Categories     Salad

Time 10m

Number Of Ingredients 13

1 small bunch tuscan kale (aka, lacinato or dinosaur), thick stem removed and shredded
1/2 head small red cabbage, shredded
1 - 2 carrots, grated or julienned (or use quartered baby carrots)
1/3 red onion, thinly sliced
1/2 cup parsley leaves, roughly chopped
2 tablespoons hemp hearts
2 tablespoons sunflower seeds
2 tablespoons pepitas (pumpkin seeds)
1 tablespoon olive oil
1 tablespoon dijon mustard
1 tablespoon apple cider vinegar
2 tablespoons water
mineral salt & fresh cracked pepper to taste

Steps:

  • In a small bowl, mix your dressing and set aside.
  • Prepare vegetables and place in large bowl, add dressing and toss to coat. Add in seeds and toss again (or sprinkle over each portion before serving). Let salad rest a few minutes before eating, this will help soften the kale a bit.
  • Serves 2 or one generously.
  • For a creamier dressing, replace the oil with tahini.
  • If you have fresh lemons on hand, this would be great with a big squeeze of lemon over top.
  • If serving for one, use 1 - 1 1/2 tablespoons each of the seeds.

KALE AND RED CABBAGE SLAW WITH WALNUTS

Kale and Red Cabbage Slaw With Walnuts image

I can't remember where I heard or read about massaging raw kale with olive oil and a little salt, but it is a very effective way to soften the leaves just a bit if you are not cooking the kale. This briny slaw gets its crunch from red cabbage and walnuts.

Provided by Martha Rose Shulman

Categories     dinner, salads and dressings, appetizer

Time 1h10m

Yield Serves 6

Number Of Ingredients 12

4 cups stemmed, slivered curly kale
Salt to taste
1 tablespoon extra virgin olive oil
3 cups finely sliced or shredded red cabbage
1/4 cup finely chopped walnuts
2 tablespoons seasoned rice vinegar
2 teaspoons sherry vinegar
2 to 3 teaspoons Dijon mustard (to taste)
1 small garlic clove, minced or puréed (optional)
1 tablespoon walnut oil
1/4 cup plain yogurt
Freshly ground pepper

Steps:

  • Place the slivered kale in a large bowl. Sprinkle with salt and add 1 tablespoon olive oil. Toss together and massage the leaves with your hands for about 3 minutes. The kale will lose some volume.
  • Add the cabbage and walnuts to the kale and toss together.
  • In a small bowl or measuring cup, combine the rice vinegar, sherry vinegar, Dijon mustard, optional garlic, walnut oil, yogurt and salt and pepper to taste. Whisk together and toss with the salad. Taste and adjust seasonings. Cover and refrigerate for 1 hour or longer before serving. Toss again and serve.

Kale and Cabbage Slaw With Mustard Vinaigrette image

Two greens make a colorful and delicious team in our kale and cabbage slaw, and the Dijon mustard vinaigrette for it is a light and easy choice.

Provided by Diana Rattray

Categories     Salad     Side Dish

Time 20m

Yield 6

Number Of Ingredients 11

For the Salad:
4 to 6 medium leaves kale (lacinato)
1/2 medium head cabbage (green)
1/4 cup walnuts (pecans, or slivered or sliced almonds)
Salt to taste (kosher)
Pepper to taste (freshly ground)
For the Dijon Mustard Dressing:
2 teaspoons Dijon mustard (grainy, or more, to taste)
1 clove garlic (minced)
3 tablespoons white balsamic vinegar (or white wine vinegar)
1/3 cup olive oil (good quality extra virgin)

Steps:

  • Toast the nuts, if desired. Arrange the nuts in a single layer on a rimmed baking sheet. Bake whole, chopped, or slivered nuts in a preheated 350 F oven for about 8 to 10 minutes, checking and turning them frequently. Sliced almonds will take about half the time. Watch closely.
  • Cut the middle rib out of each lacinato kale leaf. Roll the leaves up into a tight roll and slice them chiffonade-style into thin strips. Put the strips of kale in a large bowl. You should have about 2 to 3 cups.
  • Cut the core out of the cabbage half and shred or chop the cabbage. Transfer the cabbage to the bowl with the kale.
  • Toss the chopped nuts with the kale and cabbage. Prepare the Dressing
  • In a canning jar or bowl, combine the Dijon mustard, minced garlic, vinegar, and olive oil. Whisk or shake well. Add a dash of salt and some freshly ground black pepper, to taste.
  • Drizzle 2 to 3 tablespoons of the Dijon mustard vinaigrette over the salad. Toss the salad. Cover and refrigerate until serving time.
  • Serve with the extra dressing on the side.

Yield 7 cups

Number Of Ingredients 13

1 cup (packed) light brown sugar
5 whole cloves
2 tablespoons whole black peppercorns
3 1/4 cups apple cider vinegar, divided
1/4 cup plus 1/2 teaspoon kosher salt, divided, plus more to taste
1 green cabbage (about 2 3/4 pounds), quartered
1/4 cup extra-virgin olive oil, plus more to taste
7 thick-cut slices bacon (about 8 ounces)
1 1/2 teaspoons honey
3/4 teaspoon freshly ground black pepper, plus more to taste
1/2 cup black raisins
1/2 cup chopped fresh parsley
1/2 cup toasted walnuts, coarsely chopped

Steps:

  • Bring brown sugar, cloves, peppercorns, 3 cups vinegar, 1/4 cup salt, and 3 cups water to a boil in a large pot over high heat. Reduce heat and simmer, stirring until sugar is dissolved, 10 minutes. Let cool 10 minutes.
  • Place cabbage in a large resealable bag and fill with pickling liquid. Seal bag and chill at least 5 hours or up to overnight.
  • Pat cabbage dry with paper towels; discard pickling liquid. Prepare a grill or grill pan for medium-high heat. Brush cabbage with oil and grill, turning occasionally, until all sides are well charred, 7-10 minutes per side. Let cool.

  • Whisk honey, 1/2 tsp. salt, 3/4 tsp. black pepper, remaining 1/4 cup oil, and remaining 1/4 cup vinegar in a large bowl. Thinly slice cabbage lengthwise and add to bowl along with bacon, raisins, parsley, and walnuts. Toss well to combine and season with salt and pepper. Cover and chill until ready to serve.
  • Do Ahead
  • Slaw can be made and chilled for up to 8 hours.
