- Mix jalapeno pepper, garlic, onion, and ground beef in a medium bowl. Form into four patties.

- In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., In a small bowl, combine the jalapenos and garlic; set aside. When cycle is completed, turn dough onto a lightly floured surface. Divide dough in half. , For each loaf, roll one portion of dough into a 14x9-in. rectangle. Spread with 1-1/2 teaspoons butter. Sprinkle with 1/2 teaspoon garlic salt, 1 tablespoon cheese and 1/3 cup jalapeno mixture. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place in a 9x5-in. loaf pan coated with cooking spray. Cover and let rise in a warm place until doubled, about 40 minutes. , Melt remaining butter; brush over loaves. Sprinkle with remaining cheese and jalapeno mixture. , Bake at 350° for 40-50 minutes or until golden brown. Remove from pans to wire racks to cool.

- Combine olive oil, lime juice, jalapenos, vinegar, Worcestershire sauce, cilantro, elephant garlic, sugar, paprika, cumin, garlic powder, cayenne pepper, salt, and pepper in a large glass bowl. Add whatever meat you are planning on marinating, cover, and refrigerate for 2 hours. The meat will lose it's bright red color as it marinades in the acidic juice.

This is my creation. I wanted a good spicy beef dish, and decided to create this since I couldn't find a quality one at any Chinese restaurant in my area, unless I wanted to pay an arm and a leg. Hope you enjoy, and feel free to adjust the heat to your liking.

- Before starting, marinate beef in desired amount of soy sauce for at least an hour.
- In a large, heated wok or skillet, begin browning beef in a little bit of oil.
- As the beef gets more brown, begin adding the jalapenos, garlic, and green onion, stirring constantly.
- After the jalapenos begin softening somewhat, add the squash, zucchini, and mushrooms, stirring constantly.
- After vegetables are cooked through (still somewhat crispy, do not over-cook) add beef broth and more soy sauce to taste, let simmer for 10 minutes.
- Toss with cooked rice or noodles.

SPICED BEEF HOT DISH WITH BACON JALAPENO CORNBREAD

- For the spiced beef hot dish: Place the bacon in an even layer in a Dutch oven or large cast-iron pan and turn the heat to medium-high. Cook until crispy and the fat is rendered, a few minutes per side. Meanwhile, sprinkle the beef with salt and pepper. Remove the bacon to paper towels to drain, leaving the bacon fat in the pan. Working in batches, place the beef in an even layer in the Dutch oven and sear until browned on all sides, adding a drizzle of oil if the Dutch oven ever seems dry, about 4 minutes per side. Remove to a plate or shallow bowl. Crumble the bacon and set aside.
- Reduce the heat to medium and add the carrots, jalapeno and onion and cook until translucent, 7 to 10 minutes. Add the garlic and cook 1 minute. Add the baharat and chili powder and toast with the vegetables, 1 minute. Add the tomatoes and broth and bring to a boil. Add the beef and any accumulated juices, the chickpeas and raisins. Reduce to a simmer, then cover and let cook 1 to 1 1/2 hours. Season to taste.
- For the cornbread: Preheat the oven to 400 degrees F.
- Whisk together the cornmeal, flour, baking powder, baking soda and salt in a large bowl. Whisk together the egg, melted and cooled butter, yogurt and honey in a medium bowl. Add the wet ingredients to the dry ingredients. Fold in the jalapeno and bacon.
- Using a cookie scoop, dollop the cornbread batter on top of the chili to cover. Bake, uncovered, until golden brown, 25 to 30 minutes. Remove and serve with yogurt and chopped parsley.
JALAPEñO-GARLIC SAUCE
An incredibly diverse sauce. Most use this on beef, or with mexican cuisine like tacos, quesadillas, etc. Can also used with asian-influenced foods. I enjoy this sauce on chicken.

- Brush a large skillet with oil. Add the garlic and jalapeños to each. Don't worry if you can't fit all the peppers in the skillet at the same time, you can transfer some out to cool. Cover and cook over low heat, turning the jalapeños occasionally, until they are blistered all over and the garlic is softened, about 15 minutes. Transfer to a plate to cool. Peel the jalapeños and discard the stems, seeds and cores. Peel the garlic cloves.
- Transfer the jalapeños and garlic to a blender and add the olive oil, lime juice and cilantro. Blend until smooth. Scrape the sauce into a bowl, season with salt. Transfer the sauce to jars and refrigerate. Can be stored up to 2 months.

CHEESY JALAPENO GARLIC BREAD

- Preheat oven to 350 degrees.
- In a food processor, combine garlic, parmesan cheese, oregano, and basil until finely chopped.
- Add softened butter, salt and pepper to the food processor.
- Blend until mixed. You may need to scrap the sides and mix a little with a spoon.
- Evenly cut French bread length wise. place on foil or parchment paper lined baking sheet.
- Spread butter on both sides of bread.
- Place extra butter in airtight container and save in refrigerator.
- Evenly place Jalapeños across both halves of bread.
- Sprinkle parmesan cheese evenly over both slices of bread, repeat with mozzarella.
- Bake at 350 degrees for 8 minutes, or until cheese begins to bubble and the edges of the bread turn golden brown. For a crispier top, broil on high for 3 minutes, watching closely not to burn the bread.
