- Preheat a grill pan to medium high.
- In a medium bowl, toss the beans with the olive oil and salt. Grill the beans until bright green, tender and slightly charred, 2 to 3 minutes per side. Place the grilled beans back in the bowl and toss with the Parmesan and lemon zest. Serve warm or at room temperature.

MIXED GREEN SALAD WITH SHERRY VINAIGRETTE

- Blend the vinegar, garlic, oregano, 1 teaspoon of salt, and 1/2 teaspoon black pepper in a blender until the garlic is finely chopped. With the blender running, slowly blend in the oil.
- Toss the baby greens, bell pepper, olives, and cheese with enough vinaigrette to coat. Season the salad, to taste, with more salt and black pepper, and serve.
ITALIAN GREEN BEAN SALAD
Italian Green Bean Salad is a cold salad featuring thin style green beans, tomatoes and onions tossed in a tasty vinaigrette. A healthy sprinkling of Parmesan cheese takes this salad from good to great. Serve along side grilled chicken for the perfect meal.

- Bring a medium saucepan of salted water to boil. (1/2 teaspoon salt for every cup water).
- Add green beans and cook until tender but not completely soft, approximately 5 minutes.
- Prepare vinaigrette by mixing together oil, red wine vinegar, garlic, salt, mustard and pepper.
- Add cooked beans directly to dressing while still warm. Toss to coat.
- Cover and refrigerate for a minimum of 45 minutes.
- Just before serving, gently mix in tomato wedges and onion slices. Sprinkle with Parmesan cheese.

- Bring a large pot of salted water to a boil. Trim the ends of the beans, rinse and boil until fork tender, about 5 minutes. At this point you can drain them and add them directly to a bowl for serving. Or, if you wish to retain their vibrant green color, plunge them into a large bowl of icy water and drain immediately. Transfer to a large bowl.
- Add the remaining ingredients: olive oil, red wine vinegar; crushed garlic clove; dry oregano; dried red chili (optional); fresh chopped parsley and salt, to taste.
- Toss well and serve immediately or place in the refrigerator until ready to serve.

- Cook the green beans in a large pot of boiling water until crisp-tender, stirring occasionally, about 4 minutes. Using a mesh strainer, transfer the green beans to a large bowl of ice water to cool completely. Drain the green beans and pat dry with a towel.
- Add 2 teaspoons of salt to the same cooking liquid and bring the liquid to a simmer. Add the potatoes to the simmering liquid and cook until they are just tender but still hold their shape, about 8 to 10 minutes. Transfer the potatoes to the ice water to cool completely. Drain the potatoes and pat dry with a towel.
- In a small bowl, whisk the lemon juice, garlic, oil, oregano, 1 teaspoon salt and 3/4 teaspoon pepper. Place the tomatoes, basil and parsley in a large serving bowl. Add the tuna and toss gently to combine. Add the green beans and potatoes and gently combine. Pour the dressing over the salad and toss to coat.

- Bring a large pot of water to a boil; salt generously. Set up a large bowl of ice water nearby. Blanch the green beans until bright green, 1 to 2 minutes. Immediately, transfer the beans to the ice bath. Set aside.
- Heat a large skillet over medium-high heat. Add the quinoa in a single layer and toast until beginning to brown and pop, 2 to 4 minutes. Add the pepitas, sesame seeds and sunflower seeds; toast for another 2 to 3 minutes. Remove from the heat and set aside. (The seeds can be toasted up to a week in advance.)
- In a medium bowl, mix together the olive oil, balsamic vinegar, crème fraiche, honey, Dijon mustard, lemon zest and juice, and 1 teaspoon salt.
- Drain the beans well and add them to the dressing. Toss with seed mixture and serve.
