This is one of my all-time favorites.

Yield Yields one 9-inch pie.

Number Of Ingredients 9

1 recipe Classic Pie Crust
3 Tbs. heavy cream
1/4 cup sugar cubes (about 12 small), coarsely crushed
3 lb. Golden Delicious or Gala apples, peeled, cored, cut into 3/4-inch slices, and then halved crosswise
2/3 cup apple cider
1/2 to 2/3 cup packed light brown sugar to taste
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
3 Tbs. cornstarch

Steps:

  • In a large nonreactive pot, mix the apples, all but 2 Tbs. of the cider, the brown sugar, cinnamon, and nutmeg. Bring to a boil over high heat, stirring often, until the sugar has dissolved and the apples are evenly coated. Mix the cornstarch and remaining 2 Tbs. cider into a paste; add this to the apples. Stirring constantly, boil until the liquid is thickened and clear, about 1 minute. (you're not cooking the apples, just thickening the juices). Taste and adjust seasonings if needed. Remove from the heat and let cool.
  • Position racks in the low and middle spots of the oven. Set a foil-lined baking sheet on the lower rack to catch drips and heat the oven to 425°F. Prepare a double pie crust in a 9-inch pie pan and fill the shell (see Classic Pie Crust). Brush the heavy cream over the top crust and sprinkle with the crushed sugar cubes, pressing lightly to secure the chunks. Cut at least three vent holes. Bake on the middle rack until the crust is golden and the apples are tender when pierced with a knife, about 55 minutes. If the top starts browning too quickly, tent the pie with foil.

2-1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon salt
1-1/4 cups cold unsalted butter, cubed
1/3 cup cold water
FILLING:
4 tablespoons unsalted butter
5 pounds medium Honeycrisp apples, peeled and sliced 1/4-in. thick
1/2 cup sugar
1/4 cup packed dark brown sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon grated lemon zest
1/2 cup apple cider
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 large egg yolk
1 tablespoon heavy whipping cream
Coarse sugar

Steps:

  • For the crust, pulse flour, sugar and salt in a food processor until blended. Add butter; pulse until butter is the size of peas. While processing, add just enough ice water to form moist crumbs. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or overnight., For the filling, melt butter in a Dutch oven over medium heat. Add apples and next 6 ingredients; stir to combine. Cook, covered, stirring occasionally, until apples have softened and released their juices, 10-12 minutes. With a slotted spoon, transfer apple slices to a 15x10-in. baking pan; spread into a single layer. Add cider to remaining liquid in Dutch oven and bring to a boil; cook until juices reduce to 1/2 cup, 10-12 minutes. Remove from heat; add lemon juice and vanilla extract. Pour over apple slices; cool completely. (Filling can be made 24 hours in advance and refrigerated.), Preheat oven to 425°. Adjust oven rack to lowest position; place foil on rack to catch any spills. On a lightly floured surface, roll half of dough to a 1/8-in.-thick circle; transfer to a deep dish 9-in. pie plate. Trim pastry to within 1/2-in. of rim. Add filling. Roll remaining dough to a 1/8-in.-thick circle; place over filling. Trim, seal and flute edge. Cut slits in top. Whisk together egg yolk and cream; brush top of pie. Sprinkle with coarse sugar. Chill 15 minutes., Bake 20 minutes. Reduce oven setting to 350°. Bake until crust is golden brown and filling bubbly, 40-50 minutes longer. Cool on a wire rack.

1 (750 milliliter) bottle 190 proof grain alcohol

Steps:

  • In a large pot, combine apple juice, apple cider, sugar and cinnamon sticks. Bring to a boil, remove from heat, and let cool completely.
  • When juice mixture is cool, stir in the grain alcohol.

1 pastry for 9" pie, 2 Crust
6 cups apples (Use cooking apples like Macs or Granny Smith's. Core and peel them)
1 cup apple cider or 1 cup juice
2/3 cup sugar
apple cider or juice
2 tablespoons cornstarch
2 tablespoons water
1/2 teaspoon cinnamon, Ground
1 tablespoon butter or 1 tablespoon regular margarine

Steps:

  • Divide the pastry almost in half and roll out the larger half on a lightly floured surface to a 13-inch circle.
  • Line a 9-inch pie tin with the pastry.
  • Trim the edge to 1/2-inch beyond the rim of the pie tin.
  • Combine the apples, 1 cup of apple cider and the sugar in a 3-quart saucepan and cook, over high heat, until the mixture comes to a boil.
  • Reduce the heat to low and simmer for 8 minutes or until the apples are tender.
  • Drain the apples, reserving the syrup.
  • Add enough additional apple cider to the syrup to make 1 1/3 cups.
  • Return the syrup and apples to the saucepan.
  • Combine the cornstarch and water in a small bowl and stir until well blended.
  • Stir the cornstarch mixture and the cinnamon into the apple mixture.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Remove from the heat and stir in the butter, then pour the mixture into the pastry lined pie tin.
  • Roll out the remaining pastry to an 11-inch circle.
  • Fold the pastry gently, so as not to tear it, into quarters and cut slits in the folds.
  • Gently unfold the pastry on to the top of the filling and trim the edge to 1-inch beyond the rim of the pie tin.
  • Fold the top crust under the lower crust and form a ridge by fluting the edge of the pie.
  • Bake in a 400 degree F. oven for 40 to 45 minutes or until golden brown.
  • Cool on a wire rack until slightly warm before cutting and serving.
  • NOTE:
  • This is the perfect pie to serve with the rich cheddar sauce in this file.

8 sheets phyllo dough
14 tablespoons butter, melted
3/4 cup chopped walnuts
2/3 cup maple sugar or firmly packed light or dark brown sugar
1 1/4 cups pure maple syrup
1 cup apple cider jelly or apple jelly
6 eggs, slightly beaten

Steps:

  • Preheat oven to 350 degrees. Butter 9-inch pie plate. Lay 1 sheet phyllo dough on clean surface. Place slightly damp kitchen towel over remaining dough to keep from drying out. With pastry brush, lightly brush with melted butter. Lay another sheet phyllo on top of buttered sheet, lightly butter. Repeat until all 8 layers are buttered, using 6 tablespoons of the butter. Place phyllo dough into the prepared pan, pressing it along bottom and sides. Trim the edges. Sprinkle walnuts over bottom of crust. In medium bowl beat together maple sugar, maple syrup, jelly, remaining 8 tablespoons butter, and eggs. Pour egg mixture over walnuts. Bake 40 to 45 minutes, or until filling is set. Serve chilled.

These are kind of like an individual fluffy apple pancake.

2 eggs
1 cup milk
1 cup all-purpose flour
1/4 teaspoon salt
1 tablespoon sugar
2 tablespoons plus 6 tablespoons butter
1 Granny Smith apple, peeled, cored, and cut into 1/2-inch cubes
1 cup raisins

Steps:

  • Heat the oven to 425 degrees F.
  • Whisk the eggs and milk together in a medium bowl. Add the flour, salt, and sugar and whisk to blend. Melt 2 tablespoons of butter and whisk it into the batter.
  • In each cup of regular sized muffin tins, divide cold butter, apple and raisins. Place the muffin tins in the oven for 5 minutes to melt the butter and cook the apples slightly.
  • Remove the tins from the oven and pour the batter into each cup filling them half way up. Bake for 10 minutes, then reduce the heat to 375 degrees F and bake until puffed and golden brown, 15 to 20 minutes more. Serve hot.

8 large Golden Delicious apples - peeled, cored and cut into 1/8 inch slices
1 tablespoon fresh lemon juice
3 tablespoons potato starch
¾ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon freshly grated nutmeg
¼ cup cold unsalted butter, cut into 1/4-inch pieces
1 recipe pastry for a 10-inch double crust pie
2 teaspoons milk
1 tablespoon white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Position an oven rack in the lower part of the oven and place a baking stone on it.
  • Place the apples into a large mixing bowl, and toss with the lemon juice.
  • Stir the potato starch, 3/4 cup sugar, cinnamon, and nutmeg together in a bowl.
  • Roll out half of the pie crust pastry on a lightly floured surface and fit it into a 10 inch pie plate. Pile half the apples into the crust, and dot with half the butter pieces. Sprinkle half of the potato starch-cinnamon sugar mixture over the apples. Pile the remaining apples into the pie plate. Sprinkle with the remaining butter pieces and sugar mixture. Roll out the remaining pie crust pastry, and place carefully over the apples. Pinch and crimp the edges to seal the crusts. Use a fork to poke holes in the top crust in a few places. Brush the top crust with milk, and sprinkle with 1 tablespoon sugar.
  • Place the pie in the preheated oven on the baking stone. Immediately lower the heat to 350 degrees F (175 degrees C). Bake until the crust is golden brown, about 60 minutes. Check half way through the baking time, and cover the edges with aluminum foil for the last 30 minutes if necessary to prevent over-browning. Cool 3 hours on a wire rack before serving.

1 package (8 ounces) cream cheese, softened
1/4 cup sour cream

1-3/4 cups whipped topping
1 package (1.5 ounces) crunchy granola bars without raisins, crushed

Steps:

  • Pour pie filling into the crust. In a small bowl, beat cream cheese until smooth. Beat in the sour cream and cider mix until light and fluffy. Fold in whipped topping. Pour over pie filling. Chill until set. Just before serving, sprinkle with granola.
