3 pounds potatoes, peeled and cut into 1-inch cubes
1 1/2 teaspoons salt
8 tablespoons (1 stick) unsalted butter
1 large onion, diced
1/2 teaspoon ground cumin
5 cloves garlic, peeled and minced
2 1/4 cups fresh corn kernels
3/4 cups milk
Salt, to taste
Pepper, to taste
1 1/2 teaspoons finely chopped fresh cilantro, for garnish

Steps:

  • Place the potatoes in a pot. Cover with water and add the salt. Bring to a boil and cook until tender. Meanwhile, heat the butter in a small skillet and saute the onion, cumin and garlic until the onion is translucent, about 3 to 4 minutes. Add the corn and cook for 2 more minutes. Add the milk and simmer for 1 or 2 minutes, the season with salt and pepper.
  • Remove the potatoes from the heat and drain. Mash the potatoes and add the corn mixture. Serve hot, garnished with cilantro.

I made this recipe up after tasting a similar one at a local restaurant. It has great flavor and interesting texture with the snappy corn.

1 (22 ounce) bag frozen mashed potatoes
1 cup milk
1 tablespoon roasted garlic
4 tablespoons softened butter
1/2 cup sour cream
1 (11 ounce) can mexicorn or 1 (11 ounce) can corn, drained
1 cup shredded cheddar cheese
salt and pepper

Steps:

  • Place frozen potatoes in a microwaveable safe bowl with the milk.
  • Cover.
  • Cook on high in microwave for 12 minutes, stirring half-way through.
  • When potatoes are done, whip with wire whip or electric beater.
  • Add the butter, sour cream, garlic, and salt& pepper to taste.
  • Fold in the corn.
  • Place in casserole dish which has been greased with vegetable oil spray.
  • Sprinkle the cheese on top.
  • Bake at 350º for 45 minutes or until heated through.

1 small sweet potato, peeled (8 ounces)
2 medium baking potatoes, peeled (1 pound)
6 ears corn, shucked
1 cup coconut milk
2 tablespoons olive oil
2 tablespoons unsalted butter or 2 tablespoons spiced ghee
1 1/2 teaspoons garam masala
1/2 teaspoon salt

Steps:

  • Combine the sweet potato and baking potatoes in a large pot, add water to cover, and bring to a boil. Boil until tender, about 30 minutes. Five minutes before the potatoes are done, add the corn.
  • Drain the potatoes and corn and transfer the potatoes to a large bowl. Set the corn aside to cool slightly, and mash the potatoes with a fork. Cut the corn kernels from the cobs, and fold into the potatoes.
  • Combine the coconut milk, olive oil and butter in a small saucepan and bring to a boil. Stir the flavored coconut milk into the mashed potatoes, then add the garam masala and salt and mix well.

Smashed Potato and Corn Salad image

Fiery jalapeno adds a nice bite to the creamy potatoes and sweet corn; adjust the amount to suit your taste.

Number Of Ingredients 8

3 pounds red-skinned potatoes, scrubbed
1 1/2 cups fresh corn kernels (cut from 3 ears of corn)
3/4 cup plain yogurt
3/4 cup sour cream
2 tablespoons lemon or lime juice
1/4 bunch chives, snipped to 1/2-inch lengths (about 1/4 cup)
1 fresh jalapeno, thinly sliced crosswise
Salt and freshly ground pepper

Steps:

  • Place potatoes in a large pot of salted water and bring to a boil. Reduce heat and simmer for 20 minutes, or until tender. Remove from heat and drain. Let cool. Break potatoes into chunks with your fingers, or break them up with a wooden spoon.
  • Meanwhile, bring a small saucepan of water to a boil. Add corn and blanch until tender and bright yellow, about 3 minutes. Drain and let cool.
  • In a small bowl, combine yogurt and sour cream. Stir in lemon or lime juice, all but 2 tablespoons of the chives, and the jalapeno, and season to taste with salt and pepper.
  • In a large serving bowl, combine potatoes and corn, reserving some corn for garnish. Toss with dressing, and garnish with remaining corn and chives.

1 ½ pounds new potatoes, scrubbed and quartered
¼ teaspoon salt
½ cup butter, softened
½ cup heavy cream
salt and pepper to taste
1 tablespoon olive oil
1 ½ cups whole kernel corn
1 (10 ounce) package fresh spinach, stems removed
1 ½ teaspoons minced garlic

Steps:

  • Place potatoes in a pot and cover with water. Bring to a boil and add 1/4 teaspoon salt. Boil until potatoes are tender, about 15 minutes. Drain water and mash potatoes together with butter and heavy cream until light and fluffy. Season with salt and pepper to taste.
  • Heat a large skillet over medium heat. Pour in olive oil and saute corn 2 to 3 minutes. Stir spinach and garlic into skillet and saute an additional 1 minute, until spinach is wilted. Fold mixture into mashed potatoes. Adjust seasonings and serve immediately.
