappeared fast. They make a unique finger food, a side dish at supper or a lovely lunch served with soup.

Steps:
- Preheat oven to 375 degrees. Using a sharp knife, split each chicken breast in half horizontally, then pound between 2 pieces of plastic wrap until about 3/8 inch thick (you should have 8 flattened pieces). Season on both sides with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Working in batches, saute chicken breasts and garlic until chicken is light brown on one side only, about 2 minutes; discard garlic.
- Transfer chicken to a baking sheet, browned side down. Sprinkle chicken pieces with half the cheese; layer each with a tomato slice and 4 asparagus pieces. Roll up; secure with a toothpick. Sprinkle remaining cheese over rolls; bake until chicken is cooked through, 15 to 20 minutes. Remove toothpicks. Serve hot.

Steps:
- Fill a large bowl with ice water. Bring about 1 inch of water to a boil in a large skillet. Add the asparagus; cook until bright green and crisp-tender, 2 to 5 minutes, depending on the thickness of the asparagus. Drain and transfer to the ice water to stop the cooking; drain and pat dry. Preheat the oven to 400 degrees F.
- Roll out the puff pastry into a 10-by-16-inch rectangle on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Bake until light golden brown, about 12 minutes. Let cool slightly on the baking sheet.
- Meanwhile, mix the fontina, comte, shallot, egg yolks, milk, nutmeg and a pinch each of salt and pepper in a bowl until combined. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides. Toss the asparagus with the olive oil, 1/4 teaspoon salt, and pepper to taste. Arrange the asparagus on the tart and bake until the cheese mixture is slightly puffy, 15 to 20 minutes. Sprinkle with the lemon zest. Serve warm or at room temperature.

Steps:
- Preheat oven to 475 degrees F (245 degrees C). Grease a baking dish. In a bowl, mix together the mayonnaise, Dijon mustard, lemon juice, lemon zest, tarragon, salt, and pepper until the mixture is well combined. Set aside.
- Cook asparagus in the microwave on High until bright green and just tender, 1 to 1 1/2 minutes. Set the asparagus spears aside. Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of about 1/4 inch. Repeat with the rest of the chicken breasts.
- Place 1 slice of provolone on each chicken breast, and top the cheese with 4 asparagus spears per breast. Roll the chicken breasts around the asparagus and cheese, making a tidy package, and place, seam sides down, in the prepared baking dish. With a pastry brush, apply a coating of the mayonnaise mixture to each chicken breast, and sprinkle each with panko crumbs, pressing the crumbs into the chicken to make a coating.
- Bake in the preheated oven until the crumbs are browned and the chicken juices run clear, about 25 minutes.

CHEESE, PROSCIUTTO AND ASPARAGUS CRUSTED BUNDLES
Want something that is great for every night but is amazing for dinner parties, holidays or a special event but very very easy. A few slices of prosciutto from your grocer's deli, some store bought crescent rolls and asparagus. Now if you want to get really special, buy a mix of white, green and sometimes you can find the red asparagus. I did this for a Christmas party and it was a hit. But if you can't get other colors, get green, that is just fine.

Steps:
- Asparagus -- Pre cook the asparagus just 1 1/2 minutes in the microwave just lay flat on a paper towel and cover with a damp paper towel. Just to get a head start.
- Rolls -- Spread out the crescent rolls and press the pre cut seems together to form one large sheet. Cut in half top to bottom and then cup each half in 3 strips. Spread with some of the boursin or herb cheese. (Thin layer, not heavy).
- Wrap -- 4-5 asparagus spears with prosciutto. I like to alternate the spears going in different directions to make sure they cook evenly. Then wrap in the strips of crescent rolls a spiral pattern around the asparagus and prosciutto. Make sure you leave the tips and the very ends open (a inch or more) but the rest should be wrapped with the crescent roll.
- Bake -- Place the wrapped asparagus bundles on a cookie sheet lined with foil or parchment paper. Melt the butter in the microwave and brush with butter. Sprinkle with parmesan and bake in a 400 degree oven for 14-16 minutes until golden brown.

- Elvis Empanadas. One of Elvis's favorite meals was a bacon, peanut butter, and banana sandwich, and it's a really tasty mix. These empanadas take up the decadence a couple notches, and they are simple to make.
- Asparagus, Ham, & Cheese Bites. These have the just-right amount of savory flavor, creaminess, and freshness to make perfect little appetizers. Use an herbed or onion cream cheese for the best results.
- Chocolate Nutella Croissants. You only need some Nutella to make these inspired chocolate-hazelnut croissants. Spread a thin layer of Nutella down a crescent triangle roll before rolling it up.
- Bacon Crack. It only takes some bacon, maple syrup, brown sugar, and a pinch of cayenne pepper layered on top of crescent rolls to make crazily addictive "bacon crack."
- Cinnamon Crescent Twists. These crescent twists arise out of ordinary crescent roll dough. Instead of splitting them into separate triangles, you keep the dough in rectangles.
- Bacon, Egg, & Parmesan Squares. This savory breakfast is baked on crescent roll dough joined together to form squares. Just pinch the sides to form the walls, and then fill with bacon, eggs, Parmesan, and basil for a gorgeous savory breakfast tart.
- Taco Pops. These are probably the cutest use of crescent rolls out there, and they are not hard to execute. Stuff squares of crescent roll dough with taco filling, roll them into balls, bake in the oven, and then stick your taco pops onto lollipop sticks.
- Apple Dumplings. The recipe for these amazing little bundles sort of takes your breath away (and might make your nutritionist feel a little faint), as it combines Granny Smith apples, a generous amount of butter and sugar, and a can of Mountain Dew.
- Cranberry Brie Crescent Braid. I love the simplicity of this recipe; all you need is some brie, cranberry sauce, and crescent rolls to make this pretty pastry braid.
