2 oz. very thinly sliced prosciutto
1 cup breadcrumbs, (coarsely chopped)
4 tablespoons olive oil, (divided)
1 teaspoon chopped fresh thyme
1 cup finely grated Parmesan, (divided)
Kosher salt and freshly ground black pepper
1 bunches collard greens, (about .5 lb., center ribs and stems removed)
1 bunch kale, (about .5 lb., center ribs and stems removed)
1 large onion, (thinly sliced)
2 garlic cloves, (finely chopped)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups 2% milk or whole
¼ teaspoon freshly grated nutmeg

Steps:

  • Combine breadcrumbs and 2 Tbsp. oil in a medium skillet; toast over medium heat, tossing occasionally, until golden brown and crisp, about 7-10 minutes. Remove from heat and add thyme and ¼ cup Parmesan; season with salt and pepper. Set aside. (These can be made a day in advance. Store in an airtight container at room temperature)
  • Cook collard greens and kale in a large pot of boiling salted water until tender and bright green, about 3-4 minutes. Drain, transfer to a bowl of ice water, and let cool. Drain again and squeeze dry with paper towels. Coarsely chop greens..
  • Heat remaining 2 Tbsp. oil in a medium saucepan over medium heat. Add onion and garlic and cook, stirring often, until softened and golden, 5-10 minutes. Transfer to bowl with greens; set aside. Reserve saucepan.
  • Increase oven temperature to 400°. Melt butter in reserved saucepan over medium heat. Add flour and cook, whisking constantly, until mixture is smooth and very pale brown, about 4 minutes. Gradually whisk in milk, ½-cupful at a time; add nutmeg. Bring to a boil, reduce heat, and simmer, whisking often, until thickened, 5-8 minutes. Whisk in remaining ¾ cup Parmesan. Add this béchamel sauce to collard green, kale and onion mixture and mix to combine; season with salt and pepper.
  • Transfer collard green mixture to a 10" cast-iron skillet or 9" pie dish and top with breadcrumb mixture. Tear the proscuitto and roll or lay flat over the bread crumbs. Bake until gratin is bubbling, 15-20 minutes. Let cool slightly before serving.

1/3 cup butter, plus more for greasing pan
1/3 cup all-purpose flour
2 1/2 cups heavy cream
Salt and ground black pepper
8 ounces bacon, diced
1 cup sliced baby portabello mushrooms
3/4 cup diced red onion
2 bunches collard greens, rinsed, deveined and cut into 1/8-inch wide strips
2 bunches collard greens, rinsed, deveined and cut into 1/8-inch wide strips
1/2 to 3/4 cup grated Asiago
1/2 cup french-fried onions

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large saute pan, fry the bacon until half-cooked. Add the mushrooms and red onions and saute until the bacon is fully cooked and onions have softened. Increase the heat to high. Add the collard greens and cook until the greens are wilted. Turn off the heat and set the pan aside.
  • In a separate pan, melt the butter and then add the flour. Cook, whisking frequently, to create a smooth, blond roux (this will take 3 to 4 minutes; do not brown, as the goal is just to remove the raw taste from the flour). Slowly add the cream while whisking and adjust the heat to keep the sauce at a simmer. Add the salt and pepper to taste (it should taste like a moderately salty cream gravy). Continue cooking until the sauce thickens and easily coats the back of a spoon.
  • Butter an 8-by-12-inch casserole dish (or 8-to-10-cup capacity casserole). Combine the collard greens with cream sauce and transfer to the casserole. Top with the cheese and french-fried onions. Bake, uncovered, until the cheese begins to brown, 15 to 20 minutes.

2 teaspoons unsalted butter, plus more for the gratin dish
2 butternut squashes, (about 3 pounds total), cut in half lengthwise and seeded
One 10-ounce bag chopped kale
2 tablespoons pure olive oil
6 cloves garlic, very finely chopped
Coarse salt and freshly ground black pepper
1/2 teaspoon freshly grated nutmeg
Pinch of ground allspice
Leaves from 4 sprigs thyme, chopped
1 1/2 cups heavy cream
3 tablespoons plain or whole-wheat fresh or panko (Japanese) breadcrumbs
2/3 cup freshly grated Parmigiano-Reggiano cheese (about 2 1/2 ounces)

Steps:

  • Preheat the oven to 400 degrees F. Butter a large gratin dish. Peel the squash, then cut crosswise into 1/4-inch slices; set aside.
  • Bring a large pot of salted water to a rolling boil. Add the kale and cook until just tender, about 5 minutes. Drain well in a colander, then squeeze out any excess water.
  • Heat the oil in a large saute pan over medium-high heat. Add the garlic and the well-drained greens. Cook until the greens are slightly wilted, 3 to 4 minutes. Taste and adjust for seasoning with salt and pepper.
  • Meanwhile, place half the sliced squash in the prepared dish and season with salt and pepper. Combine the nutmeg, allspice, and thyme in a small bowl. Spoon the kale over the squash and sprinkle with half the seasoning mixture. Top with remaining squash and sprinkle with the remaining seasoning.
  • Pour the cream over the gratin and cover with a piece of aluminum foil. Bake for 25 minutes, remove the foil, and press down on the squash with a spatula to compress. Cover and continue baking until the squash is soft when pierced with the tip of a knife, about 20 minutes.
  • Meanwhile, combine the breadcrumbs and cheese in a small bowl. Season with salt and pepper. Decrease the oven temperature to 375 degrees F. Remove the foil from the gratin dish and sprinkle the breadcrumb mixture over the squash. Dot with the butter and continue baking, uncovered, until golden brown, about 10 minutes. Transfer to a wire rack to cool for about 10 minutes before serving.

1/2 cup coarse bulgur*
2 pounds assorted greens such as kale, collard, escarole, spinach,Swiss chard, and/or mustard greens
6 large garlic cloves, minced
3 tablespoons olive oil
1/4 cup freshly grated Parmesan (about 1 ounce)
6 ounces chilled whole-milk or part-skim mozzarella, grated coarse
For topping
1/2 cup fine fresh bread crumbs
1 tablespoon olive oil
*available at natural foods stores and specialty foods shops

Steps:

  • In a heatproof bowl pour enough boiling water over bulgur to cover by 1 inch. Cover bowl with a plate to trap steam and let stand 20 minutes. Drain bulgur in a large fine sieve, pressing out excess liquid, and transfer to a bowl.
  • Keeping each variety of green separate, tear greens into bite-size pieces, discarding stems. Still keeping greens separate, wash thoroughly by dunking in a sinkful of water and transfer to a colander to drain.
  • Put coarser greens (kale or collard) in a 4 1/2- to 5-quart kettle and steam in water clinging to leaves, covered, over moderate heat, stirring occasionally, until wilted, about 4 minutes. Add delicate greens (escarole, spinach, Swiss chard, and/or mustard) to coarse greens and steam, covered, stirring occasionally, until just wilted, 3 to 4 minutes. Drain greens in colander, pressing out excess liquid.
  • In a large heavy skillet cook garlic in oil over moderate heat,stirring, until softened but not golden. Stir in greens and bulgur and season generously with salt and pepper. Stir in Parmesan and remove skillet from heat.
  • Preheat oven to 400°F. and lightly oil a 1 1/2-quart gratin dish or other shallow baking dish.
  • Spread half of greens mixture in dish and sprinkle evenly with mozzarella. Spread remaining greens mixture over mozzarella and smooth top with a rubber spatula. Gratin may be prepared up to this point 8 hours ahead and chilled, covered.
  • Make topping:
  • In a small bowl with a fork stir together bread crumbs and oil until crumbs are evenly moistened.
  • Sprinkle topping over greens mixture and bake in middle of oven 30 minutes, or until bubbling and top is browned lightly.
