IRISH CABBAGE & POTATO SOUP

2 tablespoons butter
1/2 cup chopped red onion
2 teaspoons dried thyme
1 cup steamed French green beans*
1 (15 oz) can Margaret Holmes Seasoned Cabbage (or Glory Cabbage)
1 (14.5 oz) can Whole New Potatoes; drained & diced
2 (14.5 oz) cans vegetable broth
Salt & pepper to taste

Steps:

  • Melt the butter in a large saucepan; add onion and sauté for 2-3 minutes.Stir in thyme, green beans, cabbage (do not drain), potatoes and broth.Simmer on low heat for 10 minutes. Season to taste with salt & pepper.Serve with Irish soda bread, if desired. *Regular green beans can be used, just look for thethinner ones.

This Irish Potato Soup is a hearty and tasty meal for St. Patrick's Day.

2 potatoes
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cup vegetable broth
1 cup water
1 tbsp olive oil
1 onion
4 cups cabbage, about 1/4 of a cabbage
1/2 teaspoon thyme
1/2 cup cream

Steps:

  • Peel and dice the potatoes. Add to a sauce pan with salt, pepper, vegetable broth and water.
  • Bring to a boil and cook 10-15 minutes until potatoes are tender.
  • While the potatoes cook dice the onions and cut the cabbage into thin slices.
  • When the potatoes are done pour the potato mixture into a blender and set aside for a little while to cool.
  • Turn the heat on the sauce pan down to medium low and add the olive oil.
  • Saute the onions for 2-3 minutes, then add the cabbage and thyme, and cook for 10 minutes.
  • Turn the blender on and blend the potato mixture until smooth.
  • Return the potato mixture to the sauce pan and mix with the cabbage.
  • Add the cream and heat on low heat for 5 minutes.
  • Sprinkle with some more pepper and thyme before serving.

1 lb cabbage or 1 lb kale
1 lb potato, peeled and diced (about 4 potatoes)
2 small onions or 6 green onions with tops, chopped
1/2 cup cream or 1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon mace

Steps:

  • Strip outer leaves from cabbage.
  • Shred cabbage (or kale), place in a saucepan with water to cover the bottom and bring to a boil.
  • Reduce heat and simmer until crisp-tender, about 5-10 minutes.
  • Drain well.
  • (opt.) Liquefy in blender.
  • Boil potatoes in a separate kettle, covered with water, until tender.
  • In a small saucepan cook leeks or onions and cream(or milk) about 10 minutes.
  • Mash potatoes then season with salt, pepper and mace.
  • Mix in the onions and milk.
  • Combine the potato mixture with cabbage or kale, beating it to a pale green fluff over low heat.
  • Pour into a deep warmed dish.
  • Dab with butter or margarine.
  • NOTE: Leftovers can be fried in oil until crisp and brown on both sides.
  • OPTION: Substitute ground nutmeg for mace.

3 lbs peeled yukon gold potatoes or 3 lbs red potatoes, halved
2 1/2 cups coarsely chopped cabbage
6 garlic cloves, peeled
1 chicken bouillon cube
1/2 cup reduced-fat cream cheese
1/4 cup milk
1/4 cup light sour cream
1/2 teaspoon salt
1/4 teaspoon black pepper
cooking spray

Steps:

  • Preheat oven to 350°.
  • Combine first 4 ingredients in a large stockpot; cover with water. Bring to a boil; cover, reduce heat, and simmer 30 minutes. Drain.
  • Return potato mixture to pan. Add cream cheese, milk, sour cream, salt and pepper; mash with a potato masher. Spoon potato mixture into a 1 1/2-quart casserole coated with cooking spray. Cover and bake at 350° for 45 minutes or until thoroughly heated.
  • Note: This can be made a day ahead; just cool, cover, and refrigerate. Reheat in oven or microwave.

This is a wonderfully simple chunky soup. I use good quality Irish back bacon but if you can't get this, it tastes equally good made with pancetta. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour.

½ pound Irish bacon, diced
2 large potatoes, peeled and cubed
1 (15 ounce) can diced tomatoes with juice
1 cup chicken stock, or as needed
Salt and black pepper to taste
2 cups thinly sliced dark green Savoy cabbage leaves

Steps:

  • Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat.
  • Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.
  • Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.

1 large onion, chopped
2 tablespoons butter
10 cups water
6 cups chopped cabbage
4 cups diced peeled potatoes
3 tablespoons chicken bouillon granules
1/2 teaspoon coarsely ground pepper
1/2 teaspoon dried minced garlic
4 cups cubed fully cooked ham

Steps:

  • In a large saucepan or Dutch oven, saute onion in butter until tender. Add the water, cabbage, potatoes, bouillon, pepper and garlic. Cover and simmer for 20-25 minutes or until potatoes are tender. Stir in ham; heat through.
