CREAMY PEPPERCORN DRESSING
The home economists in our Test Kitchen tossed together some simple ingredients to create this creamy salad dressing. It conveniently keeps in the refrigerator for 2 weeks.

PARMESAN-BUTTERMILK DRESSING
This is my take on a sour cream house dressing from a restaurant I worked at in Arizona when I was younger. We would dip our onion rings and French fries in it, put it on our burgers, and of course, on our salad. I hope you enjoy.

- Whisk buttermilk, sour cream, mayonnaise, Parmesan cheese, vinegar, garlic salt, parsley, and pepper together in a bowl until combined; some chunks are expected.
- Transfer to a large mason jar and chill until flavors are blended, at least 3 hours.

JIM'S PARMESAN DRESSING

Steps:
- Place egg yolk, mustard, garlic, lemon juice, salt and pepper into bowl of food processor. Process until smooth. With the processor running, slowly pour in EVOO and process until thick. Add parmesan cheese and pulse three times.
THE "SLIM" JIM SANDWICH
This recipe is of a sandwich I fondly remember from Big Boy, however I have lightened it up a bit. (4.5 WW points) Enjoy.

Steps:
- Place ham in non-stick skillet on low just till sizzles a little, turn over.
- Once heated through turn off stove and put cheese on top so it can melt a little.
- Spread each piece of bread with 1/2 tablespoons of dressing.
- Build sandwich with ham, cheese, tomato and lettuce. Cut in half. Enjoy.

This is a family recipe to stuff your turkey with. My dad used to ask me to make a Thanksgiving dinner in June so he could have the dressing!! If you like oysters this will be your new tradition! Mix everything in a large bowl, and stuff that bird!

- Spread the bread cubes out onto baking sheets or a work surface, and allow to dry for 24 to 48 hours (longer for a drier dressing).
- Melt the butter in a large skillet over medium heat, and cook and stir the onion, garlic, and celery until the onions become translucent, about 8 minutes. Pour the vegetables and butter into a large bowl. Lightly mix in the bread cubes, and stir in the oysters and their liquid until thoroughly combined.
