This is a wonderful breakfast or brunch recipe for 8 to 10 people. Even if you aren't an oatmeal fan, adding fruit and nuts to this yummy baked delight will change your mind. Top with chopped nuts, flaxseed meal, yogurt, warmed almond milk, or the toppings of your choice.

4 ½ cups rolled oats
2 ¼ cups kefir
1 cup sucanat
½ cup butter, melted
1 ½ teaspoons ground cinnamon
3 eggs, beaten
½ cup raisins
2 ½ teaspoons baking powder
1 ¼ teaspoons salt

Steps:

  • Mix rolled oats, kefir, sucanat, butter, and cinnamon together in a large bowl. Refrigerate until oats soften, 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x17-inch baking pan.
  • Stir beaten eggs into the oatmeal mixture until fully blended. Add raisins, baking powder, and salt.
  • Bake in the preheated oven until center is set and edges start to pull away from the sides of the pan, 25 to 30 minutes.

Learn how to make overnight oats with kefir milk. All you need are oats, kefir milk and a bit of maple syrup or honey for oatmeal with the best texture.

2/3 cup old fashioned rolled oats*
1 cup plain kefir milk (I used whole milk but any fat percentage will work)*
1 Tbsp. maple syrup or honey
1/3 cup fruit or berries (optional)
1 pinch sea salt
1 splash vanilla
1 Tbsp. chia, flax or hemp seeds

Steps:

  • Add the oats, kefir, and maple or honey to a glass jar with a lid.
  • If you're using any add ins, add them at this time.
  • Screw the lid onto to the jar (I like to use plastic, non-reactive lids with fermented foods), and shake until everything is combined.
  • Place the jar in the fridge overnight, or for at least 6 hours, and serve! You can make these as soon as 3-4 days before you want to enjoy them, so prep a few at a time!

2 teaspoons baking powder

2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.
  • Bake in preheated oven for 40 minutes.

1 teaspoon salt

2 eggs
2 teaspoons vanilla extract
¼ cup dried cranberries, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Mix oats, brown sugar, cinnamon, baking powder, and salt together in a bowl. Beat in milk, butter, maple syrup, eggs, and vanilla extract; fold in cranberries. Spread mixture into the prepared baking dish.

I, on the other hand, find raisins to be sweet enough and don’t find the need for adding honey. Try these oats with both honey and without.
