Grilled Pork Chops with Peaches, Jalapeño and Honey image

These savory grilled pork chops with peaches, jalapeño and honey are juicy, flavorful and best of all easy to make!

4 bone-in pork chops
4 ripe peaches or nectarines (pitted an cut into wedges)
1/2 cup cherry tomatoes (halved)
1 jalapeño (seeded and finely chopped)
1 large shallot (peeled and thinly sliced)
1/2 c chopped cilantro
2 juicy limes (juice and zest)
1/4 c olive oil (plus extra for the pork chops)
3 tbsp honey
salt and pepper

Steps:

  • 30 minutes before you're ready to start grilling take the pork chops out of the refrigerator and coat with a thin layer of olive oil and season with salt and pepper.
  • In a mixing bowl, toss together the sliced peaches, tomatoes, jalapeño, cilantro, shallot, honey, olive oil, lime juice and zest. Season with salt and then set aside.
  • Prepare a medium-hot fire in a grill, or preheat a cast-iron grill pan on the stovetop over medium-high heat. Grill the pork chops for 5-7 minutes on each side or until the internal temperature reads between 135-145F. Let rest for 5 minutes before serving.
  • To serve, place the pork chops on a platter and top with the peach and jalapeño mixture!

4 cups chopped onion
1 tablespoon minced garlic
8 cups prepared fresh fruit, peeled if desired (see Tip)

1 cup vinegar
1 cup water
2 small fresh chile peppers, seeded and slivered lengthwise, or 1 teaspoon crushed red pepper

Steps:

  • Heat oil in a Dutch oven over medium heat. Add onion and cook, stirring occasionally, until light brown, 6 to 10 minutes Add garlic and cook, stirring, until fragrant, about 30 seconds.
  • Add fresh fruit, dried fruit, sugar, vinegar, water, chiles and salt. Bring to a boil over high heat, stirring often. Reduce heat to maintain a lively simmer and cook until thickened, 30 to 40 minutes. To test doneness, put a spoonful of chutney on a plate and draw a spoon through the center. If no liquid seeps into the middle, it's done. Return to a simmer to thicken more if necessary.
  • If freezing or refrigerating, ladle the chutney into clean canning jars to within 1/2 inch of the rim. Wipe rims clean. Cover with lids. Let the jars stand at room temperature until cool before refrigerating or freezing. Or process in a water bath to store at room temperature (see Tip).

4 boneless pork loin chops
1/2 teaspoon kosher salt, plus 1/8 teaspoon for peach jam
1/4 teaspoon pepper
1 cup peach jam
1 jalapeno, diced
3 tablespoon white wine (or broth, white wine vinegar)
1/2 red onion, sliced
1 peach, pitted and sliced

Steps:

  • Preheat the oven to 400 degrees. In a oven proof large skillet heat the oil on medium high heat. Season the pork with the salt and pepper. Cook pork on each side 3-4 minutes. Remove from pan and set aside. Add onion and peach slices and saute for 1 minute, and then add the wine scraping the bottom of the pan to release the cooked brown bits from the meat. Return pork to the skillet and turn off the heat. In a small bowl. mix together the peach jam with the diced jalapeno and 1/8 teaspoon of salt. Put on top of the pork and place skillet in the oven. Cook for about 8 minutes or until the pork reaches an internal temperature of 145 - 160 degrees F.

1/2 cup plus 3 Tbsp. extra-virgin olive oil, divided, plus more for grill
4 bone-in pork rib chops (about 10 oz. each)
Kosher salt, freshly ground pepper
2 tsp. coriander seeds
1/4 cup apple cider vinegar
1 tsp. sugar
2 large jalapeños
1/4 medium white onion, very thinly sliced

Steps:

  • Prepare a grill for medium-high heat; lightly oil grate. Pat pork chops dry and season generously all over with salt and pepper. Place on a rimmed baking sheet and let sit at room temperature at least 30 minutes and up to 1 hour.
  • Meanwhile, toast coriander seeds in a dry small skillet over medium heat, tossing often, until golden brown and fragrant, about 2 minutes. Transfer seeds to a cutting board and let cool. Using a flat-bottomed mug or a heavy skillet, lightly crush. Place in a small bowl and add vinegar, sugar, and 1/2 cup oil. Season with salt and pepper and whisk until sugar and salt are dissolved. Set marinade aside.
  • Toss jalapeños and 1 Tbsp. oil in a small bowl to coat; season with salt and pepper. Pat pork chops dry again (the salt will have drawn out more moisture) and rub with remaining 2 Tbsp. oil. Grill jalapeños, turning often, until softened and blackened in spots, about 5 minutes. Transfer to a cutting board. Grill pork chops, turning every 2 minutes or so, until cooked through but still medium-rare closest to the bone (an instant-read thermometer inserted near the bone should register 145°F), 8-12 minutes. Transfer to cutting board and let rest 10-15 minutes.
  • Cut pork along the bone to remove meat in one piece; slice 1/2" thick and transfer to a rimmed platter. Slice jalapeños crosswise into rounds and scatter over pork. Pour reserved marinade over and let sit at least 15 minutes and up to 1 hour before serving. To serve, scatter onion over.

JALAPEñO PEACH BARBECUE SAUCE WITH BROILED PORK CHOPS



Jalapeño peach barbecue sauce with broiled pork chops image

4 peaches, pitted and sliced
1/2 medium yellow onion
4 cloves garlic
1 to 2 jalapeños, cut in half and seeded
1/2 cup ketchup
8 ounces tomato sauce
3 tablespoons molasses
1 tablespoon Worcestershire sauce
1 teaspoon lemon juice
1 teaspoon brown sugar
Pinch ground clove
Pinch ground nutmeg
Pinch ground ginger
1 teaspoon smoked paprika
Salt
Black pepper
4 bone-in pork chops, about 3/4" thick
Salt
Black pepper

Steps:

  • To make the sauce, turn on the broiler, and place a rack 6 inches away from the heating element. Place in a large cast-iron skillet or on a foil-lined sheet the sliced peaches, skin side down, the onion, the garlic, and the jalapenos, skin side up. Place under the broiler, and cook for 5 minutes or until the peaches, garlic, onion, and jalapeños are softened and have begun to blacken. Remove from the oven. When cool enough to handle, peel off the skin from the peaches (don't worry if it doesn't all come off) and place in a blender along with the onion, garlic, and jalapeño.
  • Add to the blender the ketchup and tomato sauce and blend until smooth. Pour the sauce into a saucepan and stir in the molasses, Worcestershire sauce, lemon juice, brown sugar, clove, nutmeg, and ginger. Cook the sauce on low heat, occasionally stirring, for 20 minutes. The sauce should be thick and darkened. (Warning-as it cooks the sauce will probably splatter.) Stir in the smoked paprika, then taste and adjust any seasonings. Add salt and pepper to taste.
  • Meanwhile, while the sauce is cooking, lightly salt and pepper each side of the pork chops and have them come to room temperature. Line a sheet pan with foil and top with a lightly greased rack. Place the pork chops on top of the rack. Spread on each chop about 1 to 2 tablespoons of jalapeño peach barbecue sauce on the side facing up. Place under the broiler for 5 minutes. (If you don't have a rack, don't worry. You can also use a cast-iron skillet to cook the chops, as I often do because my broiler is so small! Also, I've just left the broiler on the whole time from the first step, but if you prefer to turn it off and then on again that's fine.)
  • Remove the chops from the broiler. With tongs, flip them over and again apply more jalapeño peach barbecue sauce to the other side of each chop. Place under the broiler and cook for 5-7 minutes or until the sauce is blackened in places and the chops are 140°F. Remove the chops from the oven and allow to rest for 5 minutes before serving.

SEARED PORK CHOPS WITH GRILLED JALAPENO COMPOUND BUTTER



Seared Pork Chops with Grilled Jalapeno Compound Butter image

1 tablespoon vegetable oil
Four 1-inch-thick bone-in pork chops
Kosher salt and freshly ground black pepper
Grilled Jalapeno Compound Butter, recipe follows
1 jalapeno, sliced in half lengthwise, stemmed and seeded
Vegetable oil, for drizzling
Kosher salt
2 sticks (8 ounces) unsalted butter, at room temperature
2 tablespoons honey
1 teaspoon lime zest

Steps:

  • Preheat the oven to 350 degrees F.
  • Put a large cast-iron pan over medium-high heat. Once heated, add the vegetable oil and heat until hot.
  • Meanwhile, sprinkle the pork chops on both sides with salt and pepper. Add the pork chops to the hot pan and sear until golden brown, 2 to 3 minutes. Flip and put the whole pan in the oven to cook the pork until medium-rare, 140 degrees F, 5 to 6 minutes.
  • Set the pork aside on a plate to rest 5 minutes and carry-over cook another 5 degrees. Top each chop with 2 slices of Grilled Jalapeno Compound Butter and serve.
  • Preheat a charcoal or gas grill to medium-high heat.
  • Skewer the jalapeno halves, weaving the skewer through like a needle. Drizzle with vegetable oil and season with salt. Put skin-side down on the grill over direct heat. Grill until charred on all sides and the skins start to bubble and char, about 1 1/2 minutes total. Put the jalapenos in a mason jar and allow to cool. When cool enough to handle, scrape off the skins and finely chop the jalapenos. Set aside.
  • To a stand mixer fitted with a paddle attachment, add the butter and beat on medium speed until creamy. Add the honey, lime zest and 2 teaspoons salt, mixing until incorporated. Remove the bowl from the stand mixer and fold in the chopped jalapenos.
  • Lay out a piece of parchment paper the size of a baking sheet and add the compound butter to the short side of the paper. Fold the parchment over and form the butter into a log, folding over the edges to completely cover. Refrigerate until firm, about 2 hours. Remove from the parchment and sliced as desired.

This is a wonderful fruity, yet spicy salsa that's a great accompaniment for grilled seafood, (I especially enjoy it with grilled tuna, swordfish or shrimp). It's great with pita chips too. Please feel free to adjust the heat by using more or less jalapeno, depending on your personal taste. Cook time is chilling time.

Steps:

  • Make the pork chops: In a food processor, blitz the jalapeños, garlic, cilantro stems, rice vinegar, olive oil, salt and sugar until smooth. Place the pork chops in a large bowl or resealable container and pour the marinade over them; turn the chops to evenly coat. Cover and refrigerate for at least 30 minutes and up to 24 hours.
  • While the chops marinate, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to medium-high.
  • Make the relish: In a small bowl, toss the jalapeño, red onion, rice vinegar, salt, sugar and 2 tablespoons water. Set aside to quick-pickle until ready to serve, or refrigerate for up to 24 hours.
  • Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. With the marinade clinging to them, place the pork chops on the hot greased grate. Grill until the chops are charred at the edges and no longer pink in the middle, 2 to 3 minutes per side. The meat is ready to flip when it releases easily from the grates. (If using a gas grill, close the lid between flips.) Alternatively, cook the chops on the stovetop in batches. Heat a large skillet or grill pan over medium-high. Add enough oil to lightly coat the bottom of the pan, and heat until shimmering. Add the chops, with the marinade clinging to them, to the pan.
