GRILLED PESTO-MARINATED CHICKEN



Grilled Pesto-Marinated Chicken image

This moist and flavorful chicken is as easy as it is satisfying! Perfect with a green salad, rice, or pasta.

1 (6 ounce) jar prepared pesto (such as Barilla® Rustic Basil Pesto)
¼ cup grated Parmesan cheese
3 ounces lemon juice
1 teaspoon ground black pepper
½ teaspoon salt
4 chicken breast halves

Steps:

  • Mix together pesto, Parmesan cheese, lemon juice, pepper, and salt in a 1-gallon resealable freezer bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 8 hours to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook chicken on the preheated grill over indirect heat until no longer pink in the center and the juices run clear, about 6 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I had a grilled pesto-marinated chicken breast at the Hayes Mansion in San Jose and wanted to make it at home, but couldn't find anything like what I had--it wasn't just chicken with pesto on it, but had been marinated. I searched for something similar, but could find nothing, so I finally came up with this. I've used my own pesto recipe (Recipe #242383) and store bought pesto, and both work well. One cup of marinade is enough for four boneless, skinless chicken breasts

1/2 cup olive oil
1/4 cup pesto sauce
1/4 cup lemon juice
2 garlic cloves, smashed
fresh ground black pepper

Steps:

  • Mix all ingredients together.
  • Marinate chicken for at least an hour, more is better! For shrimp, don't marinate too long--the lemon will "cook" the shrimp. It doesn't ruin it, but it changes the texture a bit.
  • Brush marinade on meat while it's cooking. (Discard garlic chunks).
  • Works well with chicken, shrimp, and firm white fish. I think it would be good with pork tenderloin, but I haven't made that yet!

  • Cut the beef into 6 equal steaks. Whizz the tamari/soy, chilli, 200ml of the vinegar, 3 of the garlic cloves and 60ml cold water in a blender.
  • Lay the steaks in a ceramic or glass dish just large enough to hold them in a single layer. Pour over the marinade, then cover with cling film and put in the fridge to marinate for at least 12 hours (see make ahead and tips). Halfway through, turn the steaks.
  • Take the beef out of the fridge an hour before you want to cook it and drain well (discard the marinade). Pat dry with kitchen paper, then leave to come to room temperature.
  • Meanwhile, to make the pesto, put the 6 garlic cloves, herbs and pine nuts in a food processor and whizz to a coarse paste. Add the grated parmesan and pulse briefly to combine, then slowly drizzle in the 150ml oil with the motor running. Scoop into a bowl, then cover and set aside until ready to use (see make ahead and food team’s tip).
