½ cup shortening
1 cup peanut butter
3 tablespoons evaporated milk
1 teaspoon vanilla extract
½ teaspoon butter flavored extract
1 pound confectioners' sugar
2 bananas

Steps:

  • Combine margarine, shortening, peanut butter, milk, vanilla, and butter flavoring. Add confectioners' sugar and beat until creamy. Add more milk, if needed, 1 teaspoon at a time.
  • Spread icing over one layer of a yellow cake. Slice bananas on top. Place second layer on top and frost top and sides.

Steps:

  • Using a hand mixer in a bowl, beat the butter for about 1 minute, until fluffy.
  • Beat in the cocoa powder, sweetener, and vanilla extract, starting at low speed and increasing to high once it gets incorporated. Beat for 30 seconds on high.
  • Beat in heavy cream. (You can add more to thin out as needed.) Start low, then beat for 30 seconds on high again, until smooth and fluffy.

You can use it for a plain banana bread, a peanut butter banana bread, or a chocolate chip banana bread. Great for Easter brunch!

2 ripe bananas, mashed
⅓ cup unsweetened crunchy peanut butter
¾ cup brown sugar
¼ cup plain fat-free yogurt
1 large egg
1 tablespoon canola oil
¾ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spray a 9x5-inch loaf pan with cooking spray.
  • Whisk whole wheat flour, baking powder, baking soda, and salt in a large bowl.
  • Stir mashed bananas, peanut butter, brown sugar, yogurt, egg, and canola oil thoroughly in a separate bowl.
  • Stir the banana mixture into the dry ingredients until thoroughly combined; stir in chocolate chips.
  • Spoon batter into the prepared loaf pan.
  • Bake in the preheated oven until the loaf is lightly browned at the edges and a toothpick inserted into the center comes out clean, 40 to 50 minutes.
