JERSEY DISCO FRIES
A Jersey diner staple -- great for when you're feeling extra sinful or late at night when you need to sober up.

Steps:
- Pre-heat oven to 450 degrees F.
- Arrange steak fries in a single layer in a greased 15-in. x 10-in. baking sheet.
- Salt and pepper as desired.
- Bake for 15-20 minutes or until lightly browned. (Check the frozen fries' packaging for alternate baking directions).
- About 5 minutes before the fries are finished baking, pour the gravy in a small pot and warm on the stove over medium heat, stirring frequently.
- Empty the cheese sauce in a microwave-safe bowl and cover with a sheet of paper towel (to protect against splattering). Heat the sauce on high for 30 seconds, then stop and stir the sauce.
- Repeat microwaving the cheese sauce on high for 30-second intervals for about 2 to 3 total minutes. (You want to heat it enough that it becomes easily pourable).
- Take fries out of the oven and place on a large platter.
- Pour gravy over the fries.
- Then pour on the cheese sauce. Add as much cheese and gravy as you want -- some like their disco fries drier; others like them drowning.
JERSEY-STYLE DISCO FRIES
Late night or all day, these fries are a win.

- Preheat broiler
- In a high-sided skillet or medium saucepan, melt 2 tablespoons butter over medium heat
- Add shallot and cook until translucent, about 4-5 minutes
- Add garlic and cook for another 1-2 minutes
- Season with salt and pepper then add remaining butter and melt
- Sprinkle the flour in the pan and whisk until fragrant and light brown, about 2-3 minutes
- Whisk in stock and Worcestershire sauce, and continue whisking until there are no lumps
- Let the gravy come to a bubble, whisking often, until it is thick enough to coat the back of a spoon, about 5-6 minutes
- Arrange steak fries on a small baking sheet or oven-proof tray
- Pour gravy over the top of the fries and top with shredded mozzarella
- Place fries under the broiler until mozzarella has melted, about 1 minute

- Preheat oven to 450°F.
- On a baking sheet, pour contents of french fries and bake to manufacturer recommendations. For the best, most disco of disco fries, make sure the fries are nice and crispy.
- Remove the sheet of crispy french fries from the oven and pour the gravy evenly over the fries.
- Break the Cooper® cheese slices into 1/4-inch pieces and portion evenly over the gravy-coated fries.
- Place the sheet of disco fries back into oven and bake for another 5 minutes. When cheese is nice and melty, remove from the oven and sprinkle chopped parsley over the fries. Sprinkle with Montreal steak seasoning to taste.
- Then invite over your closest friends for a dance party, throw on some bell bottoms, serve up your disco fries and boogie-oogie-oogie 'til you just can't boogie no more!
JERSEY DINER DISCO FRIES

- Place the potato wedges in a large bowl and cover with ice water. Let stand for at least 30 minutes and up to an hour. Drain the potatoes well. In batches, dry the potatoes on kitchen towels and let them sit for 30 minutes more to absorb any remaining moisture.
- Fill a fryer or a large, heavy saucepan with 5 inches of oil. Place over high heat and bring the oil up to 315 degrees F. Set a wire rack on a sheet pan and place near the fryer or stove.
- In batches to avoid crowding, add the potato wedges and fry, shaking them in the basket to separate them, or if in a large pot, stirring occasionally with a wooden spoon. Cook until the potato wedges are pale gold and slightly floppy, about 4 minutes. They should not be browned at this point. Remove from the oil with a wire skimmer and transfer to the wire rack to drain. Bring the oil back up to 315 degrees F and repeat with the remaining potato wedges. Remove the saucepan from the heat and set aside?do not throw out the oil. Let the potato wedges stand until completely cooled, at least 2 hours and up to 4 hours.
- Meanwhile, prepare the gravy. In a high-sided skillet or medium saucepan, melt 2 tablespoons butter over medium heat. Add the shallots and cook until translucent, 4 to 5 minutes. Add the garlic and cook for 1 to 2 more minutes. Season with salt and pepper, then add the remaining 2 tablespoons butter and melt. Sprinkle the flour in the pan and cook, whisking until light brown, about 2 minutes. Whisk in the chicken stock and Worcestershire sauce. Continue whisking until there are no lumps. Let the gravy come to a bubble and cook until thick enough to coat the back of a spoon, about 5 minutes. Lower the heat and hold there, whisking regularly to keep it from sticking. Now it's time to finish the French fries.
- Reheat the fry oil over high heat to 350 degrees F. In batches to avoid overcrowding, add the potato wedges to the hot oil and deep-fry until crisp and golden brown, 2 to 3 minutes. Transfer to a sheet pan and keep warm in a 200 degree F oven, if needed, while you fry the remaining potato wedges. Season with salt.
- Preheat the broiler.
- Arrange the potato wedges on a baking sheet or oven-proof platter. Pour the gravy over the top of the potato wedges and top with the shredded mozzarella. Place the baking sheet under the broiler until the cheese has melted, about 1 minute.
DISCO ZUCCHINI FRIES
Who remembers the bliss of ordering late-night disco fries at the diner? At home, this baked zucchini twist is a bit more virtuous - but still totally hits the spot.

- Adjust 2 oven racks to the top and bottom thirds of the oven and preheat to 425 degrees F. Put the wire racks in the baking sheets and coat each generously with cooking spray.
- Combine the flour and 1/2 teaspoon salt in a large re-sealable plastic bag. Combine the eggs and 1/2 teaspoon salt in another large plastic bag; combine the breadcrumbs, Parmesan and 1/2 teaspoon salt in a third large plastic bag.
- Add about a half of the zucchini sticks to the bag with the flour and use a combination of your hands and shaking the bag to coat the zucchini. Remove the zucchini and shake off any excess flour. Transfer to the egg wash and repeat until coated. (It's less messy if you use only one hand for the dry ingredients and the other for the wet.) Let any excess egg drip off before transferring to the breadcrumb mixture; repeat until fully coated (you'll still see some green and white of the zucchini peeking through the breading). Transfer to the prepared baking sheets and coat the breaded zucchini generously with cooking spray (there's no need to turn them). Repeat with the remaining zucchini.
- Bake, rotating the baking sheets from top to bottom about halfway through, until golden brown and tender, 25 to 30 minutes.
- Lower the oven to 350 degrees F and let the baking sheet cool for a few minutes. Remove the rack from one of the baking sheets and line the baking sheet with foil. Slide the fries onto the baking sheet and arrange them in four equal piles. Scatter both cheeses equally over the piles and bake until melted, about 10 minutes. Meanwhile, warm the gravy. When the cheese is melted, use a spatula to lift each batch of cheese fries and place it on its own plate. Drizzle the gravy over the cheese fries and top with the bacon and scallions.
