1 cup refrigerated Holiday Cookie Dough
2 teaspoons confectioners' sugar
1-1/4 cups vanilla frosting, divided
Red paste food coloring
30 miniature semisweet chocolate chips
15 red-hot candies

Steps:

  • On a lightly floured surface, roll out cookie dough to 1/8-in. thickness. Cut out 15 ovals, using a 3-in. egg-shaped cookie cutter dipped in flour. Place 2 in. apart on ungreased baking sheets. , Bake at 350° for 6-8 minutes or until edges are lightly browned. Cool for 2 minutes before removing to wire racks to cool completely., Sprinkle cookies with confectioners' sugar. In a small bowl, tint 3/4 cup frosting with food coloring; frost top third of each cookie. , Using a star tip and remaining vanilla frosting, pipe a pom-pom, fur hat brim, eyebrows, eyes, mustache and mouth on each cookie. Press two chocolate chips and a red-hot candy into frosting for pupils and mouth.

I tuck one of these fanciful Santas into every gift cookie tray I make. They're a guaranteed hit with kids young and old. And I like that they're not too difficult to assemble.

1 cup butter, softened
½ cup sugar
1 tablespoon milk
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 dash Red paste food coloring
2 tablespoons Miniature chocolate chips
½ cup shortening
½ teaspoon vanilla extract
2 ⅓ cups confectioners' sugar, divided
2 tablespoons milk, divided

Steps:

  • In a mixing bowl, cream butter and sugar. Add milk and vanilla; mix well. Add flour and mix well. Remove 1 cup dough; add red food coloring. Shape white dough into 12 balls, 3/4 in. each, and 48 balls, 1/4 in. each. Shape red dough into 12 balls, 1 in. each, and 60 balls, 1/2 in. each. Place the 1-in. red balls on two ungreased baking sheets for the body of 12 Santas; flatten to 1/2-in. thickness. Attach 3/4-in. white balls for heads; flatten to 1/2-in. thickness. Attach four 1/2-in. red balls to each Santa for arms and legs. Attach 1/4-in. white balls to ends of arms and legs for hands and feet. Shape remaining 1/2-in. red balls into hats (see the photo). Add chocolate chip eyes and buttons.
  • Bake at 325 degrees for 12-15 minutes or until set. Cool for 10 minutes; carefully remove from pans to wire racks (cookies will be fragile).
  • For frosting, combine shortening and vanilla in a small mixing bowl; mix well. Gradually add 1-1/3 cups confectioners' sugar; add 1 tablespoon milk. Gradually add remaining sugar and milk. Fill a pastry bag with frosting. With a round decorator's tip, add a band of icing on hat, cuffs at hands and feet, and down the front and at bottom of jacket. Use a small star tip to pipe beard and pom-pom on hat.

12 ounces white baking chocolate, chopped
1 package (1 pound) Nutter Butter sandwich cookies
Red colored sugar
32 vanilla or white chips
64 miniature semisweet chocolate chips
32 Red Hots candies

Steps:

  • In a microwave, melt white chocolate at 70% power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth., Dip one end of each cookie into melted chocolate, allowing excess to drip off. Place on wire racks. For Santa's hat, sprinkle red sugar on top part of chocolate. Press one vanilla chip off-center on hat for pompom; let stand until set., Dip other end of each cookie into melted chocolate for beard, leaving center of cookie uncovered. Place on wire racks. With a dab of melted chocolate, attach semisweet chips for eyes and a Red Hot for nose. Place on waxed paper until set.
