A very good alternative to mayo-laden potato salads. It is a much lighter dish and is a great accompaniment to any BBQ dishes or with grilled chicken or meat and a green salad.

6 large potatoes, boiled in the skin
1 medium onion, cut in half then sliced very thin
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar
1 teaspoon sea salt
1 teaspoon freshly cracked pepper
3 tablespoons fresh parsley, chopped

Steps:

  • Peel boiled potatoes while they are still warm and cut into large, bite-sized cubes.
  • Toss together with remaining ingredients.
  • Refrigerate for at least one hour.

This potato salad was one of my Nonna's (grandmother) most-loved recipes. Our whole family (and it's big!) loves it and we always think of her when we make it. It is simple while still being full of flavour. The salad is best served warm or room temperature. You don't absolutely have to love parsley to like this dish, but it would help a little. :-) Please note: amounts are approximate - my grandmother never wrote anything down, so we go by taste. Feel free to adjust to your own preferences.

1 lb new potato, skins on (I like the small-ish ones best)
1/4 cup extra virgin olive oil
3 -4 garlic cloves (if they're really small, use 4)
1/4 cup chopped parsley
salt
pepper

Steps:

  • Boil potatoes, keeping skins on, until tender.
  • Meanwhile, crush garlic into medium-sized serving bowl and add chopped parsley.
  • Add olive oil and mix well.
  • Let mixture sit while potatoes are cooking.
  • When potatoes are done and still HOT (or at least very warm- they absorb the flavour better that way), cut into bite-sized chunks and add to parsley-garlic mixture.
  • (If you prefer to peel your potatoes, feel free).
  • Stir well to coat potatoes.
  • If more oil is needed (sometimes it varies, depending on the potatoes), add enough to get desired amount.
  • Salt and pepper to taste.
  • This is best when it sits for at least an hour at room temperature before serving to let the flavours combine.

1 3/4 lbs baking potatoes, unpeeled and cut into 2-inch pieces
1/2 cup olive oil, divided
1 teaspoon black pepper
1/4 teaspoon salt
1/2 green bell pepper, medium sized, cut into strips
1/2 red bell pepper, medium sized, cut into strips
1/2 purple onion, small sized, cut into strips
1/2 cup canned artichoke heart, drained and quartered
1 tablespoon fresh basil, chopped
1/2 teaspoon garlic, minced

Steps:

  • Place the potato pieces on a large baking sheet; drizzle with 1/8 cup oil. Sprinkle with 1 tsp black pepper and the salt; toss well. Bake at 425 degrees for 35 minutes or until the potato pieces are tender.
  • Cook the pepper strips and onion in 1/8 cup oil in a large skillet over medium-high heat, stirring constantly, until the vegetables are crisp tender.
  • Combine the potato pieces, bell pepper mixture, and artichoke hearts in a boil. Add the remaining 1/8 cup of oil, freshly chopped basil, and garlic; toss. Serve warm or at room temperature.

25 ounces Yukon Gold potatoes
1 tablespoon rock salt
4 tablespoons extra-virgin olive oil, divided
1 tablespoon white wine vinegar
2 cloves garlic, peeled and slightly crushed
2 green onions (white part only), chopped
½ cup very finely chopped flat-leaf parsley
salt and freshly ground black pepper to taste
1 teaspoon red pepper flakes

Steps:

  • Combine potatoes and salt in a large pot filled with cold water. Bring to a boil. Cook until potatoes are tender, but not mushy, about 10 minutes depending on size. Drain and set aside until cool enough to handle.
  • While potatoes are cooking, whisk 3 tablespoons olive oil and white wine vinegar together in a small bowl. Add garlic and set aside.
  • Peel cooked and cooled potatoes and cut into 1-inch cubes. Combine potatoes, green onions, and parsley in a bowl and lightly toss. Season with salt and pepper. Drizzle with olive oil mixture and lightly toss, taking care not to break the potatoes.
  • Top with remaining 1 tablespoon olive oil and red pepper flakes right before serving.

1/2 cup chopped red onion
3 -4 plum tomatoes, quartered
1/3 cup olive oil or 1/3 cup vegetable oil
3 -4 fresh basil leaves, chopped
1 (5 3/4 ounce) jar stuffed olives, drained and halved
1 teaspoon dried oregano
1 1/2 teaspoons salt (I omitted this)
