Kona Inn Banana Bread image

I got this from a Garden Center Favorites cookbook quite a few years ago. It is THE BEST banana bread I have made--and I have tried a bazillion recipes. I keep coming back to this one!! I hope you like it.

Yield 1 Loaf

Number Of Ingredients 7

1 cup sugar
1/2 cup butter
3 bananas, ripe and mashed
2 eggs, well beaten
1 1/4 cups flour
1/2 teaspoon salt
1 teaspoon baking soda

Steps:

  • Cream together butter and sugar.
  • Add bananas and eggs.
  • Sift dry ingredients.
  • Blend wet and dry mixtures but don't overmix.
  • Bake in a loaf pan at 350° for 45 minutes.
  • Makes 1 20-ounce loaf.

Absolutely delicious banana bread!!! You can omit the salt if desired and it still tastes delicious!

Number Of Ingredients 8

2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 cup vegetable shortening
2 cups sugar
2 cups mashed ripe bananas (about 6)
4 eggs, slightly beaten
1 cup chopped walnuts

Steps:

  • Toss together flour and baking soda.
  • Add shortening, sugar, and salt.
  • Add bananas, eggs and walnuts.
  • Grease and flour 2 bread pans.
  • Bake at 350 degrees for 65 to 70 minutes. Remove from oven and let cool in pan for 5 minutes, them turn out onto a rack to cool completely.

  • Mash the bananas with a fork or potato masher and set aside. They should still be slightly lumpy.
  • In a mixing bowl, using a rubber scraper or large mixing spoon, mix together the shortening and sugar so that it is like a gritty paste. If using vanilla, add that too. Add the eggs, one at a time, beating with the scraper (or spoon) until mixed. Mix in bananas, then add the nuts if using.
