KELSEY'S FAVORITE CRANBERRY BREAD
My granddaughter, Kelsey, and I saw this recipe and decided we needed to bake together. Kelsey and her sister, Aidan, don't like nuts so I omitted them from the original recipe and added golden raisins. -Annette Grahl, Midway, Kentucky

Steps:
- In a large bowl, combine the first five ingredients; cut in butter until crumbly. In a small bowl, whisk the egg, orange juice and zest. Stir into dry ingredients just until moistened. Fold in cranberries and raisins. Transfer to a greased 8x4-in. loaf pan., Combine brown sugar and flour; cut in butter until crumbly. Sprinkle over batter. Bake at 350° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely., For glaze, combine confectioners' sugar and orange juice until smooth. Drizzle over bread.

QUICKBREAD

Steps:
- Preheat the oven to 350 degrees F. Grease or line a 12-well muffin tin with paper liners or grease a loaf pan.
- In a mixing bowl, combine the flour, baking powder, and salt, and whisk until thoroughly combined.
- In another large mixing bowl, whisk together the sugar, eggs, and melted butter.
- Add the dry ingredients to the wet ingredients alternating with the sour cream and mix just to combine. Avoid over-mixing the batter. Cook's Note: If adding any variations, add them now.
- Pour the batter into the prepared muffin tin or loaf pan that have been greased or lined.
- Bake for 25 to 30 minutes for muffins or 45 to 50 for loaf bread or until a tester comes out clean.
- Quickbread Variations:
- Cranberry Nut Orange: Add 1 tablespoon orange zest to the wet ingredients, fold 1/2 cup fresh or frozen cranberries and 3/4 cup nuts into the batter
- Lemon Blueberry: Add 1 1/2 tablespoons lemon zest to the wet ingredients. Fold in 2 cups blueberries tossed with 1 tablespoon flour to batter.
- Almond Poppy Seed: add 3 tablespoons poppy seed to the dry ingredients, 2 teaspoons almond extract or paste to the wet ingredients. While baking, heat 1/2 cup sugar and 1/4 cup lemon juice in saucepan until the sugar dissolves and forms light syrup. Brush over the bread while warm.
- Banana Nut: Add 1/2 teaspoon cinnamon to dry ingredients. Substitute brown sugar for white sugar and add 2 cups mashed bananas combined with 1 teaspoon lemon juice. Fold in 1/2 cup chopped walnuts or pecans.
- Pumpkin: Add 2 cups pureed pumpkin to the wet ingredients. Add 1 1/2 teaspoons ground cinnamon and 1 teaspoon ground nutmeg to the dry ingredients.
GRANDMOTHER'S FAMOUS CRANBERRY BREAD
My oldest son came home with this recipe (and a loaf of the bread) as a gift from his 1st grade teacher about 25 years ago! It has been a family favorite ever since. Thank you Mrs. Binz!

- Sift flour, sugar, baking powder, salt and baking soda into a large bow.
- Cut in butter until mixture is crumbly.
- Add egg, orange peel, and orange juice all at once.
- Stir just until mixture is evenly moist.
- Fold in nuts and cranberries.
- Spoon into a greased 9 x 5 x 3-inch loaf pan.
- Bake at 350 degrees for 1 hour and 10 minutes, or until toothpick comes out clean.
- Remove from pan; cool on a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Spray or grease one 9x5x3 inch loaf pan.
- Whisk together the flour, sugar, baking powder, salt and baking soda.
- Cut in butter until mixture is crumbly. Add egg, orange peel, and orange juice; stir to mix and fold in raisins and cranberries.
- Pour into loaf pan and bake for 70 minutes or until toothpick inserted comes out clean. Remove from pan; cool on wire rack.
