ABSOLUTELY FABULOUS GREEK/HOUSE DRESSING

Steps:

• In a very large container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.

KELLYS HOUSE DRESSING

Steps:

• Combine all and whisk in oils emulsifying.

KELLY'S FAMOUS CHICKEN SALAD

Steps:

• Preheat oven to 375 degrees.
• Place washed chicken breasts on baking sheet. Pat dry.
• Rub with olive oil. Sprinkle with salt and pepper.
• Roast for 30-40 minutes (depending on size of chicken breasts).
• Cool. Remove skin and debone. Cut into bite sized chuncks.
• While chicken is roasting, dice celery, chop scallions- toss into a bowl.
• Mix together mayonaise (use a godd quality), rice vinegar, ginger powder, garlic, and salt and pepper.
• Toss in chicken and almonds in with the chopped veggies and add the dressing.
• Enjoy!

KELLY'S MASH-UP THANKSGIVING DRESSING RECIPE

Steps:

• Preheat the oven to 350 degrees F. Spread the softened butter in a medium baking dish or gratin dish. Toss the cubed bread with 2 tablespoons olive oil and the Italian seasoning in a large bowl. Transfer to a baking sheet and bake until crispy, about 10 minutes. Heat a large pan over medium-high heat. Add the remaining 2 tablespoons olive oil and the sausage. Cook the sausage, stirring and breaking up the meat, until brown, 8 to 10 minutes. Turn the heat to medium and add the onion and celery and cook until the vegetables are tender, 6 to 8 minutes. Add the garlic and cook for 1 minute, then add the rosemary, thyme and sage and cook for 1 more minute. Season with salt and pepper. Combine the toasted bread, sausage, vegetable mixture fruit and nuts in a large bowl. Combine the stock and egg in a medium bowl and whisk until well blended. Add the stock mixture to the bread mixture and fold together. Transfer the stuffing to prepared baking dishes and bake until the top is crispy and hot through the center, 35 to 45 minutes.

KELLY'S BUTTERSCOTCH PUDDING

Steps:

• In a small bowl, mix together brown sugar, cornstarch and salt. Add enough milk to make thick paste. In a saucepan over medium heat, bring milk to a boil. Stir in brown sugar mixture, return to a boil, and cook for 1 minute.
• Place egg yolks in small bowl. Temper the yolks by quickly stirring in about 1/4 of hot milk mixture. Pour yolk mixture back into hot milk mixture, and return to heat. Cook, stirring constantly, for 1 minute; remove from heat. Stir in butter and vanilla until butter is melted. Pour into bowls, and let cool slightly.
