JOY'S AMAZING BANANA BREAD
Another recipe from my mother in law...a delicious banana loaf with a yummy crumble topping (the best part!). This banana bread can be tweaked to be either more like a dessert or more of a healthy breakfast loaf. Just depends on which yummy add-ins you want to use. Also, I use part unbleached bread flour, and part whole wheat flour to make it a bit healthier but still smooth.

Steps:
- Preheat oven to 350.
- In a small bowl, beat together (with mixer if you have one): sugar, softened butter, bananas.
- In a large bowl, combine: flour, baking powder, salt, baking soda. Mix these dry ingredients together, then add banana mixture from step 2.
- Add eggs, milk, any of the optional mix-ins. Mix together well to a smooth batter.
- Pour batter into a greased loaf pan.
- For the crumble topping - combine in small bowl: chopped nuts, oats, brown sugar, baking soda, salt, cinnamon, flax seeds, melted butter. Mix until crumbly.
- Spread crumble topping mixture on top of the batter in the loaf pan.
- Bake approximately 45 minutes at 350. Note: in the oven, the bread will lift and the topping will overflow a bit, so I recommend placing a cookie sheet underneath to catch the droppings.

JOY'S EASY BANANA BREAD
Steps:
- Preheat the oven to 325°F
- In a mixing bowl, combine sugar, egg, butter, and bananas. Mix ingredients together.
- Add your baking soda, salt, cinnamon, and flour. Stir until mixture is combined. Add any extras you desire such as chocolate chips or nuts.
- Take your bread pan and spray it with cooking spray so that the bottom and edges are coated. Pour your batter into the pan and spread it so that the batter is evenly distributed.
- Bake at 325°F for 1 hour, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool for 10-15 minutes inside the bread pan before you try to remove it. Take a knife or spatula and separate it from the edge and the bottom, before you try to remove the bread. Set it on a wire rack to cool or serve with a bit of butter while it is still warm, and enjoy!
- If you want, this bread can be made ahead and stored in the freezer for up to four months. When freezing, be sure to wrap it securely in plastic wrap, and then place it inside another plastic bag, to prevent it from going bad.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.

JOYCE'S UNBEATABLE BANANA BREAD
This recipe is so close to my heart. When I was young, I refused to eat my other Grandmother's banana bread because it wasn't like Grandma Joyce's. When I went off to college, my Grandma mailed me a loaf every couple weeks. (I even fell down my dorm stairs one time rushing down to pick up my package containing banana bread.) It has been six years or so since she passed. Now, when I miss her terribly, I bake loaf after loaf of her bread and give it away to share the joy I felt every time I received her special packages.

- Grease and flour one regular loaf pan or two small loaf pans.
- Preheat oven to 350 degrees Fahrenheit.
- Combine flour, sugar, salt, baking soda, and shortening. Cut shortening in as for pie crust (I use a pastry blender.).
- In a separate bowl, beat eggs and sliced bananas until mixed well.
- Add banana mixture to shortening mixture and mix well.
- Place batter in prepared pan(s).
- Bake approximately 30 minutes.
- Tip: I usually use the toothpick test, but the toothpick should not come out completely clean. This is a very moist recipe, so look for the toothpick or knife to be mostly clean. When the bread is done, it will be a dark brown and should have a slight crack down the middle.

- Preheat oven to 350°F. Grease a 9x5" loaf pan with butter and dust with flour, tapping out any excess.
- Combine banana, sour cream, and vanilla in a medium bowl. Sift together flour, baking powder, baking soda, and salt in a large bowl.
- Using an electric mixer, beat butter and brown sugar on medium speed in another large bowl until light and fluffy, about 3 1/2 minutes. Add eggs one at a time and beat on medium speed until fully combined, about 1 minute each. Add banana mixture and beat until just combined, about 30 seconds. Add dry ingredients in 2 batches, beating on low after each addition and scraping down sides of bowl if necessary, until fully incorporated, about 20 seconds per batch. Fold in walnuts. Transfer batter to prepared pan and smooth top with a spatula.
- Bake, rotating halfway through, until batter is set, top is dark golden brown and starting to crack, sides are starting to pull away from pan, and a tester inserted into center of bread comes out clean, 60-65 minutes. Cool in pan on a wire rack at least 15 minutes. Run a butter knife around perimeter of pan to loosen loaf, then tap pan gently on its side until loaf releases. Transfer to a cutting board or plate and let cool completely before slicing.
