1 cup sour cream
2 eggs, lightly beaten
1 (15 ounce) carton ricotta cheese
1/2 cup grated parmesan cheese, divided
1/4 cup grated romano cheese
1/4 cup minced fresh parsley
1 3/4 cups shredded part-skim mozzarella cheese

Steps:

  • Cook pasta according to package directions; drain and return to the pan.
  • Stir in Alfredo sauce and sour cream. Spoon half into a lightly greased 3-qt. baking dish.
  • Combine the eggs, ricotta cheese, 1/4 cup Parmesan cheese, Romano cheese and parsley; spread over pasta.
  • Top with remaining pasta mixture; sprinkle with mozzarella and remaining Parmesan.
  • Cover and bake at 350° for 25 minutes. Uncover; bake 5-10 minutes longer or until bubbly.
  • Serve with tossed salad and buttered Italian bread.

1 (25 ounce) jar pasta sauce

Steps:

  • Pre-heat over to 350.
  • Cook beef until brown, add to large bowl.
  • Cook pasta, add to bowl.
  • To bowl, add 1 jar of sauce and 1 cup of mozzarella cheese, mix well.
  • Add to glass baking dish, top with 1 cup of mozzarella, cover with tin foil.
  • Bake for 30 minutes.
  • Remove foil, bake for another 10-15 minutes.

2 cups cubed eggplant
2 cups cubed zucchini
2 large tomatoes, chopped
1 medium red bell pepper, cubed
1 medium onion, chopped
3 cloves garlic, minced, or more to taste
2 teaspoons Italian seasoning
1 teaspoon salt
1 (16 ounce) package ziti pasta
1 (32 ounce) jar spaghetti sauce
1 (15 ounce) can Italian-style diced tomatoes
½ cup non-dairy Parmesan cheese substitute
1 (16 ounce) package sliced fresh mozzarella cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a 3-quart baking dish with cooking spray.
  • Heat oil in a large saute pan over medium heat. Add eggplant, zucchini, tomatoes, bell pepper, onion, and garlic; cook, stirring occasionally until vegetables are tender, about 10 minutes. Sprinkle with Italian seasoning and salt; stir to combined.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add ziti and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and rinse in cold water.

1 (26 1/2 ounce) jar of your favorite spaghetti sauce (we prefer the canned Hunt's Traditional flavor - cheap too!)
1 (8 ounce) package sliced fresh mushrooms (can use 2 cans stems & pieces if you don't have fresh)
1 (15 ounce) container part-skim ricotta cheese
8 ounces parmesan cheese, grated or shredded
1 (8 ounce) package shredded mozzarella cheese
6 slices round provolone cheese

Steps:

  • Cook pasta according to package directions (a little oil added to the water helps keep it from sticking together).
  • Set aside.
  • Spray a 13x9 glass baking dish with cooking spray.
  • Spread a thin layer of sauce in bottom of the dish.
  • Next, layer of 1/3 of the mushrooms and 1/3 of the pasta.
  • Spread all the ricotta over this layer.

1 onion, sliced
1 teaspoon minced fresh rosemary
4 cloves garlic, chopped

½ pound ground pork sausage

salt to taste
1 (6 ounce) package provolone cheese, sliced
¾ cup sour cream
¾ cup cottage cheese
1 (6 ounce) package mozzarella cheese, shredded
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.

Steps:

  • Cook the ziti. Meanwhile, crumble the tofu into a large bowl using your fingers. Add the nutritional yeast flakes, lemon juice, agave nectar, garlic powder, onion powder, basil, oregano, salt, and pepper and mash with a fork until completely smooth.
