JAM FILLED BUTTER COOKIES
This cookie recipe has been in my mother's family for more years than I've been alive. It's my favorite cookie; my comfort food!

- Preheat the oven to 375 degrees F (190 degrees C).
- In a medium bowl, cream together the butter, white sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. If dough is too soft, refrigerate for 15 to 20 minutes. Place balls 2 inches apart onto ungreased cookie sheets. Use your finger or an instrument of similar size to make a well in the center of each cookie. Fill the hole with 1/2 teaspoon of preserves.
- Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.

JAM JAM COOKIES
Steps:
- In a medium bowl, cream together the butter and brown sugar. Beat in the eggs, corn syrup and lemon zest. In another bowl sift or whisk together the flour, baking soda, baking powder and salt. Add the wet ingredients to the dry and stir together until combined. Refrigerate until ready to use. Roll out the dough on a well floured surface fairly thin and cut out rounds with a cookie cutter. Place on an ungreased baking sheet and bake at 375℉ (190℃) F for 8 minutes. Transfer to a wire rack to cool. Once the cookie are cool, place a teaspoon of your favorite jam or jelly onto the bottom of one of the cookies and top with another one.

JAM-FILLED CHRISTMAS COOKIES
Cookies of this type are usually rolled in beaten egg white, which I find a fussy step. That is why I like this recipe so much; it's tasty AND easy. I found it back in the 1980s in a Norene Gilletz book. They look wonderful on a cookie tray.

- Preheat oven to 350F; line cookie sheets with parchment paper and set aside.
- In a food processor fitted with steel blade, process walnuts and 1/4 cup of the flour until nuts are quite finely chopped; remove from processor into a dish and set aside.
- Place remaining flour into food processor, along with butter and icing sugar; process until mixture has a crumbly texture, about 10 seconds or so.
- Return nut mixture to food processor, along with almond extract and the egg.
- Process until entire mixture is combined; 15 seconds or so.
- Make one-inch balls from mixture and place on prepared cookie sheet; using the end of a wooden spoon, make an indentation into each cookie.
- Fill each hole with a wee bit of jam; I prefer seedless raspberry, but will use strawberry too-- I find the red jams suit the holiday season, but you can use any jam you want.
- Bake in preheated oven for 15 to 18 minutes, or until golden brown.

- Combine the flour and granulated sugar in a large mixing bowl then sprinkle in the diced butter. With a pastry blender, moving in an up and down and twisting motion cut the mixture multiple times until the mixture is uniform and resembles coarse crumbs.
- In a small bowl whisk the egg, vanilla and milk and add it to flour/butter mixture. With a spatula, stir to combine, until a thick ragged dough starts to form. Add 1 tablespoon more milk if necessary.
- With floured hands, knead the dough in the bowl until it becomes one uniform clump of dough. Divide the dough into two equal portions, form 2 balls and flatten into 4” – 5” disks. Wrap each disk tightly in plastic wrap and refrigerate for at least 2 hours or overnight.
- Bring refrigerated dough to room temperature for 10 – 15 minutes. Meanwhile, preheat oven to 350 degrees F. Prepare 3 large baking sheets by lining with parchment paper.

- Using the tip of the knife split the vanilla bean lengthwise. Scrape out the vanilla seeds. Mix the scraped out seeds with sugar. Add butter and the vanilla sugar that you've just made to an empty bowl and beat until creamy. Add eggs and beat further. Then add ground almonds followed by plain flour (all purpose flour) until you have a firm dough. You should always add part of the flour, mix, add and mix until you've used up all the flour. Divide the dough into two doughs, wrap in a cling film and put in the fridge for 1 hour.
- Preheat the oven to 180 °C (356 °F), with top and bottom heat. After one hour take out one dough from the fridge and divide it into 25 to 26 dough bites. Roll them nicely between the palm of your hands such that in the end you have well formed balls. Every time you form a ball you place it on the baking sheet lined with parchment paper. Take a toothpick and press it into the dough ball to create star like pattern. Repeat the process until you've made star patterns on all of the dough balls and bake for 15 minutes in preheated oven. In the meantime make the German thumbprint.
- Once the star cookies are in the oven, take the remaining dough out of the fridge. Divide it into 25 to 26 dough bites and roll into dough balls. Place the mini dough balls on a baking sheet lined with a parchment paper. Using the round handle of the wooden spoon make a well defined depression in each ball.
- After 15 minutes of baking the star cookies, remove them from the oven and let cool while baking the thumbprint cookies for 15 minutes as well. Once the cookies have cooled down, sprinkle with icing sugar (powdered sugar) and fill with warm jam. You can either use a teaspoon or pipping bag to fill the cookies. Do the same to the thumbprint cookies. If you're using jelly like in my case, there is no need to warm it. Let jam become firm before storing the cookies. Preferably overnight.
