Southern-fried corn cooked in a cast-iron skillet is the perfect side dish. With only five ingredients, including fresh sweet corn and bacon, this is a real family favorite.

6 ears fresh sweet corn (shucked)
4 slices bacon (not thick sliced)
4 tablespoons unsalted butter
1 teaspoon kosher salt
1/2 teaspoon ground black pepper

Steps:

  • Add the bacon to a cold 10-inch, cast-iron skillet over medium-low heat and cook for about five minutes or until the fat starts rendering out of the bacon.
  • Turn the heat up to medium and cook, frequently turning, for another four to five minutes or until the bacon is browned and crispy. Remove the bacon and drain it on paper towels. Set aside. Leave the grease in the skillet.
  • While the bacon is cooking, grab a deep bowl and a sharp knife. Hold each ear of corn up and slice the kernels off. You may have to go around several times to get all of the kernels. Then, take the back of the knife and scrape the cob to get all of that milky goodness. Don't skip this step.
  • Add the butter to the skillet and when it is melted, add the corn. Season it with salt and pepper.
  • Stir and cook it for anywhere from five to fifteen minutes. (The amount of time it will take to cook depends on how fresh the corn is; just-picked corn barely needs any cooking at all, and if it's older, it will take longer.) For this dish, it's important to taste it as it cooks to know when it's done.
  • Remove it from the heat, top with crumbled bacon and serve immediately.

A sweet and savory skillet style corn made from fresh corn, cut off the cob and sauteed in a cast iron skillet with bacon grease, butter and seasoning.

Number Of Ingredients 5

3 - 4 cups fresh corn off the cob (about 6 - 8 ears of corn)
2 - tablespoons bacon grease
3 tablespoons butter
salt and pepper to taste
all purpose Greek Seasoning or Tony Chachere Seasoning, to taste

Steps:

  • Remove the husks and silk from the corn. Wash and cut corn off the cob using a knife.
  • I use my Bundt cake pan. The cob fits perfectly in the middle holw and the kernels just come right off and fall into the pan.
  • In a large cast iron skillet, melt the butter and bacon grease together.
  • Add the corn, salt, pepper and seasoning, stir to combine.
  • Cook the corn over medium-high heat until the corn is done (about 15-20 min). Continue to gently stir the corn every so often as the corn cooks.
  • Add additional salt, butter and seasoning if needed before serving.

1/2 c chopped onion
3 Tbsp butter
1/2 c red sweet bell pepper,diced
1/4 c orange sweet bell pepper
1 lb thawed whole kernel corn, about 2 1/2 cups of fresh cob corn
3 dash(es) hot sauce
to taste sea salt
to taste black pepper
1 tsp garlic powder with parsley
2 tsp granulated sugar
1/4 c cream or milk

Steps:

  • 1. Heat the butter in a large cast iron skillet over medium heat until melted and not brown. Add the onion and sauté until wilted but not brown. Now add the bells peppers and the corn, stirring to coat ingredients with the butter.
  • 2. Sprinkle on the salt, pepper, hot sauce, garlic powder with parsley, and sugar.. Continue cooking over medium heat always stirring until the vegetables slightly caramelized. About 20 minutes.
  • 3. Add the cream and stir to combine. Cook and stir 5 more minutes..Enjoy..

1 pound bacon, chopped
1 onion, chopped
2 medium green bell peppers, chopped
2 (16 ounce) packages frozen corn
salt and pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown, but still soft. Stir in onion and green bell peppers, and cook until tender, about 10 minutes.
  • Reduce heat to low. Stir corn into skillet, and cook until tender, about 15 minutes. Salt and pepper to taste. Do not drain grease from bacon - that is the secret to the flavor.
