1.5 cups cracker crumbs
6 units eggs
8 ounces pimentos
2 cups cheddar cheese
1.5 cups milk

Steps:

  • Butter bottom and sides of casserole dish. Divide all ingredients in half.
  • Layer first cracker crumbs, eggs, pimentos, cheese, repeat. Top with milk until it rises to the top of ingredients, making sure all is moistened. Use more milk if necessary.
  • Bake, uncovered in 350 degree oven until cheese is melted and top is browned, about 30 to 40 minutes.

Not a pudding, but a puffed pastry baked with meat drippings. We in the U.S. tend to think Yorkshire pudding and popovers are the same thing. Popovers are hard and very airy. Yorkshire pudding is softer and doesn't rise as high as a popover. Traditionally served with roast beef.

1 cup all-purpose flour
1 cup whole milk
2 eggs
½ teaspoon salt
3 tablespoons beef or bacon drippings

Steps:

  • In a large bowl, mix together the flour, milk, eggs and salt. Using an electric mixer, beat 5 minutes, until smooth. Cover and refrigerate 1 hour.
  • Preheat oven to 425 degrees F (220 degrees C). Coat a 9x13 inch baking pan with beef or bacon drippings. Preheat the pan 15 minutes so the drippings are hot and sizzling.
  • Remove the mixture from the refrigerator. Beat briefly, then scoop into the baking pan. Bake 20 minutes.
  • Lower oven temperature to 375 degrees F (190 degrees C). Without opening the oven, continue baking 15 minutes. The mixture should be puffed and golden brown. Remove from oven and serve hot.

1 tablespoon unsalted butter, softened
14 slices good-quality white bread
4 ounces American cheese, sliced
4 ounces Swiss cheese, sliced
2 1/2 cups heavy cream
1 cup milk
6 eggs
1/2 cup grated onion
1/4 cup chopped chives
1 teaspoon salt
1/2 teaspoon paprika

Steps:

  • Preheat the oven to 300 degrees. Butter a four-quart baking dish.
  • At the bottom of the baking dish, arrange a layer of one-half the bread. Layer the American and Swiss cheese slices over it. Layer the remaining bread on top.
  • Combine the remaining ingredients in a mixing bowl and beat.
  • Pour the mixture over the bread and cheese and let it stand for one hour at room temperature. Bake for one hour. Remove from the oven and serve immediately.

Whisking the cornstarch and sugar together before adding them to the custard is a crucial step that helps the sugar granules break up the starch, which prevents lumps. This silky pudding is delicious served alone, enjoyed with just a spoon, but you can also gussy it up with fresh berries and crumbled graham crackers for a more cheesecake-like experience.

Zest of 1 lemon (about 1 tablespoon)
1/4 teaspoon fine sea salt
3/4 cup/150 grams granulated sugar
1/4 cup/30 grams cornstarch
4 large egg yolks
12 ounces/340 grams cream cheese, at room temperature
2 teaspoons vanilla extract
Crumbled graham crackers or shortbread cookies, for serving (optional)
Fresh berries, for serving (optional)

Steps:

  • In a medium saucepan, whisk the milk, heavy cream, lemon zest, salt and 1/4 cup/50 grams sugar until combined. Place the saucepan over medium heat and bring to a simmer, stirring occasionally.
  • While the mixture heats, whisk the remaining 1/2 cup/100 grams sugar and the cornstarch in a medium, heat-safe bowl. Add the egg yolks and whisk until the mixture forms a thick paste.
  • When the milk mixture comes to a simmer, remove it from the heat. Whisking constantly, gradually add about a third of the hot milk mixture to the egg-yolk mixture in a slow, steady stream until combined. Transfer the contents of the bowl to the saucepan and whisk well to combine.
  • Heat over medium-low and cook, whisking constantly, until the mixture begins to thicken, 6 to 8 minutes. (Once the mixture thickens, you may find it easier to switch to a silicone spatula for stirring.) Continue to cook, stirring constantly, until the mixture comes to a boil with large bubbles breaking at the surface, 2 to 3 minutes.
  • Remove the saucepan from the heat, and whisk in the cream cheese and the vanilla. Strain the mixture through a fine-mesh sieve into a heat-safe bowl. Place plastic wrap directly on the surface of the pudding (this prevents a "skin" from forming) and refrigerate until chilled, at least 1 hour.
  • Serve the pudding in bowls or on small plates. Top with crumbled cookies and fresh berries, if desired.

¼ cup cornstarch
1 egg, beaten
1 (12 fluid ounce) can evaporated milk
1 ½ cups milk
2 teaspoons vanilla extract
1 (12 ounce) package vanilla wafers
4 banana, sliced

Steps:

  • In a saucepan over medium heat, combine the sugar, cornstarch, egg, evaporated milk and regular milk. Mix together well and stir until thick. Remove from heat; add vanilla and mix well.
  • In a large bowl or casserole dish, arrange a layer of cookies. Pour pudding mixture over cookies and top with a layer of sliced bananas. Refrigerate until chilled.

3 cups half & half
1/2 tsp. salt
1/4 tsp. black pepper
1-1/2 cups crumbled soda crackers
6 hard boiled eggs
3 cups grated sharp Cheddar cheese
1 cup chopped pimentos, drained

Steps:

  • Melt 6 Tbsp. butter, add flour and whisk in half & half, salt and pepper and cook until thickened. Spoon 1/2 cup sauce into a greased 1-1/2 quart casserole. Sprinkle a few cracker crumbs over sauce. Arrange layers of sliced eggs, cheese and pimentos repeating until all ingredients have been layered ending with crackers and dot with remaining butter. Bake about 30 minutes at 350 degrees until golden. Serve hot.
