The Best Irish Soda Bread image

We prefer the slightly sweet American version of this classic Irish quick bread, so we added dried currants and a small amount of sugar. Buttermilk and baking soda give the loaf plenty of lift and butter gives it a moist crumb.

3 1/2 cups all-purpose flour, plus more for work surface (see Cook's Note)
3 tablespoons sugar
1 teaspoon baking soda
1 teaspoon kosher salt
4 tablespoons (1/2 stick) cold unsalted butter cut into cubes
2/3 cup dried currants
1 teaspoon caraway seeds
1 1/4 cups buttermilk
1 large egg
Irish butter, for serving

Steps:

  • Preheat the oven to 375 degrees F. Line an 8-inch round cake pan with a large sheet of parchment paper, pressing it into the edges of the pan and leaving an overhang on 2 sides (the extra parchment will help you unmold the loaf later).
  • Whisk the flour, sugar, baking soda and salt together in a large bowl. Add the butter cubes to the flour mixture and toss to combine. Use a pastry blender or your fingertips to cut or rub the butter into the flour until the mixture resembles coarse meal. Stir in the currants and caraway seeds.
  • Whisk the buttermilk and egg together in a separate bowl or liquid measuring cup. Make a well in the center of the dry ingredients and pour the buttermilk mixture into the center. Use a wooden spoon or rubber spatula to stir the mixture until it starts to come together in a shaggy mass.
  • Lightly dust a work surface with flour. Turn the dough mixture out onto the floured surface and knead a few times to bring it together. Shape it into a domed disk. Place the dough into the prepared cake pan and cut a cross about 1/2-inch deep into the surface of the dough with a sharp knife. Bake until the top is puffed and lightly browned and a cake tester comes out clean, 60 to 75 minutes. Remove from the oven and use the parchment overhang to lift the bread from the pan. Place on a wire rack to cool completely. Serve with good Irish butter.

1 cup white sugar
1 cup raisins
2 tablespoons caraway seeds
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 eggs, beaten
1 cup buttermilk
¾ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour a heavy pan.
  • Mix flour, sugar, raisins, caraway seeds, baking powder, baking soda, and salt in a large bowl. Add eggs, buttermilk, and milk to the flour mixture; stir until evenly incorporated. Transfer dough to the prepared pan.
  • Bake in preheated oven until when the bread is tapped on top it sounds hollow, about 75 minutes.

3 cups unbleached flour (all-purpose)
1 tablespoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup Splenda sugar substitute
1 cup golden raisins or 1 cup black raisins
1/4 cup Egg Beaters egg substitute
1 3/4 cups buttermilk or 1 3/4 cups soured milk
4 tablespoons butter or 4 tablespoons margarine, melted

Steps:

  • In large bowl,whisk together flour,baking powder,baking soda, splenda and raisins.
  • In separate bowl whisk together egg beater,buttermilk and melted butter.
  • Quickly stir wet ingredients into dry ingred.
  • Pour batter into greased 9x5" loaf pan.
  • Bake bread in preheated 375 degree oven 45 minutes to an hour or till cake tester comes out clean.

1⅔ cups all-purpose flour 2 Tbsp sugar (or 5 Tbsp For tea loaf) 1 teaspoon baking powder ½ teaspoon baking soda ½ teaspoon salt 1 cup raisins 2 teaspoons caraway seeds 1 large egg ⅔ to ¾ cup buttermilk 4 Tablespoons (½ stick) unsalted butter

Steps:

  • 1. Preheat oven to 350°F 2. Grease an 8 ½ x 4 ½ inch loan pan 3. Sift together: flour, sugar, baking powder, baking soda and salt 4. Stir in: raisins and caraway seeds 5. Whisk together in another bowl: egg, and ⅔ cup buttermilk. (Add up to ¾ cup buttermilk to get the right consistency,) and soft, room temperature butter. 7. Add all liquid ingredients above to dry mixture and stir until the dry ingredients are moistened. The batter will be stiff but sticky. Scrape the batter into the loaf pan and spread evenly. 7. Use a sharp knife to slash a large X about ½ inch deep on top of batter. 8. Bake until golden brown, and a toothpick inserted in the center comes out clean. 9. Transfer bread to a rack to cool, let cool in pan on rack for 5 to 10 minutes before un-molding to cool completely on the rack.

So many weird soda bread recipes out there. Rest assured that this one is the standard REAL one from Ireland. It is posted on the back of our equivalent of King Arthur flour, Odlums. You can add a handful of sultanas (golden raisins) for a fruit version. Simple, tried, tested and true.

1 lb bread flour (white)
1 teaspoon baking soda
1 pinch salt
1 tablespoon sugar (optional)
1 ounce margarine
1/2 pint buttermilk (might need more)

Steps:

  • Sieve flour, salt and soda into a bowl. Add sugar if used.
  • Rub in the margarine to resemble breadcrumbs, lifting mixture with fingertips to introduce air to the dough.
  • Add sufficient buttermilk and mix to make a soft dough.
  • Turn onto a lightly floured board and knead a little.
  • Turn the smooth side up and shape into a round. Place the dough on a floured tin.
  • Cut a cross over the top.
  • Bake in a pre-heated oven, 400°F 200°C Gas 6 for 40-45 minutes.
  • When baked the underneath when "tapped" should have a hollow sound.
  • Cool on a wire tray. Cover with a tea towel to give a soft crust.

2 cups all-purpose flour
2 tablespoons brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons cold butter, cubed
2 large eggs, room temperature, divided use
3/4 cup buttermilk
1/3 cup raisins

Steps:

  • Preheat oven to 375°. Whisk together first 5 ingredients. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk together 1 egg and buttermilk. Add to flour mixture; stir just until moistened. Stir in raisins., Turn onto a lightly floured surface; knead gently 6-8 times. Shape into a 6-1/2-in. round loaf; place on a greased baking sheet. Using a sharp knife, make a shallow cross in top of loaf. Whisk remaining egg; brush over top., Bake until golden brown, 30-35 minutes. Remove from pan to a wire rack. Serve warm.
