A household favorite, I created this recipe after giving up flour, cheese and most sugar. It is a turkey meatloaf with an Italian touch.

1 pound mild Italian turkey sausage, casings removed
1 pound ground turkey
2 eggs, beaten
1 ½ cups rolled oats
½ cup chopped onion
½ cup milk
1 tablespoon Worcestershire sauce
1 teaspoon Italian-style seasoning
½ teaspoon garlic powder
½ teaspoon salt
2 cups spaghetti sauce
5 dashes hot pepper sauce
1 tablespoon Worcestershire sauce
½ teaspoon liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ground turkey, sausage, eggs, oats, onion and milk. Season with 1 tablespoon Worcestershire sauce, Italian seasoning, garlic powder and salt. Mix well and form into a loaf. Place into a 9x13 inch baking dish.
  • In a separate small bowl, mix together the spaghetti sauce, hot sauce, 1 tablespoon Worcestershire sauce and liquid smoke. Smooth over the entire meatloaf.
  • Bake in preheated oven for 50 to 60 minutes.

1 cup Italian-style bread crumbs
2 eggs
¼ cup finely chopped onion
¼ cup grated Parmesan cheese
¼ teaspoon ground black pepper
1 (14 ounce) jar marinara sauce, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine turkey, bread crumbs, eggs, onion, Parmesan cheese, and pepper in a large bowl. Fold in 1 cup marinara sauce.
  • Pat turkey mixture firmly into a 8x4-inch loaf pan using wet hands. Pour remaining marinara sauce on top.
  • Bake in the preheated oven until meatloaf is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand 20 minutes before cutting.

6 garlic cloves, halved
2 medium carrots, cut into chunks
1 small onion, cut into wedges
1 can (15 ounces) black beans, rinsed and drained
1 cup quick-cooking oats
1/2 cup fat-free milk
1 can (6 ounces) tomato paste, divided
3 teaspoons Italian seasoning, divided
1 teaspoon seasoned salt
1 package (20 ounces) lean ground turkey
1 tablespoon water

Steps:

  • Preheat oven to 350°. Place garlic, carrots and onion in a food processor; pulse until finely chopped. Add beans; process until blended. In a large bowl, combine oats, milk, half of the tomato paste, 1-1/2 teaspoons Italian seasoning, seasoned salt and black bean mixture. Add turkey; mix lightly but thoroughly., Shape into a loaf and place in an 11x7-in. baking dish coated with cooking spray. Bake, uncovered, 30 minutes., Combine water with the remaining tomato paste and Italian seasoning; spread over meat loaf. Bake 10-15 minutes longer or until a thermometer reads 165°. 1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with cooking spray.

A modified version of this (http://www.food.com/recipe/turkey-meatloaf-54752) recipe. I love Italian flavors and cheese, so I changed the recipe a bit for personal taste. It turned out great so I want to share it :-).

2 1/2 lbs italian seasoned ground turkey (Jennie O)
1 yellow onion
10 white mushrooms
6 garlic cloves
1 carrot
1 cup Italian seasoned breadcrumbs
2 eggs
3/4 cup barbecue sauce
6 ounces shaved parmesan cheese
seasoned pepper
4 tablespoons extra virgin olive oil

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Dice onion and mushrooms. Mince garlic. Sautée in a skillet with EVOO until onions are golden and translucent. Season with seasoned pepper. Remove from heat.
  • 3. Grate carrot into a large mixing bowl then add 1/2 cup BBQ sauce, 4 oz shaved Parmesan cheese and remaining ingredients and blend thoroughly. When finished, mixture should be firm enough to maintain a loafed shape. If needed, add more bread crumbs to stiffen mixture.
  • 4. Place ground turkey mixture into 5 small loaf pans approx 5x3 inches (I purchased mine from grocery store in a set of 5 disposable pans with lids).
  • 5. Bake at 350 degrees for approximately 40-45 minutes. With approximately 15 min remaining, spread remaining BBQ sauce over loafs then sprinkle with remaining Parmesan cheese. When done internal temp should be 165 degrees F and cheese on top melted and golden.

1 (20 7/8 ounce) package ground turkey
1 medium onion, chopped
1 small green pepper, finely chopped
1 egg, lightly beaten
2 garlic cloves, chopped
1 (8 ounce) can tomato sauce, divided
1/2 cup seasoned bread crumbs
1/3 cup grated parmesan cheese, plus (divided)
2 tablespoons grated parmesan cheese, divided
2 teaspoons italian seasoning, divided
1/2 teaspoon garlic salt
1/4 teaspoon black pepper

Steps:

  • Press a 24-inch long piece of nonstick aluminum foil into an oval slow cooker bowl, with nonstick side facing up, so that it is flush with bowl and ends hang out over sides.
  • In a large bowl, gently stir together turkey, onion, green pepper, egg, garlic, 1/2 cup tomato sauce, bread crumbs, 1/3 cup cheese, 1 teaspoon Italian seasoning, garlic salt and black pepper. Place meatloaf mixture in slow cooker and form into a 9 x 5-inch log. Cover and cook on HIGH 2-1/2 hours or on LOW 4-1/2 hours or until internal temperature registers 160° on an instant read thermometer.
  • About 30 minutes before cooking is complete, place remaining 1/4 cup tomato sauce in a small bowl and stir in remaining 2 tablespoons Parmean cheese and 1 teaspoon Italian seasoning. Pour tomato sauce mixture over meatloaf; cover and continue to cook another 30 minutes.
  • Carefully lift meatloaf out of slow cooker using foil cradle and place on a cutting board. Using two long offset spatulas, carefully lift meatloaf off of foil and place on serving dish. Discard foil and any liquid and serve immediately.

2 Tbs. Kraft House Italian Dressing
1/4 tsp. Oregano
1/4 tsp. Basil
1/8 C. Carapelli Premium Extra Virgin Olive Oil
2 tsp. Minced Garlic
1/8 C. Chopped Sundried Tomatoes
1 tsp. Capers
1/8 C. Shredded Asiago Cheese
5 dashes (approx. 1 tsp.) Emeril's Green Pepper Sauce
1/8 C. Seasoned Bread Crumbs
1 tsp. Ketchup

Steps:

  • Pre-heat oven to 350. Finely chop onion and peppers. Coarsely chop the turkey pepperoni. Mince the garlic or you can use the already prepared garlic, as I do. Mix the onion, peppers, garlic, basil, oregano, turkey pepperoni, italian dressing and olive oil. Sautee over low heat until tender (the onions will be translucent). Set aside to cool. Add above ingredients to ground turkey and mix together. Mix in green pepper sauce, ketchup, Asiago cheese, sundried tomatoes, and capers. Add breadcrumbs (just enough to help hold mixture together ... it should still be somewhat wet) and mix. Turn out onto baking sheet or broiler pan. Form into round loaf shape and apply a thin coat of ketchup to the outside. This will provide a glazing affect. Bake at 350 for approximately one hour. Remove and set aside for approximately 5 minutes before cutting into 1 inch slices.

TURKEY AND ITALIAN SAUSAGE MEATLOAF

I came up with this recipe myself. I love meatloaf but I can't eat ground beef very well so I tried ground turkey and Italian sausage together and really liked it. This is not a spicy meatloaf, but it is tasty. You can add more spices if you want or use hot Italian sausage. Making the meat mixture an hour or so ahead of time allows the flavors to blend and makes the meatloaf taste better. It also allows the wet ingredients to be absorbed by the meat and oatmeal. This will make really good sandwiches the next day. I didn't put a sauce on my meatloaf. Therefore, there is no topping suggestion included. This is real comfort food. Prep time does not include refrigeration time. Refrigeration time is optional. Recipe edited on February 12 2006.

2 teaspoons savory steak seasoning (my Savory Steak Seasoning (for all types of meat))
2 eggs
1/4 cup condensed cream of tomato soup (undiluted)

1/2 cup chopped onion
1 teaspoon minced or pressed garlic

Steps:

  • With one hand, mix the ground turkey, Italian sausage and steak seasoning together in a bowl.
  • Add the rest of the ingredients and mix well with your hands.
  • Smooth mixture out in same bowl and cover with plastic wrap.
  • Refrigerate for at least one hour.
  • Preheat oven to 350°F.
  • Remove meat mixture from the refrigerator.
  • Put the meat mixture in a baking dish or cake pan.
  • Shape it so that the meat does not touch the sides of the dish or pan.
  • This allows room for the meatloaf to expand.
  • Bake for an hour to an hour and 15 minutes, depending on thickness of the loaf.
  • Remove from oven and let stand for about 10 minutes to allow meat to"set".
