This light, refreshing salad is a great start to any Japanese meal. I enjoy this fresh salad as a starter to a sushi dinner or alone for a light lunch. This is also a basic recipe to prepare.

1/2 cup rice vinegar (not seasoned)
3 tablespoons granulated sugar
1/4 teaspoon salt
1 tablespoon sake
1 dash soy sauce
1/4 teaspoon grated gingerroot
1/4 lb shrimp (cooked)
1/4 lb crabmeat (or artificial crab)
1/2 cucumber, thinly sliced
250 g of thin rice noodles (harasume)
2 green onions, sliced on a sharp diagonal

Steps:

  • Mix all the marinade ingredients together and set aside.
  • Bring water to a boil and put in noodles, Stir noodles for 3-4 minutes until cooked . Drain the noodles in a colander and cool under running cold water, drain as much water off you can.
  • Mix cooked cooled noodles, green onions, cucumber, shrimp and crab meat in a bowl. Pour marinade over noodles. Mix well, cover and refrigerate allowing the flavors to combine (just an hour or two). Serve cold.

A super easy cucumber salad recipe to make! This side dish is light and crispy, with just the right amount of seasoning to keep you coming back for more.

2-3 crunchy Japanese or Persian cucumbers
1/3 tsp salt (to draw out moisture)
3 tbsp rice vinegar
1 tbsp sugar
1/4 tsp salt
1/4 tsp soy sauce
1 tsp sesame seeds

Steps:

  • Slice all the cucumbers very thin and transfer to a medium sized bowl.
  • Sprinkle with salt and toss with your hands to ensure even salt coverage to draw out moisture, Wait 5-10 minutes.
  • Then rinse the cucumbers thoroughly to remove the salt, drain, then squeeze all the cucumbers to remove excess moisture. The goal is to remove as much water as you can. Don't be afraid to squeeze hard, the cucumbers can take it!
  • Mix the rice vinegar, sugar, salt, soy sauce until dissolved, then add to cucumbers.
  • Sprinkle with sesame seeds and serve.

1 large English cucumber or 2 Japanese cucumbers
1/2 tablespoon salt
1/2 tablespoon sugar (, or more)
2 teaspoons soy sauce
2 tablespoons rice vinegar
1 teaspoon white sesame seeds

Steps:

  • Thinly slice the cucumber. You can do it either by hand or using a food processor. Rub the slices with salt and drain for 5 minutes in a colander. Rinse under cold running water and squeeze them tightly to remove water. Set aside.
  • In a small bowl, mix the sugar, soy sauce, and rice vinegar until the sugar dissolves.
  • Add the dressing to the cucumber slices, sprinkle with sesame seeds and mix well. Enjoy!

Sunomono Salad is the perfect summer salad or side dish featuring cucumbers, wakame and mung bean noodles tossed in a vinegar based sweet and sour dressing. This Japanese Cucumber Salad is incredibly easy and quick to make, no cooking involved!

2 tsp dried wakame (3g)
1/4 of a bundle of mung bean noodles (6g)
2 Persian cucumbers or 1 Japanese cucumber (120g)
1.5 tbsp rice vinegar (22g)
1 tsp cane sugar (5g)
3/4 tsp soy sauce
1 tsp sesame seeds (5g)

Steps:

  • Pour boiled water over wakame and mung bean noodles, fully submerged. Let it sit for 5-8 minutes, until wakame has expanded and noodles are softened. Pat them dry and then cut the noodles 3 times with kitchen scissors so there are not long pieces.
  • Slice the tips off the cucumbers and thinly slice them into rounds. Using a mandolin is ideal here (faster and more consistent slices). Add 1 tsp of salt and rub it into the cucumbers using your hands. Let it sit for 3-5 minutes and then rinse, drain and blot them to remove excess water.
  • Into a bowl, add the rice vinegar, cane sugar, soy sauce and stir well.
  • Add the cucumbers, wakame and noodles into the sauce mix and toss well. Garnish with sesame seeds and enjoy!

2 large cucumbers
1 teaspoon salt
4 teaspoons white sugar
1 ½ teaspoons minced fresh ginger root
5 tablespoons rice vinegar
1 tablespoon soy sauce
2 teaspoons sesame seeds, or to taste

Steps:

  • Peel 4 strips off each cucumber using a vegetable peeler, leaving some of the peel in place for a striped look. Slice off the ends and cut cucumbers in half lengthwise.
  • Slice cucumbers into very thin slices using a mandoline, or carefully with a knife. Place in a bowl and sprinkle with salt. Stir until well combined and set aside for 5 minutes.
  • Meanwhile, whisk sugar, ginger, vinegar, and soy sauce in a bowl until well combined.
  • Squeeze excess liquid out of cucumbers using your hands or a clean tea towel. Toss cucumbers with the dressing. Stir well and chill in the refrigerator for 1 hour before serving.
  • Just before serving, sprinkle each portion with sesame seeds. Enjoy!

Sunomono (酢の物) literally means "vinegared thing" and refers to a Japanese cucumber salad, which is dressed with a sweet vinegar dressing. It's very easy to make from just a handful of common ingredients and makes for a nice contrast to other dishes in a meal with its crunchy texture and sweet and sour taste.

260 grams Japanese Cucumbers ((~2 cucumbers))
1/2 teaspoon salt
45 grams wakame
2 tablespoons rice vinegar
1 tablespoon evaporated cane sugar
1/4 teaspoon salt
4 pieces crab meat ((or shrimp or octopus for garnish))
1 teaspoon toasted sesame seeds ((for garnish))

Steps:

  • Slice the cucumbers as thinly as possible and then add the 1/4 teaspoon of salt. Toss to coat evenly and then let the cucumbers rest for 5-10 minutes.
  • Rehydrate the wakame according to the package directions and chop into bite-size pieces.
  • Once the cucumbers start sweating liquid, you can massage them with you hand to speed up the process. When the cucumbers become translucent they are ready to be squeezed.
  • Grab the cucumbers with your hands and squeeze as much water from them as you can.
  • In a non-reactive bowl, whisk together the rice vinegar, sugar and salt until the solids are dissolved.
  • Add the squeezed cucumber, and wakame to the vinegar mixture and toss everything together to coat.
  • Serve the sunomono in small kobachi bowls, and garnish with cooked shrimp, crab, or octopus and sprinkle with toasted sesame seeds.

8 bunches bean thread noodles
6 tablespoons rice vinegar
4 teaspoons sugar
2 teaspoons soy sauce
1 teaspoon salt
2 tablespoons sesame seeds
1/2 cucumber, sliced thinly
2 -3 spring onions
2 firm tomatoes, seeded and cut in wedges
12 -14 cooked shelled shrimp
1 carrot, coarsely shredded

Steps:

  • Put the noodles in boiling water and cook until tender.
  • Drain for 20-30 minutes.
  • Put in big bowl and add rice vinegar, sugar, soy sauce, salt and sesame seeds.
  • Top each portion of salad with a few slices of thinly cut cucumber and spring onions.
  • Add a few chunky pieces of seeded tomato, carrot and a few cooked shrimp on top.
  • Refrigerate.
  • Better the day after; makes more juice.

Steps:

  • Wash and slice the cucumbers as thin as possible.
  • Place the sliced cucumbers into a small bowl and sprinkle the salt. Toss the cucumbers and salt in order to coat the cucumbers evenly with salt.
  • Leave the cucumber with salt for 10 minutes to draw the moisture out
  • Using your hands, squeeze the water out of the cucumbers.

½ cup lemon juice
½ cup white sugar
1 tablespoon white wine vinegar

Steps:

  • Partially peel cucumbers lengthwise, leaving thin green stripes around the cucumber. Halve cucumbers lengthwise. Scoop seeds from cucumber halves with a spoon. Discard seeds. Slice cucumbers thinly and put in a bowl. Add salt to cucumber and mix with hand until cucumber is limp; set aside for 45 minutes.
  • Transfer cucumbers to a strainer and squeeze as much liquid out as possible.
