An easy Fall stew recipe, a delicious Pumpkin Stew with Sausages will be sure to warm you up this cool fall and winter season.

2 tablespoons olive oil
1 small shallot (chopped)
1 pound hot or mild Italian sausage (sliced 1/2 inch / 1.5cm)
1 clove garlic (minced)
2 medium potatoes (cubed)
2 small carrots (peeled and chopped)
12 1/2 ounces pumpkin or squash (cubed)
3 cups vegetable broth (stock)
1/2 teaspoon oregano
1-2 dashes hot pepper flakes or pepper (if desired)
2 stems fresh rosemary*
2 stems fresh thyme*
6-7 small/medium mushrooms (quartered)

Steps:

  • In a large heavy pot add the olive oil, chopped shallot and sliced sausages cook on medium heat, stirring often until browned, about 3 minutes.
  • Add the garlic, potatoes, carrots, pumpkin, vegetable stock, oregano, hot pepper flakes or pepper if using and rosemary/thyme bag. Stir to combine.
  • Cover and bring to a boil, then remove cover and continue cooking on a slow boil for approximately 15 minutes, add the mushrooms. Continue to cook until veggies are tender. Taste for salt. Serve immediately. Enjoy!

Are you looking for a new taste of a pumpkin dish? Here it is! This is a Persian sweet and sour stew that my grandma used to cook with fried beef patties instead of beef stew pieces; that one was wonderful too. This stew is served with cooked rice.

3 tablespoons vegetable oil, divided
½ pumpkin - peeled, seeded, and cut into 2-inch cubes
1 small onion, chopped
2 cloves garlic, minced
½ teaspoon ground turmeric
1 pound beef stew meat, cut into 1 inch cubes
2 cups water
½ teaspoon ground black pepper
12 pitted prunes
2 tablespoons vinegar
2 tablespoons sugar
2 teaspoons salt
½ teaspoon ground cinnamon
⅓ teaspoon saffron

Steps:

  • Heat 1 tablespoon oil in skillet over medium high heat. Add pumpkin and saute until light golden brown, about 5 minutes
  • Heat 2 tablespoons oil in a stock pot over medium high heat. Add onions and garlic and saute over medium-high heat until golden, about 5 minutes. Stir in tumeric. Add beef and saute until brown, about 5 minutes. Add water, salt, and pepper; bring to a boil, reduce heat, and simmer until beef is slightly tender, about 30 minutes.
  • Stir pumkin, prunes, vinegar, sugar, salt, and cinnamon to stock pot and simmer until beef and pumpkin are tender, about 45 minutes. Garnish with saffron.

1 lb sweet pumpkin, peeled, cut into 3/4 inch chunks
1 medium size onion, finely chopped
1 medium garlic clove, minced
1/2 lb canned plum tomatoes, chopped into small chunks
2 teaspoons tomato paste
3 tablespoons canola oil (Iraqi's use corn oil but we are allergic to corn)
sea salt, to taste
3/4 teaspoon curry powder (I always use Iraqi Curry Powder, to taste)
1 pinch cayenne (or to taste)

Steps:

  • Put oil, onions, pepper, and spices into a large pot and sauté on medium flame until the onions are soft and golden adding the minced garlic near the end of cooking time.
  • Add tomato chunks (no liquid yet, save that for later) sauté the tomatoes a short time.
  • Add 1 cup water, including the liquid from the canned tomatoes too and the pumpkin chunks.
  • Let cook until they are slightly soft.
  • Dissolve the tomatoes paste in 1 cup water and add it into pot, together with the sea salt.
  • Cover the pot, and bring to a boil then lower flame to a simmer for about 15 minutes.
  • Shut off flame.
  • You may remove to serving dish and serve immediately; however, the taste is better after it sits for a longer period of time. If doing that, allow to cool, then refrigerate in the same pot for a day. When reheating, use the same pot: if needed add a little bit of water, bring it to boil, and let it sit on low
  • flame for a couple of minutes. Transfer to serving dish and serve.

1/2 teaspoon coriander seeds
1/2 teaspoon cardamom seeds
1/2 teaspoon ground cinnamon
1 teaspoon cumin seeds
1 clove
2 tablespoons vegetable oil
2 pounds lamb stew meat, cut into 2-inch chunks
1 large onion, peeled and minced
4 cloves garlic, peeled and minced
2 carrots, peeled and cut into 1-inch dice
1 celery root, peeled and cut into 1-inch dice
4 large, ripe tomatoes, peeled, cored and seeded
1 acorn squash, peeled and cut into 1-inch dice
2 quarts chicken or beef broth, homemade or low-sodium canned
1 large pumpkin, about 5 pounds, cleaned
1/2 teaspoon salt
1 teaspoon freshly ground pepper
1 cup uncooked Basmati rice
1/4 cup minced coriander leaves
3/4 cup minced parsley leaves

Steps:

  • Combine coriander, cardamom, cinnamon, cumin and clove in a spice mill or coffee grinder. Grind until smooth. Set aside. Heat a tablespoon of oil in a large, heavy-bottom saucepan. Add the lamb in one layer. Sprinkle with the spice mixture. Sear over medium heat until golden brown, about 3 to 5 minutes. Remove lamb from pan and set aside.
  • Add the onion and garlic to the pan. Saute, stirring frequently, until translucent, about 5 minutes. Add the carrots, celery root, tomatoes and acorn squash. Add the broth. Return lamb to pan. Partly cover and gently simmer until the lamb is tender, about 1 1/2 to 2 hours. Season with the salt and pepper.
  • Meanwhile, preheat the oven to 350 degrees. Place the pumpkin on a baking sheet. Brush the outside with the remaining oil. Bake until tender, about 45 to 60 minutes. Cook the rice according to package directions. Set aside.
  • To assemble, place the pumpkin in a serving dish. Fill with the lamb stew. Divide the rice among 4 warmed bowls. Ladle the stew from the pumpkin over the rice. Garnish with coriander and parsley. Serve immediately.

I am not sure where this recipe originated, but it has been a Halloween tradition in my husband's family for at least 20 years. It is a dinner we look forward to all year. Served with cornbread or sourdough rolls. Yum!

6 pounds pumpkin with fairly straight sides
¾ pound lean ground beef
1 teaspoon oregano
½ teaspoon salt
¼ teaspoon ground black pepper
1 onion, diced
2 large stalks celery, diced
½ medium green bell pepper, diced
2 pounds mozzarella cheese, cubed
16 ounces tomato sauce
1 ½ cups water
1 (15.25 ounce) can corn, drained
6 large mushrooms, sliced
¾ cup instant rice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with heavy duty aluminum foil.
  • Wash the pumpkin and cut off the top at an angle to form a lid that won't fall through. Clean out and discard seeds and string.
  • Heat a large skillet over medium-high heat. Cook and stir beef, oregano, salt, and pepper in the hot skillet until browned and crumbly, 5 to 7 minutes. Add onion, celery, and bell pepper; cook 3 minutes. Add mozzarella cheese, tomato sauce, water, corn, mushrooms, and instant rice. Stir well.
  • Pour mixture from the skillet into the pumpkin and replace lid.
  • Bake in the preheated oven for about 1 hour. When serving, scrape the insides of the pumpkin to get some of the soft flesh in each bowl.

Another of my mom's pumpkin recipes for Charishma. According to my mom yellow pumpkin (the Halloween kind) is best for this recipe, but I don't see why you can't try other varieties. Then again, I'm always the rebel ;-)

1/2 cup dried lentils (moong dal)
250 g pumpkin, chopped (We use yellow pumpkin)
salt
1/8 teaspoon turmeric
1/2 cup grated coconut, divided (freshly grated coconut is best)
1/2 red chile
1 teaspoon cumin seed
1 teaspoon oil
1/2 teaspoon mustard seeds
1/2 teaspoon Urad Dal (split skinned black gram)
6 curry leaves

Steps:

  • Cook lentils in a pressure cooker till tender.
  • Alternately you can also cook it in a saucepan; add 1 cup water to lentils, bring to a boil, then reduce flame to low, cover, and simmer until tender (15-20 minutes).
  • Cook chopped pumpkins in another saucepan with approximately 1 cup water, along with salt and turmeric, until tender (about 10-15 minutes).
  • Meanwhile, in a grinder or food processor, grind grated coconut (LEAVE ASIDE 1 TEASPOON), red chili, and cumin seeds into a paste.
  • When the pumpkin is cooked, add the cooked lentils and coconut paste to it and bring to a boil.
  • In a small frying pan, heat oil over medium-high flame and add mustard, Urad dal and curry leaves.
  • When mustard sputters, add 1 teaspoon grated coconut and fry until it turns brown (don't burn it!!!).
  • Add the contents of the frying pan to the lentil-pumpkin mixture.
  • Stir well.
  • Serve hot with steamed rice.
