ITALIAN CHICKEN, GREEN BEANS, AND POTATOES

Steps:
- Preheat the oven to 350 degrees F.
- Wash the green beans and potatoes.
- Peel the potatoes and cut into small cubes.
- Slice green beans into bite size pieces.
- Line one side of a 9x13-inch baking dish with green beans and line the other with the chunks of potato.
- Place the chicken breast between the green beans and potatoes. (I sliced my chicken in half to make thinner pieces of meat)
- Cut the butter into 1 tbsp squares and place evenly over the green beans, chicken, and potatoes.
- Sprinkle entire dish with Italian seasoning, salt, and pepper.
- Cover with foil and bake for 1 hour.

- Pre-heat oven to 350 degrees.
- Line one side of the pan with green beans. Cut potatoes up. Line opposite side of pan with the potatoes. Line the chicken breasts down the middle of the baking dish. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan.
- Cover with foil. Bake 1 hour.

- Line the side of the 9x13-inch baking pan with green beans and then the other side of the pan with the cubed potatoes. Then place the chicken between the green beans and potatoes. There can be some overlapping.
- Sprinkle the Italian salad seasoning packet over the entire dish and evenly place the butter slices on top.
- Cover the Italian chicken, green beans, and potatoes with foil and bake it at 350 degrees Fahrenheit for 1 hour. The dish is done when the chicken is cooked through to at least 165 degrees Fahrenheit and the potatoes are easily pierced with a fork.Serve this baked chicken dish warm by itself, with dinner rolls, or a simple side salad and fresh fruit.

- Preheat the oven to 425 degrees F. Sprinkle the chicken with salt and pepper. Heat the oil in a large oven-proof skillet over medium-high heat. Add the chicken, skin side down, and cook, until browned on both sides, about 4 minutes per side. Transfer the chicken to a plate.
- Reduce the heat to medium, add the onion, garlic and red pepper flakes and cook until the onions are soft, about 7 minutes. Add the tomato paste and stir until it coats the onions and is a shade darker, about 1 minute. Pour in the wine and scrape up any brown bits on the bottom of the skillet. Add the broth, beans, tomatoes and oregano and bring to a boil. Nestle the chicken in the skillet along with any juices from the plate. Transfer the skillet to the oven and bake until the chicken is cooked through, about 25 minutes.
- Transfer the chicken thighs to a platter. Stir the cheese into the bean mixture and season with salt and pepper and garnish with fresh oregano if using. Serve with the chicken and extra parmesan cheese for topping.

- Preheat oven to 350. Spray large rectangular baking pan with non-stick spray.
- Place chicken breasts down the middle baking pan.
- Cut potatoes in half and place along one side of chicken.

- Preheat the oven to 425 degrees F.
- To a bowl or pitcher, add the vinegar, parsley, basil, salt, pepper, garlic and 1 cup of the olive oil. Whisk until well combined.
- Put the chicken in a large zipper bag and pour in half the dressing. Seal the bag and squish to coat the chicken.
- Trim the ends of the green beans and put in a large bowl with the tomatoes. Pour over the remaining dressing and toss.
- Using tongs, arrange the chicken skin-side up on a sheet pan. Use a slotted spoon to transfer the beans and tomatoes to the sheet pan, leaving the excess marinade behind. Roast for 20 minutes.
- Meanwhile, rip the bread into large chunks. Add to a bowl, drizzle with the remaining 3 tablespoons olive oil and toss.
- After the chicken and vegetables have roasted for 20 minutes, shake the pan to prevent sticking, then add the bread chunks to the pan. Continue to roast until the chicken is cooked through and the skin is golden and crisp, about another 10 minutes. Sprinkle the sheet pan with parsley and serve.
