This is from my 365 Low-fat Meals cookbook. Yum! This will come together in zero time if you already have meatballs made up and stashed in the freezer. :)

1/2 lb ground turkey
1 egg white
1 garlic clove, minced
2 tablespoons parsley, chopped
1 tablespoon parmesan cheese, grated
1/2 teaspoon salt
1/8 teaspoon black pepper
4 1/2 cups chicken broth
1/2 cup orzo pasta
4 cups escarole, shredded
2 tablespoons lemon juice

Steps:

  • In a medium bowl, combine ground turkey, egg white, garlic, parsley, Parmesan cheese, salt and pepper.
  • Mix lightly to blend. Shape into 16 meatballs.
  • In a large soup pot, bring chicken broth to a boil. Add meatballs and orzo, reduce heat to medium-low, cover and simmer 15 minutes or until meatballs are cooked through.
  • Add escarole and lemon juice. Cover and simmer 5 minutes, or until escarole is tender.
  • Serve sprinkled with more Parmesan cheese.

This is a very tasty soup. Some people call this 'Italian Wedding Soup,' which refers not to matrimony but to the 'wedding' of the small meatballs and pasta. Take care to wash the escarole well. This is a favorite recipe from the files of a soupaholic.

Number Of Ingredients 13

1 medium onion, chopped
2 garlic cloves, chopped
2 tablespoons butter
1/2 teaspoon sugar
1 head well-rinsed escarole (chopped)
5 cups chicken stock
1/2 cup orzo pasta (oat seed sized pasta)
frozen chopped spinach
1/2 teaspoon salt
pepper
grated locatelli cheese (to garnish) or parmesan cheese (to garnish)
1 cup tiny meatballs, not browned (marble size)
ground meat, Italian breadcrumbs, grated locatelli cheese (or Parmesan)

Steps:

  • cook Onion in butter, 3 minutes.
  • add Garlic and cook an additional 3 minutes.
  • add Escarole and cook another 3 minutes.
  • add 2 cups stock, 1/2 teaspoons sugar, 1/2 teaspoons salt, pepper to taste.
  • simmer covered for 15 minutes.
  • add 3 cups stock and bring to a boil.
  • stir in Orzo, Meatballs, and Spinach.
  • simmer 15 minutes
  • garnish with grated locatelli cheese (or Parmesan).
  • When making this soup, consider getting a big pot and making a double batch. Everyone will want seconds and it's a great leftover.

1/2 lb ground sirloin or 1/2 lb ground veal
1/3 cup parmesan cheese, coarsely grated
1/4 cup garlic-flavored croutons, crumbled
2 tablespoons Italian parsley, minced
1/4 teaspoon salt
1/8 teaspoon white pepper
1 large egg, lightly beaten
1/2 cup onion, minced
1 tablespoon extra virgin olive oil
2 tablespoons extra virgin olive oil
1/4 cup onion, minced
2 garlic cloves, minced
4 cups shredded escarole, rinsed & spun dry
4 cups chicken broth
1/4 cup parmesan cheese, grated (to garnish)
cayenne pepper, to taste

Steps:

  • In a mixing bowl combine all of the meatball ingredients.
  • Mix well with your hands, then shape into 24 walnut sized meatballs.
  • In a Dutch oven, heat 1 tablespoon olive oil over medium-high heat until hot, but not smoking.
  • Saute the meatballs 12 at a time until golden brown on all sides.
  • Remove to a plate and set aside.
  • Add the remaining olive oil and onion to the pot and saute until the onion is soft.
  • Add the garlic and continue to saute for another couple of minutes.
  • Stir in the escarole and cook over low heat, covered, stirring occasionally, until it wilts (3 minutes).
  • Add the broth and meatballs and bring to a boil; then simmer uncovered for 3 minutes.
  • Serve hot, sprinkled with the remaining cheese and the cayenne pepper for garnish.

We like to change the taste of this by using different types greens (we have supped spinach and mustard greens both in the past). The taste also changes with the type of meatballs you use. My family's favorite is Italian flavored meatballs. We serve with French bread and fresh fruit for dessert.

4 cups chicken broth
12 ounces escarole, cut into stips
1 1/2 cups carrots, sliced
1 onion, chopped
3 teaspoons garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
15 ounces cannellini beans, drained and rinsed
12 ounces meatballs, fully cooked and cut into quarters
3 tablespoons parmesan cheese, grated

Steps:

  • Bring broth, escarole, carrots, onion, garlic, salt and pepper to a boil in a large pot. Reduce heat, cover and simmer about 10 minutes until vegetables are tender.
  • Add beans and meatballs and simmer 3 to 5 minutes until heated through. Remove from heat. Sprinkle with cheese and serve.

1/2 head escarole (about 1/2 pound)
1 1/2 large carrots, chopped
12 cups chicken stock, preferably homemade
4 ounces ditalini or tubetti, or spaghetti broken into bite-size pieces
Freshly grated Parmigiano-Reggiano cheese
Meatballs
1/2 pound ground veal or beef
1/2 cup plain bread crumbs
1/2 cup freshly grated Parmigiano-Reggiano cheese
1/4 cup very finely minced onion
1 large egg
1/2 teaspoon salt
Freshly ground pepper, to taste

Steps:

  • Trim the escarole and discard any bruised leaves. Cut off the stem ends. Separate the leaves and wash well in cool water, especially the center of the leaves where soil collects. Stack the leaves and cut them crosswise into 1-inch strips. You should have about 4 cups.
  • Combine the escarole, carrots, and stock in a large pot. Bring to a simmer and cook until the escarole is almost tender, about 30 minutes.
  • To make the meatballs
  • Meanwhile, combine the ground meat, bread crumbs, cheese, onion, egg, salt, and pepper in a medium bowl. Shape the mixture into tiny balls, less than 1 inch in diameter.
  • To assemble
  • When the escarole is almost tender, stir in the pasta and return the soup to the simmer. Drop the meatballs into the soup. Cook over low heat, stirring gently, until the meatballs and pasta are cooked, about 20 minutes. Taste for seasoning. Serve hot with grated Parmigiano-Reggiano.

2 tablespoons extra-virgin olive oil, plus more for drizzling
3 cloves garlic, sliced
2 carrots, chopped
1 red onion, chopped
2 teaspoons chopped fresh rosemary
1 head escarole, roughly chopped (about 12 cups)
1 15-ounce can cannellini beans (do not drain)
4 cups low-sodium chicken broth
Kosher salt and freshly ground pepper
12 beef meatballs
Grated parmesan cheese, for topping

Steps:

  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the garlic, carrots, red onion and rosemary and cook, stirring, until softened, about 5 minutes. Stir in the escarole, beans and their liquid, chicken broth, 2 cups water, 1/2 teaspoon salt and a few grinds of pepper.
  • Increase the heat to high and bring to a boil. Reduce the heat to medium low and simmer until the vegetables are tender, about 10 minutes.
  • Gently stir in the meatballs and cook until warmed through, about 5 minutes. Season with salt and pepper. Ladle into bowls and top with parmesan and a few grinds of pepper; drizzle with olive oil.
