BASIC PIZZA

DOUGH (8 PIZZAS)
800 g strong white bread flour
200 g fine ground semolina flour or strong white bread flour
1 level teaspoon fine sea salt
2 x 7 g sachets of dried yeast
1 tablespoon golden caster sugar
TOMATO SAUCE (4 PIZZAS)
1 clove of garlic
1 bunch of fresh basil
olive oil
1 x 400 g tin of quality plum tomatoes
TOPPING (4 PIZZAS)
85 g mozzarella cheese

Steps:

  • For the dough, pile the flours and 1 level teaspoon of sea salt onto a clean surface and make a well in the centre.
  • Add the yeast and sugar to 650ml lukewarm water, mix together and leave for a few minutes, then pour into the well.
  • Using a fork and a circular movement, slowly bring in the flour from the inner edge of the well and mix into the water. Continue to mix, bringing in all the flour - when the dough comes together and becomes too hard to mix with your fork, flour your hands and begin to pat it into a ball.
  • Knead the dough by rolling it backwards and forwards, using your hands to stretch, pull and push the dough. Keep kneading for 10 minutes, or until you have a smooth, springy, soft dough.
  • Place the dough in a lightly greased bowl, cover with clingfilm and leave in a warm place to to prove for 45 minutes, or until doubled in size.
  • For the sauce, peel and finely slice the garlic, then pick the basil leaves and finely chop the stalks.
  • Heat 1 tablespoon of oil in a pan on a medium-low heat, add the garlic and basil stalks, then cook gently for a couple of minutes, or until the garlic is lightly golden, then add most of the basil leaves, the tomatoes, and a pinch of salt and pepper.
  • Leave the sauce to tick away for around 20 minutes, or until smooth, breaking up the tomatoes up with a wooden spoon. When the time's up, taste, and season to perfection.
  • To assemble the pizzas, divide the dough in half. Wrap one half in clingfilm and freeze for another day. With the remaining half, divide the dough into 4 equal balls.
  • Flour each dough ball, then cover with clingfilm, and leave to rest for about 15 minutes - this will make them easier to roll it thinly.
  • Dust a clean surface and the dough with a little flour or semolina, and roll it out into a rough circle, about ½cm thick.
  • Tear off an appropriately sized piece of tin foil, rub it with olive oil, dust well with flour or semolina and place the pizza base on top. Continue doing the same with the remaining dough, dust with a little flour so you can pile them up. Cover with clingfilm and place in the fridge.
  • When you're ready to cook them, preheat the oven to 250°C/500°F/gas 9.
  • At this stage you can apply your topping: spread the tomato sauce over the base, spreading it out to the edges. Tear over the mozzarella and scatter with the remaining basil leaves. Drizzle with a tiny bit of olive oil and add a pinch of salt and pepper.
  • If you can, cook the pizzas on a piece of granite in your conventional oven - if not, cook them one by one on pieces of tin foil directly on the bars of the oven shelf, towards the bottom of the oven (If you're going to cook your pizzas on the bars of the oven, make sure they're not too big - otherwise they'll be difficult to manoeuvre). Cook for 7 to 10 minutes, until the pizzas are golden and crispy.

Yield Makes enough for 4 calzones

Number Of Ingredients 6

7 cups "00" flour or strong white bread flour, plus more for work surface and bowl
1 tablespoon fine sea salt
2 1/2 cups lukewarm water
2 (1/4-ounce) packages active dry yeast
1 tablespoon raw sugar, such as turbinado or Demerara
1/4 cup extra-virgin olive oil

Steps:

  • Place flour and salt in the bowl of a food processor and pulse to combine. Add 2 1/2 cups lukewarm water, yeast, sugar, and olive oil. Process until a dough has formed.
  • Dust a large bowl with flour and transfer dough in bowl. Sprinkle flour on top of dough and cover with a damp towel. Let stand in a warm place until doubled in size, about 1 hour.
  • Punch down dough and turn out onto a lightly floured work surface. Use immediately, or wrap dough in plastic wrap and keep refrigerated until ready to use.

1 kg white bread flour or Tipo '00' flour, or 800g strong white bread flour or Tipo '00' flour, plus 200g finely ground semolina flour
1 teaspoon fine sea salt
2 x 7 g dried yeast sachets
1 tablespoon golden caster sugar
4 tablespoons extra virgin olive oil

Steps:

  • Sieve the flour/s and salt on to a clean work surface and make a well in the middle.
  • In a jug, mix the yeast, sugar and oil into 650ml of lukewarm water and leave for a few minutes, then pour into the well.
  • Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.
  • Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.
  • Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands - this is called knocking back the dough. You can either use it immediately, or keep it, wrapped in clingfilm, in the fridge (or freezer) until required.
  • If using straight away, divide the dough up into as many little balls as you want to make pizzas - this amount of dough is enough to make about six to eight medium pizzas.
  • Timing-wise, it's a good idea to roll the pizzas out about 15 to 20 minutes before you want to cook them. Don't roll them out and leave them hanging around for a few hours, though - if you are working in advance like this it's better to leave your dough, covered with clingfilm, in the fridge. However, if you want to get them rolled out so there's one less thing to do when your guests are round, simply roll the dough out into rough circles, about 0.5cm thick, and place them on slightly larger pieces of olive-oil-rubbed and flour-dusted tin foil. You can then stack the pizzas, cover them with clingfilm, and pop them into the fridge.

2 pounds, 3 ounces (1 kilogram) strong bread flour
1 ounce (30 grams) sugar
1 ounce (30 grams) salt
1 ounce dried yeast
1 pint (565 milliliters) tepid water
2 tablespoons olive oil
Toppings, recipes follow
8 plum tomatoes
Sprinkle dried oregano
Drizzle olive oil
Sliced mozzarella
Rocket (Arugula)
Parmesan
Olives
Sun-dried tomatoes
Artichoke hearts
Prosciutto
Panchetta
Any interesting cheeses - use your imagination

Steps:

  • Put the flour onto a work surface or use a bowl, if you are short of space. Using your fingers, make a big well in the middle of the flour. Add the sugar, salt and yeast then pour in the tepid water and olive oil. Using a fork, make circular movements from the center moving outwards, slowly bringing in more of the flour until all the yeast mixture is soaked up. This should be starting to look like dough now so you can start to work and knead it until it is smooth. This should take around 4 minutes. Roll out to a sausage shape and divide into 8 or 10 balls, depending on how large you want the pizzas to be.
  • Flour the surface and roll each pizza out to about the thickness of 3 beer coasters (1/3 of an inch). They don't have to be perfectly round, they should look home-made. Place each pizza on a lightly oiled and floured piece of tin foil. Flour the top of the pizza, placing another on top of it. Flour that and repeat this until all the pizzas are stacked together. These can be frozen for a couple of months, placed in the fridge for 10 hours, or cooked straight away. Lightly top with your chosen topping (the simpler the better) and bake directly on the oven bars for 10 minutes at your oven's highest temperature.
  • For enough to cover eight bases, chop and de-seed plum tomatoes, dry with kitchen paper, sprinkle with a little dried oregano and a drizzle of olive oil.;

1 -ounce (30 grams) honey or sugar
1 pint (625 ml) tepid water
1 pound 2 ounces (500 grams) strong bread flour, plus extra, for dusting
1 pound 2 ounces (500 grams) semolina
1 -ounce (30 grams) salt
1 clove garlic, finely chopped
2 tablespoons olive oil
1 (14-ounce) (400 gram) tin Italian plum tomatoes
1 handful fresh basil, roughly chopped
Sea salt and freshly ground black pepper
4 field mushrooms
1 black pudding
5 slices back bacon
2 sausages
2 tomatoes, quartered
Extra-virgin olive oil
4 ounces (115 gram) buffalo mozzarella
3 or 4 organic eggs

Steps:

  • To make the bread dough, first dissolve the yeast and sugar in 1/2 of the tepid water. Put the flour and semolina into a large bowl or on a clean surface, make a well in the centre, and pour in the yeast mixture. Mix together until all the yeasty liquid is soaked up, then pour in the rest of the water and gradually incorporate all the flour to make a moist dough. Knead the dough by rolling, pushing and folding it over for 5 minutes. Flour both hands, and lightly flour the top of the dough. Make it into a roundish shape and place it on a baking tray. Score it deeply with a knife, allowing it to relax and proof with ease until it's doubled in size. Ideally you want a warm, moist, draught-free place to get the wickedest proof.
  • To make the tomato sauce, gently fry the garlic with the olive oil, then add the tomatoes. Bring to the boil, then simmer for 10 minutes, add the basil and season well to taste.
  • When the dough has doubled in size, knock the air back by bashing it around for 1 minute.
  • Now it is time to roll out your pizza into an irregular thin shape, and put it on a large baking sheet. Preheat the oven to 400 degrees F/200 Gas Mark 6.
  • Tear up the mushrooms, black pudding and bacon and put them in a bowl. Break up the sausages into little rounds like meatballs, and add to the bowl with the tomato. Drizzle with olive oil and season with salt and pepper.
  • Spread a thin layer of tomato sauce over the pizza and scatter over your topping ingredients evenly. Tear the mozzarella over the top, then bake in the preheated oven for about 8 minutes. When the bacon looks crispy, crack on the eggs and put back in the oven until they're cooked.

800 g 'oo' strong flour
200 g semolina flour
15 ml salt
60 ml extra virgin olive oil
15 ml caster sugar
2 (7 g) sachets dried yeast
650 ml lukewarm water

Steps:

  • Sieve flour, semolina flour, and salt onto a clean surface.
  • Make a well in the middle.
  • Mix oil, sugar, yeast and lukewarm water; leave for a few minutes to activate the yeast.
  • Pour oil/water mixture into the well of the flour mixture.
  • Slowly incorporate with a fork untill most of it is mixed.
  • Get your floured hands in there and knead until a smooth springy dough is achieved.
  • Place dough in a floured bowl; sprinkle with flour.
  • Cover with a wet tea towel and leave in a warm spot for an hour or until doubled in size.
  • Punch down and divide into 6 to 8 pieces. You can freeze at this point if you want to.
  • Roll out about 3mm thick.
  • Place on an olive oiled, and floured, sheet of tin foil.
  • Stack them up for 15 minutes to rest before adding toppings and cooking.
  • Preheat oven to its hottest setting.
  • Place baking trays inside.
  • When the dough is rested, remove hot tray from oven.
  • Place dough, without the foil, in the oven.
  • Bake for 8 to 10 minutes.
