Instant Pot Shrimp Scampi is a classic addition to your recipe repertoire - easy, quick and delicious with juicy shrimps or prawns cooked in a butter, lemony, garlicky white wine sauce.

12 oz Shrimp
5 cloves garlic (** roughly chopped)
1/2 tsp red pepper flakes (**use less if you are intolerant to spicy food)
1/4 tsp Paprika
1/3 cup white wine (**best wines listed in the blog post)
3 tbsp water
2 lemon (**sliced into circles)
3 tbsp Unsalted Butter
2 tbsp Olive Oil (**extra light or light olive oil)
ground black pepper (**according to taste)
salt (**use according to your personal preference.)
parsley (** chopped used for garnish.)

Steps:

  • Saute Shrimp: Set the Instant Pot on SAUTE function kept at NORMAL. Add 3 tbsp butter and when the butter is moderately hot gently release the de-shelled, de-veined shrimps. Saute for about 1 min or until the shrimp turn pink. Set them aside in a clean dry bowl. This will add more flavor. However, you can skip this step & than add the frozen thawed raw shrimp directly into the sauce just before pressure cooking.
  • De-glaze Pot: Add 2 tbsp olive oil in the same pot and gently release the chopped garlic. Saute until the garlic is just fragrant. Next, pour the white wine and add all the seasonings along with salt. De-glaze the pot very well so that there are absolutely no bits and crumbs stuck at the bottom of the pot.
  • Pressure Cook: Add back the sautéed shrimp and just 3 tbsp water. Layer the Shrimp. Throw in the lemon rings on top. CANCEL the SAUTE function. Close the lid of the Instant Pot & seal the valve. Pressure Cook on HIGH for just 0 minutes. You can do this by pressing the PRESSURE COOK Button and than press down the adjust button to set the time to zero. Once, the pressure cooking cycle is over the Instant Pot will begin to beep. Do a Quick Pressure Release (QPR) immediately by moving the valve from the SEALING to the VENTING position.
  • Serve: When the pin drops open the lid carefully. Garnish with chopped parsley and enjoy! You can serve the Shrimp Scampi with Zucchini Noodles, a light salad or steamed veggies.

1 lb. Pasta of choice.
1 lemon
5 cloves crushed garlic
1 cup chicken broth
1/2 cup White wine
1 bunch chopped green scallions
1/2 stick butter
pinch kosher salt
16 oz. Frozen clean and deveined shrimp with tail
Parsley and pepper to garnish on top of pasta when finished

Steps:

  • Add 3 cups of water to the Instant Pot. Add pasta. Set pressure to a high level for 6 minutes. Quick-release away from cabinets
  • Remove pasta from the pot. Drain in a colander and rinse pasta. Keep aside.
  • Next, turn your pot on saute mode and add 4 tablespoons of butter. Once the butter starts melting, add your chopped garlic and scallions. Saute using spurtles HERE and continue to stir until lightly brown.
  • Add one cup of chicken broth, white wine, a pinch of kosher salt, and pepper to the pot
  • Cut a lemon in half and squeeze one half in with the broth wine and seasonings.
  • Add frozen shrimp in and stir for a minute or two. Add pasta back in the pot. Mix all well together. Squeeze the other half of lemon on top. Add grated cheese and a little more pepper. Dinner is ready! Enjoy.

1 teaspoon toasted sesame seeds, or to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter in the pot. Add shallot and saute for 1 minute. Add garlic and ginger to the pot and saute for 1 minute more.
  • Pour in sherry and scrape the bottom of the pot to loosen any browned bits. Allow sherry to cook for 3 minutes, then push Cancel. Stir in the chicken broth, soy sauce, and pepper. Add shrimp to the pot.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 5 to 10 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in 2 tablespoons green onions and sesame oil. Garnish with sesame seeds and remaining green onions.

1 lb of peeled, deveined and frozen large shrimp (tail on or off is your choice. Just make sure it's frozen and try to use raw instead of cooked as I find raw frozen shrimp cooks best in the Instant Pot since shrimp cooks so quickly and can get tough if cooked too long! I know I used pre-cooked shrimp in the video because I already had it in my freezer but I highly suggest using FROZEN RAW shrimp for best results)
2 tbsp (1/4 stick) of salted butter
2 shallots, diced
1 tbsp of crushed garlic
1/4 cup of white cooking wine
1/2 cup of chicken broth (I used 1/2 tsp of Chicken Better Than Bouillon + 1/2 cup of water)
Juice of one lemon, freshly squeezed
1/2 tsp of kosher salt
1/2 tsp of ground black pepper
1 tbsp of dried parsley flakes
1 tbsp of Parmesan cheese
A loaf of crusty Italian or French bread, for dipping in the sauce

Steps:

  • Add the butter to your Instant Pot, and select "Sauté" and "Adjust" so it's on the "More" setting so the butter melts. Add the shallots and cook for about 2 minutes until lightly brown and then add the garlic and stir for another minute so it browns as well
  • Next, add in the wine and deglaze the bottom. Let cook for 1 minute so the alcohol burns off and sauce thickens
  • Then, add the frozen shrimp and pour the chicken broth and lemon juice over it as well as the salt, pepper and dried parsley flakes and give it a quick stir
  • Secure the lid and hit "Manual" or "Pressure Cook" High Pressure for 1 minute (and only 1 minute). If using fresh and unfrozen shrimp, set for 0 minutes. Quick release when done and stir in the cheese to thicken (and add more to taste)
  • Enjoy!

1/4 cup dry white wine
4 garlic cloves, finely chopped

Steps:

  • Toss shrimp, wine, and garlic in cooker insert; season with salt and pepper. Lock on lid, making sure steam-release valve is in the proper sealed position. Select "Manual" and program for 1 minute at high pressure.
  • As soon as the time has elapsed, turn off cooker, "Quick Release" the steam, and unlock lid. The shrimp should be opaque all the way through. Using a slotted spoon, transfer shrimp to a medium bowl, leaving juices behind.
  • Select "Sauté" and simmer liquid until reduced by half, about 6 minutes. Add butter and stir until melted and incorporated and sauce is thick. Return shrimp to pot, add parsley and lemon juice, and toss to combine. Transfer to a platter to serve.

The genius of this recipe is that all of the ingredients--wine, garlic, shrimp -- even the pasta -- cook together in one pot. Just make sure to use shrimp that's still frozen or they will overcook. You don't have to serve garlic bread with the dish, but there's nothing better for sopping up all that delicious buttery sauce.

2 tablespoons olive oil
6 cloves garlic, chopped
3/4 cup dry white wine
Juice and zest of 1 lemon

12 ounces thin spaghetti, broken in half
1 1/2 pounds frozen peeled and deveined shrimp
Garlic bread, for serving, optional

Steps:

  • Add the butter, olive oil and garlic to a 6- or 8-quart Instant Pot® multi-cooker and set to high saute (see Cook's Note). Cook, stirring often, until the garlic is softened but not browned, about 3 minutes. Add the wine, lemon juice and zest, red pepper flakes, 2 teaspoons salt and several grinds of pepper. Bring to a boil and let simmer 1 minute. Add 2 cups water, then add half of the pasta all in one direction and then the other half of the pasta in a criss-cross fashion. Top with the shrimp and half of the scallions.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 1 minute. After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 5 minutes, being careful of any remaining steam, unlock and remove the lid.
  • Using tongs, toss the pasta to evenly coat with the sauce and break up any clumps. Top with the remaining scallions and serve with salad and garlic bread if using.

1 tablespoon butter
1 tablespoon olive oil
1 large or 2 small shallots, halved and thinly sliced ((about ½ cup))
4 cloves garlic, (minced)
¼ cup dry white wine
8 ounces angel hair pasta
2 ½ cups chicken broth
¼ teaspoon crushed red pepper flakes
1 pound large frozen shrimp (size 20-30), deveined, shells and tails removed ((do not thaw, see note))
¼ teaspoon kosher salt
½ cup grated Parmesan cheese
¼ cup chopped fresh parsley
2 tablespoons lemon juice

Steps:

  • Heat Instant Pot on "Saute" function. Add butter, olive oil, shallots, and garlic. Cook, stirring constantly, until shallots soften, 2-3 minutes.
  • Add wine and cook, stirring, until wine has reduced slightly, about 1 minute. Turn Instant Pot off.
  • Add 1 ¼ cups broth to pot, scraping up any brown bits. Crack pasta in half and layer in a criss cross pattern. Add remaining broth and separate strands of pasta as much as possible. Sprinkle with red pepper flakes and then add frozen shrimp to the top, without stirring. Sprinkle with salt.
  • Secure Instant Pot lid and turn valve to seal. Set on "Pressure Cook" or "Manual" (depending on your model) for 0 minutes (not a typo!). If your Instant Pot model will not accept 0 minutes as a setting, simply press Cancel when you hear the signal that it's reached full pressure.
  • Once the Instant Pot has reached full pressure, immediately release pressure by doing a "quick release" and turning valve to vent.
  • Remove cover and stir in Parmesan cheese, fresh parsley, and lemon juice.
  • Taste and season with additional salt and red pepper flakes as needed. Serve immediately.

  • Set Instant Pot to saute. Add the oil and butter and let heat 2 minutes. Add the garlic and parsley and cook for 3 minutes, stirring. Add white wine, salt, pepper and red pepper flakes. Let heat for 3 minutes and add shrimp to the pot. Cook until the shrimp is bright pink in color, approximately 5 minutes. Remove shrimp from the pot (leave juices).
  • Add the chicken broth/stock and lemon juice and deglaze pot (scrape pieces from the bottom with a spoon).   • Bring a large pot of water to boil (salt water if desired). Add pasta and cook according to directions (you’ll want the pasta to be “al dente”).
  • While pasta is cooking, Rinse shrimp and pat dry with paper towels. Season with salt and pepper to taste. Add olive oil and butter to Instant Pot and select the SAUTE function (low heat). When hot add garlic and cook until fragrant. Add white wine, chicken stock and red pepper flakes (if using). Stir with a wooden spoon and make sure no bits of garlic are stuck to the bottom of the pot.
  • Turn off SAUTE mode (by selecting CANCEL). Add shrimp and lock lid in place. Set vent to SEALING. Set Instant Pot to Manual/Pressure Cook for 1 minute on high pressure. Once cooking cycle has completed do a Quick Release (QR) to release the pressure.
  • Add cooked pasta to Instant Pot and stir to combine with shrimp. Squeeze the juice of one lemon (about 1 Tbsp) over pasta and shrimp. Stir in chopped parsley. Serve, garnish with grated Parmesan cheese if desired.
