IRISH MEAT AND POTATO PIE
With Saint Patrick's Day right around the corner, I decided to get into the green fever and pretend I'm Irish by making some seriously delicious shepherd's pie.

- Preheat your oven to 400 F. Wash and chop the potatoes and carrots. Peel and chop the onions.
- Fry the bacon in a large pot until crumbly then remove from the pot but reserve the grease. Add the potatoes and cook until beginning to brown then add the carrots and onions. Saute until softened, or about 8 minutes.
- Add the tomato paste, garlic, and stir. Toss in meat and then the flour and stir until the flour is coating all of the ingredients.
- Next add the broth, Worcestershire sauce, and Guinness. Bring to a boil for 5 minutes then cover and reduce heat to a simmer. Cook, while stirring occasionally, for about 20 minutes.
- Spoon the stew into ramekins and allow to cool for 15 minutes while you measure and cut the puff pastry. Combine the egg and water in a small bowl and brush the tops of the ramekins with the egg mix.
- Press the puff pastry onto the top of each ramekin and brush with the egg mix. Then place into the oven for about 20-25 minutes, or until the puff pastry is golden brown.
- Remove from the oven and allow to cool for a fifteen minutes - the insides will be extremely hot! Like delicious hot lava. Once cooled, served with an ice cold Guinness, and enjoy!
IRISH BEEF HAND PIES
This St. Patrick's Day, tuck the makings of traditional beef-and-potato stew into flaky hand pies you can bake straight from the freezer.

- Preheat oven to 400 degrees. In a medium saucepan, heat oil over medium; add cabbage and potatoes. Cook until beginning to brown, 7 to 9 minutes. Add beef; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Stir in tomato paste, Worcestershire, thyme, and 1 cup water. Cover, and cook until potatoes are tender, about 15 minutes. Lightly mash mixture with a fork. Season with salt and pepper. Let cool completely.
- On a lightly floured work surface, roll each crust into a 14-inch square; cut each into 4 equal squares. Place 1/2 cup filling on one half of each square, leaving a 1/2-inch border around the filling. Brush borders with water; fold dough over filling to enclose. Crimp edges with a fork to seal. With a paring knife or scissors, cut 3 small vents in each.
- Transfer pies to 2 foil-lined rimmed baking sheets; bake until golden brown, 10 to 12 minutes, rotating sheets halfway through.
- To Bake from Frozen: Proceed with step 3, increasing baking time to 28 to 30 minutes.

- In a greased 3-qt. baking dish, layer the first seven ingredients in the order given. Whisk eggs and milk; pour over the cheese. , Cover and bake at 325° for 55 minutes or until a thermometer reaches 160°. Uncover; bake 10 minutes longer or until lightly browned. ST. PATRICK'S DAY IRISH POTATO PIE
This recipe [sans the garlic and parsley] is from Elswet's grandmother's recipes and is quite old, as she got it from her grandmother. This is really good most anytime, but it's especially good when it's cold outside. This goes great with a potato/cheddar soup, for lunch, or with a green salad and jello with pear halves for dinner. This type of food is typically a bit bland. So we spice it up the tiniest bit to suit our more eclectic palates.

Steps:
- preheat oven to 400°F
- cook the potatoes in boiling water with the green food coloring added to the water, until tender and drain.
- in a skillet, fry bacon until crisp and lay out on paper towels to drain.
- trim onions so that you have the white part and about half of the green, wash well, and slice paper-thin.
- add onions to skillet and sauté in bacon grease over medium heat until soft.
- slice the boiled potatoes, and arrange half in the bottom of a pie plate.
- season with salt and pepper, 1/2 the garlic and 1/2 the parsley.
- layer with bacon, onion and one half of the cheese. cover with remaining potatoes and season again.
- cover with remaining cheese.
- bake for 30 minutes or until top is browned and cheese is melted.
- you can also layer in 1/2 pound of browned ground meat on top of each potato layer, if cooking for someone who won't eat a meatless meal.

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- In a large skillet heat oil on medium heat. Add in finely chopped cabbage and carrots, cook till edges start to turn brown. Add in the ground Chuck and ground lamb cook and separate meat until there is no longer any pink. Add in finely chopped onions,the garlic crushed and diced, and the peeled and chopped potatoes. Cook until potatoes are tender. Gently fold the mixture into a mash then add the beef broth and worcestershire sauce. Bring to a boil then cut down to a simmer and add cornstarch. Simmer until mixture is thick. Remove from heat salt and pepper to taste and let cool completely. Take and fill two pie pans with pie crust putting half of the mixture into each pie. Cover mixture with other half of the pie crust. Seal the crust and put three ventilation slits in the top. Bake at 400 degrees for 1 hour or until the crust is golden brown.

IRISH COTTAGE PIE WITH GROUND BEEF RECIPE BY TASTY

Steps:
- Preheat the oven to 400°F.
- Melt butter in a skillet over medium-high heat. Cook the onions for 5 minutes. Then, add garlic and cook for 1 minute.
- Set onions and garlic aside and in the same skillet, add ground meat. Cook and stir for 6-8 minutes until thoroughly browned. Drain & rinse meat in a colander.
- Add meat back in the skillet over medium-low heat. Stir in parsley, rosemary, thyme, salt, pepper, and Worcestershire sauce. Then, stir in flour, and tomato paste. Stir until completely well incorporated
- Stir in broth (or wine), peas, carrots, tomatoes and corn. Simmer for 5 minutes.
- Evenly smooth meat mixture onto bottom of the skillet (or press into the bottom of a 9x9"inch baking dish). Sprinkle cheddar cheese over the top.
- Potatoes: Heat broth, butter, and salt in a bowl in the microwave until hot. Stir in sour cream and potato flakes and mix with a fork. Let sit until liquid has been fully absorbed. (Note: the potatoes need to be thick to pipe perfect peaks.
- Use a "star tip" on a piping bag (or a Ziploc bag with corner snipped). Fill bag and pipe potatoes into skillet or baking dish, covering the meat.
- Sprinkle chopped onions & pepper on top.
- Bake uncovered for 30 minutes.
- Serve hot.
