Just like the restaurant favorite these delicious Pork Fajitas are sure to satisfy any and all appetites! Full of colorful flavors, easy to prepare, and served with homemade guacamole!

Number Of Ingredients 15

2 medium onions
1 red bell pepper
1 yellow bell pepper
3 tablespoon fajita seasoning (or to taste)
2 pounds pork tenderloin
2 tablespoon olive oil
fresh cilantro (for garnish)
1 lime (cut into wedges)
8 small tortillas
2 avocados
2 tablespoon lime juice (from 1 lime)
1 tomato (diced)
3 green onions (chopped)
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper (or to taste)

Steps:

  • Clean and slice the onions into long strips. Slice the peppers into long strips as well. Place peppers and onions in a large bowl, sprinkle 1 1/2 tbsp of the fajita mix over the onions and peppers and toss.
  • Clean and slice the pork tenderloin into long strips and place in a bowl. Sprinkle the remaining 1 1/2 tbsp of fajita mix over the pork and stir to make sure each piece of pork is seasoned well.
  • In a large skillet, heat 1 tbsp of the olive oil over medium high heat and add the pork to it. Cook the pork for 5 to 10 minutes until it's fully cooked, and it's slightly charred, but not burned.
  • Remove the pork from skillet, and wipe the skillet clean.
  • Add another tbsp of olive oil to the skillet and heat it up. Add the onion and pepper mixture and cook for about 5 minutes until the onion is caramelized and the peppers are soft. Add the pork back to the skillet, mix with peppers and onions and cook for a minute.
  • To make the guacamole, mash the avocados in a small bowl, then add the rest of the ingredients and stir well.
  • Assemble the tortillas, add some pork, onion, peppers, and top with avocado. Garnish with cilantro if preferred.

1 medium onion
3 bell peppers (red, yellow, green, or orange)
1 pound pork tenderloin (or lean pork, cut into strips)
1 tablespoon lime juice
3 tablespoons olive oil (divided)
1 ½ tablespoons fajita seasoning (or seasoning mix below)
8 flour tortillas (6" each or corn tortillas)
toppings as desired

Steps:

  • Heat tortillas according to package directions.
  • Slice onion and peppers, set aside.
  • Cut pork into thin strips and place in a bowl. Toss pork with seasoning, lime juice, and 1 tablespoon olive oil.
  • Preheat 1 tablespoon olive oil over medium high. Add the pork in small batches and cook just until browned, about 3-4 minutes. Set cooked pork aside.
  • Add 1 tablespoon of oil to the same pan and cook onions 1-2 minutes, stir in peppers and cook 2 minutes more.
  • Add pork and cook until heated through, do not overcook the pork.

These are so easy, and so delicious! They cook up very quickly. Tender pork with onions, peppers, garlic, lime juice...well, you get the idea. From The Recipe Hall of Fame Cookbook, with a few changes.

2 tablespoons olive oil
1 lb pork tenderloin, julienned
1/2 teaspoon salt (or more to taste)
1/4 teaspoon pepper (or more to taste)
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 small onion, thinly sliced
3 cloves garlic, minced
1 teaspoon ground cumin
2 teaspoons fajita seasoning mix (I used Paul Prudhomme's Fajita Magic, but use whatever kind you like--there are a couple posted on Z)
1 lime, juice of
8 6-inch flour tortillas, warmed
shredded lettuce
chopped tomato
avocado, slices
shredded cheese (etc)

Steps:

  • Heat the oil in a large skillet over high heat.
  • Add pork, sprinkle with the salt and pepper.
  • Cook, and stir constantly for 2 minutes.
  • Add peppers, onion, garlic, cumin and fajita seasoning, continue to cook until the vegetables are crips-tender, about 3-4 minutes.
  • Stir in the lime juice, and saute for about 2 more minutes.
  • To serve, roll 3/4 cup meat mixture in each tortilla and garnish as desired.
  • I like to put the meat and tortillas in a platter and bring it to the table, and let everyone make up their own.

1 lb lean pork
2 garlic cloves, minced
1 teaspoon oregano
1/2 teaspoon cumin
1 teaspoon seasoning salt, of your choice
2 tablespoons orange juice
2 teaspoons vinegar
1 dash hot sauce
1 teaspoon oil
1 medium onion, sliced
1 green bell peppers or 1 red bell pepper
4 flour tortillas
green onion top, for garnish
shredded lettuce (to garnish)
salsa (to garnish)
shredded cheese (to garnish)

Steps:

  • Slice pork into thin strips.
  • Marinate strips in garlic, oregano, cumin, salt, orange juice, vinegar and hot sauce for 30 minutes.
  • Heat heavy skillet or griddle until hot. Add the oil, and when it is hot, and pork strips. Stir-fry until pork is no longer pink.
  • Add bell pepper and onion and cook until vegetables are limp.
  • Serve on flour tortillas.
  • Garnish with green onions, salsa, cheese and lettuce.
  • Note: prep time includes marinade time.

2 tablespoons fresh lime juice
2 tablespoons canola oil, divided
1 tablespoon Worcestershire sauce

1 garlic clove, minced
1/2 teaspoon salt, optional
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1 pound boneless skinless chicken breasts
1 medium green pepper, halved and seeded
1 medium sweet red pepper, halved and seeded
1 medium sweet onion, sliced
6 flour tortillas (8 inches)
Salsa
eachguacamole dip
Guacamole dip and sour cream or shredded cheddar cheese, optional

Steps:

  • In a large resealable plastic bag, combine the vinegar, lime juice, 1 tablespoon oil, Worcestershire sauce, onion, garlic, salt if desired, oregano and cumin; add chicken. Seal bag and turn to coat; refrigerate at least 4 hours., Drain and discard marinade from chicken. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Lightly brush vegetables with remaining canola oil. Grill vegetables and chicken, covered, over medium heat or broil 4 in. from the grill for 12-15 minutes or until a thermometer reaches 170°, Meanwhile, warm tortillas according to package directions. Quickly slice chicken and peppers into strips and separate onion slices into rings. Spoon chicken and vegetables down the center of tortillas; fold in sides. Serve with salsa, guacamole, sour cream and/or cheese if desired.

2 tablespoons orange juice
2 tablespoons vinegar
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1/2 teaspoon seasoned salt
1/2 teaspoon hot pepper sauce
1 medium onion, cut into thin wedges
1 medium green pepper, julienned
1 tablespoon vegetable oil
6 flour tortillas (6 inches)
Shredded lettuce, diced tomatoes, salsa and/or sour cream, optional

Steps:

  • Cut pork into 4x1/2x1/4-in. strips; set aside. In a bowl or resealable plastic bag, combine orange juice, vinegar, garlic, oregano, cumin, seasoned salt and hot pepper sauce; mix well. Add pork; cover or close bag and chill for 1-2 hours. , In a skillet over medium heat, cook pork with marinade, onion and green pepper in oil until pork is not longer pink and vegetables are tender; drain., Place about 3/4 cup filling down the center of each tortilla; top with lettuce, tomatoes, salsa and sour cream if desired.
