10 large eggs ( eggs should measure about 1 liquid pint)
2 cups warm milk
2 cups all-purpose flour
1/2 c. chopped green onions (green part only)
Pinch salt

Steps:

  • Preheat oven to 375. Heavily grease about 15 med-size muffin cups w/ solid shortening. Place eggs and milk in a very large bowl and whisk until smooth, or beat with an elec beater at low speed. Gradually whisk or beat in flour until batter is smooth. Stir in green onions and salt. Fill each muffin cup half-full w/ batter. Bake in preheated oven until lightly browned, about 15 to 20 min. Popovers rise during baking but will fall after you take them from the oven. Serve immediately.

4 Tbsp butter
4-5 small onions, thinly sliced
1 2-lb package kielbasa
2 12-oz bottles of beer

Steps:

  • In a large heavy skillet, melt butter and saute the onions over medium heat until translucent. Add kielbasa and brown 3-4 minutes on each side. Pour the beer over the sausage and onions. Bring to a boil, reduce heat, and simmer uncovered for 25 minutes. Remove the kielbasa and onions from the pan and put them on a serving dish in a warm oven. Reduce the beer over high heat to 2 cups. Pour over kielbasa and serve.

This is from "The Marshall Field's Cookbook," but the recipe originated at the beautiful Oak Grill restaurant, located since 1947 on the 12th floor of the downtown Minneapolis Dayton's store (it's still there - now it's Macy's Oak Grill). I go there for the popovers - they are the best!

nonstick cooking spray, for pans
5 eggs
1 2/3 cups whole milk
5 tablespoons unsalted butter, melted and cooled
1 2/3 cups flour
1/2 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Lightly coat popover pans or deep muffin tins with nonstick cooking spray and heat pans in oven for at least 15 minutes.
  • In a large bowl, using an electric mixer on medium speed, beat eggs until frothy.
  • Add milk and melted butter and mix well.
  • Add flour and salt and mix to just combine.
  • Carefully divide batter among preheated pans, filling each cup just under half full.
  • Bake 30 to 40 minutes, until puffy and well-browned (finished popovers should pull away from pan easily and feel light to touch).
  • Remove from pan and serve warm.

1/4 teaspoon salt
1/8 teaspoon cayenne
1 tablespoon dry onion flakes, crushed

Steps:

  • Preheat oven to 450. Grease 8-10 muffin tins. Heat muffin tins in oven.
  • In a blender or food processor, comine eggs, milk, flour, salt, cayenne and onion flakes. Blend until smooth.
  • Pour batter into hot tins. Bake 10 minutes.
  • Reduce oven temperature to 350. Bake 35 minutes longer, or until the tops of popovers are nicely browned. Serve hot.

Number Of Ingredients 8

2 cups all-purpose flour
1 teaspoon onion salt
1/8 teaspoon celery salt
4 large eggs, room temperature
2 cups 2% milk
1/4 cup grated onion
1/4 cup grated celery
3 tablespoons butter, melted

Steps:

  • In a large bowl, combine the flour, onion salt and celery salt. Combine the eggs, milk, onion, celery and butter; whisk into the dry ingredients just until blended. Grease and flour the bottom and sides of 9 popover cups; fill two-thirds full with batter., Bake at 450° for 15 minutes. Reduce heat to 350° (do not open oven door). Bake 25 minutes longer or until deep golden brown (do not underbake). Immediately cut a slit in the top of each popover to allow steam to escape.

3 large green onions, finely chopped
2 2/3 cups all-purpose flour
1 1/2 teaspoons salt

Steps:

  • Preheat oven to 375°F.
  • Brush twelve 1/3-cup (standard) nonstick muffin cups or six 1-cup (large) nonstick muffin cups with 3 tablespoons melted butter; dust with 2/3 cup cheese.
  • Beat eggs to blend in large bowl.
  • Beat in milk and green onions, then remaining 1/2 cup melted butter.
  • Blend flour, salt, and remaining 1/2 cup cheese in medium bowl; gradually whisk into egg mixture (some small lumps may remain).
  • Divide batter among muffin cups.
  • Bake popovers without opening oven 'til puffed and crusty brown, about 38 minutes for small, 48 minutes for large; turn out of pan and serve hot.

1 lb sliced bacon, chopped
4 white onions, chopped

1 1/4 cups flour
1 (32 ounce) container chicken broth
2 cups milk
3 large eggs
2 tablespoons butter, melted
2 ounces cheddar cheese, cut into 12 1/2-inch cubes
1/4 cup chives, finely chopped

Steps:

  • Preheat oven to 425 degres.
  • Grease a standard 12-cup muffin pan.
  • In large Dutch oven, cook the bacon over medium heat until crisp, about 12 minutes.
  • Using a slotted spoon, transfer to paper towels to drain.
  • Add the onions to the pot, season with salt and cook for 8 minutes.
  • Set aside 1/4 cup of the cooked onions.
  • Sprinkle the remaining onions with 1/4 cup flour and cook, stirring, for 1 minute.
  • Stir in the chicken broth and bring to a boil, lower the heat and simmer for 8 minutes.
  • Meanwhile, in blender, mix the reserved onions, 1 cup milk, the remaining 1 cup flour, the eggs, butter and 1/4 t salt until smooth.
  • Fill each muffin cup halfway with batter and place a cube of cheese in center of each.
  • Bake for 25 minutes, then lower the heat to 350 degrees; bake for 15 minutes more.
  • Stir in the remaining 1 cup milk into the soup and heat through.
  • Garnish with bacon and chives.
  • Serve with the popovers.
