Instant Pot® Sloppy Joes image

A combination of lean ground beef and apple cider vinegar makes this sloppy Joe recipe slightly sweet and slightly tart, made right there in your Instant Pot®. Enjoy!

1 tablespoon avocado oil
1 ½ pounds lean ground beef
1 cup finely diced onion
1 cup finely diced red bell pepper
1 teaspoon sea salt
ground black pepper to taste
1 ½ teaspoons finely diced garlic
¼ cup apple cider vinegar
¼ cup water
3 tablespoons dark brown sugar
1 teaspoon dry mustard
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 tablespoon chili powder
1 pinch red pepper flakes
1 ½ cups crushed and strained tomatoes (such as Aurora®)
8 hamburger buns
4 tablespoons butter, or as needed

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and tip pot to coat the entire bottom. Add ground beef, onion, and red bell pepper. Season with salt and black pepper. Cook and stir until vegetables are soft and beef is no longer pink, 5 to 7 minutes. Drain and discard grease.
  • Add garlic to the pot and cook another 30 seconds. Add vinegar. Stir in water, brown sugar, mustard, Worcestershire sauce, tomato paste, chili powder, and red pepper flakes. Add crushed tomatoes and stir well.
  • Close and lock the lid and close the vent. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Meanwhile, toast hamburger buns and coat with butter.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Serve on toasted buns.

Wonderfully sweet and tangy Sloppy Joes that I grew up with, but veganized! You won't find any bell peppers here. This is far more wholesome than most Sloppy Joe recipes. The spices can be easily adjusted. These are also great with sweet potato fries! Try this for a quick and economical weeknight meal.

1 tablespoon oil
½ medium onion, chopped
1 pound vegan meatless grounds (such as Smart Ground® or Yves®)
1 cup ketchup
3 tablespoons brown sugar, or more to taste
1 tablespoon apple cider vinegar
2 teaspoons ground mustard
1 teaspoon dried dill weed, or to taste
freshly ground black pepper to taste
4 hamburger buns, split

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and cook until soft and translucent, about 5 minutes. Add meatless grounds and break up the clumps with a spoon until crumbly. Cook until browned and heated through, about 5 minutes.
  • Reduce heat to low. Add ketchup, brown sugar, apple cider vinegar, ground mustard, dill, and pepper. Mix well, cover, and let simmer until heated through, 3 to 4 minutes. Adjust seasonings if necessary.
  • Serve on hamburger buns.

1 cup green/brown lentils
1 cup red lentils
3 cups water
28 ounces canned crushed tomatoes (I love the Muir Glen Fire Roasted variety)
3 Tablespoons tomato paste
2 Tablespoons Vegan Worcestershire sauce (I love The Wizard's brand or Annie's Naturals)
1 teaspoon salt
1 Tablespoon ground cumin
1 teaspoon dried oregano
1 large onion (chopped)
1 sweet bell pepper or poblano pepper (chopped)
1 Tablespoon olive oil or grapeseed oil (optional)
2 Tablespoons apple cider vinegar
2 Tablespoons maple syrup (optional)
1 cup Vegan Ground Beef (optional)

Steps:

  • Sauté onion, salt, and bell pepper for 3 minutes.
  • Add cumin and oregano and cook for 1 minute.
  • Add tomato paste and stir to coat and cook for another minute or two.
  • Add the remaining ingredients and stir throughly, making sure nothing is stuck to the bottom of the pot.
  • Bring to high pressure and cook for 13 minutes.
  • Allow for a natural release, stir, and serve over toasted hamburger buns.
  • Optional: Stir in 1 cup of vegan ground beef after pressure is released and simmer on sauté function before serving.

1 Tablespoon butter
1 pound lean ground beef ((or ground turkey))
½ red bell pepper (diced)
½ red onion (diced)
3 Tablespoons brown sugar
3 Tablespoons red wine vinegar
1 Tablespoon steak seasoning
1 Tablespoon Worcestershire sauce
15 ounces tomato sauce
8 hamburger buns

Steps:

  • Press the SAUTE button. Add in the butter and let it melt.
  • Add in the ground beef, red pepper, and red onion and cook, using a spatula to break up the meat.
  • Press CANCEL.
  • In a bowl, mix together brown sugar, red wine vinegar, steak seasoning, Worcestershire sauce, and tomato sauce.
  • Pour sauce on meat in Instant Pot and stir to combine. If you are worried about getting the "burn notice" on your Instant Pot, use a wooden spoon to scrape the bottom of the Instant Pot and loosen up any burned or brown bits on the bottom of the pot (aka deglazing the pot).
  • Place the lid on the Instant Pot and secure in place. Turn the vent to SEALING. Press the MANUAL button and set the timer for 8 minutes.
  • When cooking is finished, let the pressure NATURALLY RELEASE for 10 minutes and then move the vent to VENTING and release the remaining pressure.
  • Remove the lid and stir to make sure everything is mixed together, then serve meat on hamburger buns.

  • Add 2 tbsp broth in the Instant Pot on saute. Add the onion, garlic, pepper, celery, carrots and a good pinch of salt. Cook for 3 mins. Deglaze with more broth mid-way. (See saucepan instructions in Notes below).
  • Add the spices, tomato, tomato paste, vegan Worcestershire sauce, lemon juice and mix in. Add salt, sugar, lentils, broth, and mix in. Mix well to pick up any stuck bits
  • Close the lid and pressure cook at bean/chili setting for 22 mins or at manual/pressure cook for 16 minutes. Let the pressure release naturally. Taste and adjust salt, flavor. (The sauce keeps thickening on cooling even if it looks slightly liquidy when opened. If you used extra broth, wait for a few mins to see if its thickening enough and then you might have to saute for a few mins to reduce. )
  • Serve in buns or bread with coleslaw or onion or crunchy greens. or in wraps or over baked potato. These sloppy lentils are freezer friendly and meal prep friendly. Refrigerate for upto 4 days and freeze for upto a month.
