2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 medium green pepper, chopped
1 small onion, chopped
2 tablespoons canola oil
1 can (8-3/4 ounces) whole kernel corn, drained
1 cup chicken broth
1 cup salsa
1/2 to 1 teaspoon salt
1/2 to 1 teaspoon chili powder, optional
1/4 teaspoon pepper
1-1/2 cups uncooked instant rice
1/2 to 1 cup shredded cheddar cheese

Steps:

  • In a large skillet, saute the chicken green pepper and onion in oil until chicken is no longer pink and vegetables are crisp-tender. Add the corn, broth, salsa, salt, chili powder if desired and pepper; bring to a boil., Stir in the rice; cover and remove from the heat. Let stand for 5 minutes. Fluff with a fork. Sprinkle with cheese. Cover and let stand for 2 minutes or until cheese is melted.

1 tablespoon extra-virgin olive oil
1 pound boneless skinless chicken breasts (or thighs, cut into 3/4-inch pieces)
1 small yellow onion (chopped)
2 small jalapenos (or 1 large jalapeno, core and seeds discarded, diced)
1 red bell pepper (chopped)
2 teaspoons chili powder
2 teaspoons garlic powder
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 can black beans ((15 ounces), rinsed and drained)
1 cup long or medium-grain brown rice
1 can diced tomatoes in their juices ((15 ounces))
3 medium green onions (chopped)

Steps:

  • Heat the olive oil in a large skillet or Dutch oven with a tight-fitting lid over medium to high heat. Once hot and shimmering, swirl to coat the pan, then add the chicken, onion, jalapeno, and red bell pepper. Cook for 3 to 5 minutes, until the chicken is browned and the onion is beginning to soften. Add the chili powder, garlic powder, cumin, oregano, salt, and pepper. Stir to coat the chicken and cook 30 seconds. Add the black beans and rice. Stir to coat once more.
  • Add the diced tomatoes in their juices and 1 1/2 cups water. Stir to combine the ingredients. Bring to a gentle boil, cover, then reduce the heat and let simmer 30 minutes. Remove the lid and stir, scraping up any rice that has started to stick to the bottom of the pot. Re-cover and continue to let simmer with the lid on until the rice is tender, 10 to 20 additional minutes, stirring the pot every 10 minutes or so to prevent sticking. If the rice begins to dry out, add a bit more liquid.
  • Stir in the green onions. Serve warm with any other desired toppings.

1/2 cup diced red onion
1/2 cup diced bell pepper
1 clove garlic, minced
1 can (14.5 oz) petite diced tomatoes, drained
1 can (15.5 oz.) black beans, drained and rinsed
1 cup uncooked instant white rice
1/2 cup corn kernels
2-1/2 cups chicken stock
1 tsp. dried oregano leaves
1 tsp. ground cumin
1 tsp. chili powder
1 cup KRAFT Shredded Sharp Cheddar Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the chicken to the pan and cook until just beginning to brown, around 3-4 minutes. Remove from the pan and set aside. Pour the remaining tablespoon of olive oil into the skillet. Add the onion and bell pepper; season. Cook for 2-3 minutes, stirring frequently, until the onions begin to soften. Add the garlic and cook for 30 seconds more.
  • Add the browned chicken, tomatoes, black beans, rice, corn, chicken stock, oregano, cumin, chili powder, and salt to the skillet, scraping the brown bits from the bottom of the pan. Bring to a simmer, cover, and reduce heat to low.
  • Simmer for 20 minutes. Take the pan off of the heat, remove the lid, and top the casserole with the shredded cheese. Serve when the cheese has melted.

1 package Old El Paso™ original taco seasoning mix
6 large chicken drumsticks
1 large Beefsteak tomato
1 small Vidalia onion
3 garlic cloves
2 cups long grain uncooked rice
1 can (7 ounces) Old El Paso™ chopped green chiles
1/2 cup frozen corn
1/2 cup frozen peas
2 cups of water
Cilantro, chopped (optional)
Lime, wedges (optional)
Salt to taste

Steps:

  • Season chicken drumsticks with 1/2 packet of taco seasoning mix.
  • Sear chicken drumsticks on a medium high heat skillet with just a touch of oil. Once chicken is brown all around, set chicken aside.
  • On a food processor or blender, blend tomato, onion, and garlic. Add this into a large skillet, over medium high heat and let it cook for a minute or two.
  • Keep adding the rest of the ingredients to the pan: rice, chiles, corn, peas, and the remainder taco seasoning mix. Stir well and cook for a minute or two. Adjust salt level to taste.
  • Add water and bring to a boil.
  • Place chicken on top of the rice.
  • Cover well, and cook on low for 20-25 minutes until rice has absorbed all of the liquid.
  • Serve with a generous sprinkle of chopped cilantro and a good squeeze of lime.

3/4 teaspoon seasoning salt
1 lb boneless chicken breast, 1-inch cubes
2 tablespoons vegetable oil

Steps:

  • In a deep skillet, heat the olive oil over medium-high heat. When the oil is hot, add the garlic, onion, chili powder, cumin, cayenne pepper, salt, pepper and turmeric. Cook, stirring often, until the onion is soft and the spices are toasted, about 3 minutes.
  • Pour in the tomato sauce, diced tomatoes and green chiles, chicken and both bags of rice. Stir together and cook until the rice is heated through and beginning to absorb some of the liquid, about 5 minutes. Turn the heat to low and sprinkle the pepper jack over the top. 2 cups frozen, roasted corn with peppers and onions
4 ounces cream cheese, softened

2 green onions, sliced
2 tablespoons salted butter, melted
1 mounded tablespoon chili powder, plus more for sprinkling
1/2 cup plus 2 tablespoons sour cream

3 limes
One 8.8-ounce bag instant microwaveable Spanish rice, cooked according to package instructions

  • Preheat the oven to 425 degrees F.
  • In a bowl, mix the chicken, corn, cream cheese, mayonnaise, green chiles, garlic, green onions, butter, chili powder, 1/2 cup sour cream, 1/4 cup Cotija and 1/4 cup cilantro. Juice in 1 lime and mix well.
  • Add the rice to a 10-inch ovenproof skillet or baking dish and spread to cover the bottom. Top with the chicken and corn mixture, spreading as needed. Top with the pepper jack cheese and a sprinkle of chili powder. Bake until bubbly and browned, 12 to 14 minutes.
  • Remove from the oven and top with the remaining 2 tablespoons sour cream, 1/4 cup Cotija and 1/4 cup cilantro. Cut the remaining 2 limes into wedges. Serve with the warmed tortillas, chips and lime wedges on the side, and with the Tomato Avocado Salad.
  • Add the tomatoes, avocado, green onions, lime juice, olive oil, salt and pepper to a bowl. Toss to combine. Garnish with the cilantro.

  • (optional) Add all of the Jalapeno Ranch ingredients to your blender and blend until smooth. Add additional milk if needed to reach desired consistency. Refrigerate. (Best chilled. Can be made 24 hours+ ahead of time). Dressing will thicken as it chills so you will probably need to stir in additional milk when ready to serve.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium high heat. Saute onions for 4 minutes. Add chicken and continue to cook until no longer pink on the outside (it will cook fully with the rice). Add garlic and saute 30 seconds.
  • Turn heat to low and add water, enchilada sauce, rice, corn, fire roasted tomatoes, green chilies and all seasonings/spices. Bring to a boil. Cover, reduce heat to low and simmer 15 minutes or until rice is tender, stirring at 10 and 15 minutes.
  • Once rice is done, stir in refried beans until smooth followed by 3/4 cup cheese until smooth. Top with remaining cheese, cover and cook on low until cheese is melted. Top with lettuce, tomatoes, avocados etc. and either sour cream or the Jalapeno Ranch. Serve with plenty of chips!
