1 pound ground sausage
1/2 cup finely chopped onion
1/4 cup minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh parsley, plus more for garnish
1 egg
1/2 cup grated Parmesan, plus more for garnish
1 cup panko breadcrumbs
12 ounces ricotta cheese
2 teaspoons kosher salt
Olive oil
4 cups red sauce, heated
Small potato buns (slider size), toasted

Steps:

  • Preheat the oven to 450 degrees.
  • Mix the beef, sausage, onions, garlic, thyme, parsley, egg, Parmesan, breadcrumbs, ricotta and salt in a bowl together with your hands (like mixing play dough). Form 1 1/2-inch inch balls out of the meat mixture. Heat a large ovenproof skillet (preferably cast iron) with a bit of olive oil. Add the meatballs and brown on all sides, about 3 minutes. Place the skillet in the oven to finish cooking, 5 to 7 minutes.
  • Remove and toss with the red sauce. Place on the toasted slider buns and sprinkle with Parmesan and parsley.

1/2 cup whole milk
8 ounces ground beef (85 percent lean)
8 ounces ground pork
4 ounces ground veal
1/2 cup finely grated Pecorino Romano or Parmesan cheese (1 ounce)
3 tablespoons coarsely chopped fresh flat-leaf parsley
1 garlic clove, minced
1 large egg
Coarse salt
Homemade Marinara Sauce
2 dozen brioche rolls, split
1 1/2 cups coarsely grated mozzarella cheese (5 ounces)
1/2 cup finely grated Pecorino Romano or Parmesan cheese (1 ounce)
Small basil leaves

Steps:

  • Make the meatballs: Soak bread in milk for 5 minutes. Gently mix bread and milk with meats, Pecorino Romano, parsley, garlic, egg, and 1 teaspoon salt. Refrigerate for at least 30 minutes.
  • Roll mixture into twenty-four 1-ounce balls (each about the size of a golf ball).
  • Heat sauce in a large heavy pot over medium heat. Drop meatballs into sauce, and bring to a gentle simmer. Cook, partially covered, until meatballs are cooked through, 20 to 25 minutes.
  • Make the sandwiches: Preheat oven to 400 degrees. Working in batches, arrange rolls, cut side up, on a baking sheet. Place 1 meatball, a spoonful of sauce, 1 tablespoon mozzarella, and 1 teaspoon Pecorino Romano on bottom halves. Bake until cheese melts, about 3 minutes. Sandwich with basil.

Bake until browned and a thermometer reads 160°, about 35 minutes. Maybe it's the symmetry, or center of gravity, that makes these just feel right in your hand. If you're short on time, using pre-made meatballs will do.

2 tablespoons olive oil, divided
1 yellow onion, diced
5 cloves garlic, minced, divided
1 pound ground beef
2 tablespoons chopped Italian parsley, plus more for garnish
1 large egg
¼ cup plain bread crumbs
1 cup shredded fontina cheese, divided
2 teaspoons kosher salt
freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
3 tablespoons unsalted butter
18 dinner rolls
2 cups spicy tomato sauce
2 tablespoons freshly grated Parmigiano-Reggiano cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat 1 tablespoon olive oil in a saucepan over medium heat. Add onion and 2 cloves garlic; cook and stir until onion is soft, about 5 minutes.
  • Place beef in a large bowl. Add onion-garlic mixture, parsley, egg, bread crumbs, and 1 large handful of fontina cheese, reserving the rest for topping. Season with salt, pepper, and cayenne. Mix by hand until just combined. Scoop meat mixture into 24 mini muffin cups; meatballs need not be perfectly round.
  • Bake in the preheated oven until no longer pink in the centers, about 12 minutes. Leave oven on. Let meatballs cool briefly while you make the garlic butter.
  • Melt butter in a saucepan over medium heat. Add remaining minced garlic once butter starts to bubble; stir, then immediately remove from heat. Stir well and set aside.
  • Line a rimmed baking sheet with foil; coat foil with remaining olive oil. Transfer rolls, still attached, to the baking sheet. Cut a hole in the top of each roll, about 2/3 of the way down. Brush garlic butter over the insides and outsides of the rolls.
  • Bake until golden brown, about 8 minutes. Pour about 1 tablespoon tomato sauce into each hole. Stuff meatballs into the holes. Top each roll with a spoonful of tomato sauce and remaining fontina cheese. Sprinkle Parmesan cheese on top.
  • Continue baking until cheese is melted, 12 to 15 minutes. Garnish with more parsley. Let rolls sit for 5 to 10 minutes to firm up; transfer to a serving platter.

1 tablespoon oil, for frying
12 slider buns
2 cups marinara sauce
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large bowl add the ground beef, Italian sausage, garlic, parsley, parmesan cheese, salt, pepper, bread crumbs, eggs, and milk and mix until thoroughly combined.
  • Roll the mixture into 5 ounce meatballs.
  • Add 1 tablespoon of olive oil to a pan over medium heat and brown the meatballs on both sides for 15 minutes total.
  • Slice the rolls in half lengthwise.
  • Place the bottom half on a 9 x 13-inch (23 x 33cm) baking dish.
  • Spoon a little marinara sauce on each bun. Top a meatball on each roll, add another spoonful of sauce, and top with mozzarella cheese.
  • Place the remaining half of the rolls on top and lightly brush them with oil.

Steps:

  • Preheat the oven to 350° F (180°C).

8 ounces 93% lean ground beef
½ cup panko bread crumbs
¾ cup barbeque sauce (such as Sweet Baby Ray's®), divided

10 slices pepper Jack cheese

10 slices cooked bacon
¼ cup slivered onion
¼ cup roasted red pepper, cut into strips

Steps:

  • Attach the meat grinder attachment to an electric stand mixer (such as KitchenAid®). Run enough bacon through the meat grinder to make 8 ounces ground bacon.
  • Combine ground bacon, beef, bread crumbs, 1/4 cup barbeque sauce, and steak sauce in a bowl. Mix until well combined and shape into 2-inch round balls. Set meatballs on a baking sheet.
  • Preheat the oven to 350 degrees F (175 degrees C).

Inspired by the tiny meatball sandwiches served at New York City's Little Owl restaurant, she came up with these kid-size treats that can be eaten with one hand (leaving the other one free to wreak kid-size havoc).

For tomato sauce
2 (28-ounce) cans whole tomatoes in juice
1/4 cup olive oil
1 medium onion, finely chopped
5 garlic cloves, minced
1 teaspoon sugar
1 Turkish or 1/2 California bay leaf
For meatballs
3 cups coarse fresh bread crumbs (6 slices firm white sandwich bread)
2/3 cup whole milk
1 pound ground pork
1 pound ground beef chuck (not lean)
4 garlic cloves, minced
1 1/2 cups grated Pecorino Romano (1/4 pound)
2 large eggs, lightly beaten
1/2 cup finely chopped flat-leaf parsley
1/2 teaspoon dried oregano
2 cups vegetable oil
For assembling sliders
20 small (2-inch) soft buns or rolls, split

Steps:

  • Make tomato sauce:
  • Purée tomatoes with their juice, 1 can at a time, in a blender and transfer to a bowl.
  • Heat oil in a large heavy pot over medium-high heat until it shimmers, then sauté onion until golden, about 6 minutes. Add garlic and sauté, stirring, 1 minute. Add tomato purée, sugar, bay leaf, and 1 1/2 teaspoons salt and simmer, uncovered, stirring occasionally, until thickened, 40 to 50 minutes. Discard bay leaf.
  • Make meatballs while sauce simmers:
  • Stir together bread crumbs and milk in a large bowl and let stand 10 minutes. Add meat, garlic, cheese, eggs, parsley, oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper and blend with your hands until just combined well (do not overmix). Form level 1/4-cup portions into meatballs.
  • Heat oil in a 10-inch heavy skillet over medium-high heat until it shimmers, then fry meatballs, about 6 at a time, turning occasionally, until well browned and cooked through, 4 to 6 minutes per batch. Transfer to paper towels with a slotted spoon.
  • Simmer meatballs in sauce and assemble sliders:
  • Add drained meatballs to tomato sauce and simmer, stirring occasionally, until meatballs are heated through.
  • Assemble sliders with a meatball and 1 tablespoon sauce per bun, securing each with a wooden pick.

1 pound ground sausage (preferably spicy pork)
1/2 cup finely chopped onion
1/4 cup minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh parsley, plus more for garnish
1 large egg
1/2 cup grated parmesan, plus more for garnish
1 cup panko breadcrumbs
12 ounces ricotta cheese

Steps:

  • Mix all meats, panko, 1/2 cup water, 6 tablespoons cheese, egg, egg yolk, 1/4 cup parsley, 1 teaspoon salt, and 1/2 teaspoon black pepper in large bowl. Form into eighteen 2-inch-meatballs.
  • Heat vegetable oil in large skillet over medium-high heat. Working in batches, fry meatballs until brown all over. Transfer to plate. Pour off drippings from skillet. Reduce heat to medium. Add olive oil to skillet. Add onion, garlic, basil, and fennel seeds. Sauté until onion begins to brown, about 5 minutes. Add all tomatoes with juices. Bring to boil, scraping up browned bits. Reduce heat to low, cover with lid slightly ajar, and simmer, stirring occasionally, about 30 minutes.
  • Puree sauce in processor until almost smooth. Return to same skillet. Add meatballs. Cover with lid slightly ajar and simmer until meatballs are cooked through, stirring occasionally, about 30 minutes longer. DO AHEAD: Can be made 1 day ahead. Cover; chill.
  • Place arugula leaves on bottom of each roll, if desired. Top each with 1 meatball. Drizzle meatballs with some of sauce and sprinkle with remaining 2 tablespoons parsley and 2 tablespoons. cheese. Cover with tops of rolls.
