Make sure to leave a little bit of meat on the bones. Once the carcass is roasted take 4 quarts of water and the carcass in a big soup pot and bring to a boil.Bring heat to low/medium and add 1/2 cup of onions 1/2 cup carrots 1/2 1/2 cup of celery fresh ground pepper salt and fresh herbs like parsley and bay leaves and leave that cooking for 4 -5 hours.
