8 oranges, divided
1/2 pint water
12 ounces sugar
1 cup orange juice
3 tablespoons whiskey, Irish Mist

Steps:

  • Cut the rind off 3 oranges, cutting in fine shreds with no pith. I take all pulp off, no skins or pith; add the rinds.
  • Cook in water and sugar.
  • Bring to a boil; reduce heat to simmer.
  • Simmer for about 20 minutes.
  • Add orange juice.
  • Cook 20 minutes until sticky.
  • Remove from heat.
  • Add whiskey.
  • Let rest for 15 minutes before pouring into hot sterile jars.
  • Seal.

2 lbs carrots, peeled, sliced into discs
1/2 cup whiskey, Irish Mist
1/2 cup brown sugar

Steps:

  • Melt butter.
  • Add carrots.
  • Cook for a minute.
  • Remove from heat.
  • Add whiskey OFF the stove.
  • Add brown sugar.
  • Return to stove.
  • Cook covered for 5 minutes or until carrots are as tender as you like them.

I'm just trying to help Miller increase the Irish dessert selection! I must confess to never having made this one. Prep tome includes 1 1/2 hours of setting time.

2 1/4 cups milk
4 eggs, seperated
4 tablespoons caster sugar
2 tablespoons gelatin
1/4 cup boiling water
1/3 cup Irish Mist liqueur
1/2 cup cream, whipped
whipped cream (for decoration)
grated chocolate (, for decoration)

Steps:

  • Bring the milk to boil in a pan.
  • Remove from the heat.
  • In a bowl, whisk the egg yolks and 2 tablespoons of caster sugar.
  • Add the milk and whisk to combine.
  • Pour mixture back into the pan, cook over a low heat for 7 minutes; do not boil.
  • Dissolve the gelatine in boiling water, and add to the hot milk mixture, stirring well.
  • Pour in the Irish Mist, and refrigerate for about 40 minutes or until the mixture begins to set.
  • Beat the egg whites until soft peaks begin to form, sprinkle with the remaining castor sugar, and beat until it dissolves.
  • When the milk and egg mixture begins to set, fold through the whipped cream and beaten egg whites.
  • Pour into 8 glass serving dishes, and refrigerate until fully set.
  • Decorate with the extra whipped cream and chocolate.

6 cups watermelon rind, chopped
6 cups water
6 1/2 cups sugar
1/4 cup orange rind, fresh grated
1 cup fresh orange juice
2 lemons, juice of
1 lime, juice of

Steps:

  • Trim green skin and pink pulp from the thick watermelon rind.
  • Chop rind and measure out 6 cups; then soak chopped rind in water for 18 hours In preserving kettle, combine rind, soaking water and all remaining ingredients.
  • Cook over low leat stirring frequently until the jelly reaches 220-222F or until the syrup sheets when droped from a spoon.
  • This takes about 1 1/2 hours.
  • Ladle into hot sterilized jars and seal immediately.

1 cup sweet orange marmalade
1/2 cup Irish whiskey
1/8 teaspoon ground nutmeg
1 tablespoon Dijon mustard plus more for serving
1 2- to 2 1/4-pound piece lean fully cooked corned beef
12 carrots, peeled, halved lengthwise
Fresh parsley sprigs

Steps:

  • Preheat oven to 425°F. Coat large rimmed baking sheet with nonstick spray. Boil next 3 ingredients in saucepan until reduced to generous 3/4 cup, stirring often, about 7 minutes. Mix in 1 tablespoon mustard.
  • Generously brush corned beef all over with glaze; place in center of prepared sheet. Toss carrots and 1/4 cup glaze in large bowl to coat; place around beef. Sprinkle carrots with salt and pepper. Roast until carrots are tender and beef is golden, brushing occasionally with more glaze, about 35 minutes. Transfer to platter, garnish with parsley, and serve with Dijon mustard.
