Chocolate-Peanut Butter Keto Cups image

This is a modification of a recipe for a peanut butter cup-style fat-bomb I found online. Store in the fridge or freezer. When hungry or needing a fat bomb (if you are on keto), eat one.

1 cup coconut oil
½ cup natural peanut butter
2 tablespoons heavy cream
1 tablespoon cocoa powder
1 teaspoon liquid stevia
¼ teaspoon vanilla extract
¼ teaspoon kosher salt
1 ounce chopped roasted salted peanuts

Steps:

  • Melt coconut oil in a saucepan over low heat, 3 to 5 minutes. Stir in peanut butter until smooth. Whisk in heavy cream, cocoa powder, liquid stevia, vanilla extract, and salt.
  • Pour chocolate-peanut butter mixture into 12 silicone muffin molds. Sprinkle peanuts evenly on top. Place molds on a baking sheet.
  • Freeze chocolate-peanut butter mixture until firm, at least 1 hour. Unmold chocolate-peanut cups and transfer to a resealable plastic bag or airtight container.

9 ounces sugar-free chocolate chips (I use this brand) Code PEACE for 20% off
1/4 cup unrefined coconut oil
2 cups salted mixed nuts

Steps:

  • Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil and microwave until the chocolate is melted. Use a rubber spatula to mix until smooth. Let cool just slightly before using. Alternately, this can be done in a double boiler. (See note below)
  • Add the nuts to the bowl with the melted chocolate. Mix until all of the nuts are coating in the chocolate.
  • Drop large spoonfuls of the mixture onto the prepared baking sheet. Be sure to space them out enough that they do not run together.
  • Refrigerate until solid. Store leftovers in an airtight container in the refrigerator for up to 3 weeks. Alternatively, you can store them in the freezer.

1 tablespoon coconut oil
2¼ cups peanuts
Coarse salt, optional topping

Steps:

  • 1. Prepare two 13x9 inch pans by lining bottom with wax paper. Set aside. 2. In a medium microwave safe mixing bowl, add chocolate chips and coconut oil. 3. Microwave in 30 second intervals, stirring after each interval, until chips are melted and mixture is smooth (approximately 1-1½ minutes total). 4. Add peanuts. Stir until peanuts are completely coated with chocolate. 5. Drop by spoonfuls onto wax paper lined pans. Sprinkle with coarse salt if desired. 6. Freeze for 30-45 minutes or until completely set. 7. Serve immediately or store, covered, in the refrigerator until ready to serve.

A low carb version of the highly addicting, can't-stop-at-one, crunchy, dark chocolate sea salt peanut clusters. The perfect candy for your next night out at the movies, or just a treat for yourself!

1 cup peanuts
4 ounces Lily's dark chocolate chips *see notes
Coarse sea salt to sprinkle
15 drops of liquid stevia (number can be adjusted to fit your preference)

Steps:

  • Fill mini muffin pan with muffin cups.
  • In a microwave safe bowl, microwave the chocolate chips on high for 2 minutes. In 30 second intervals, take out to stir until fully melted.
  • Stir peanuts in to melted chocolate, making sure they are all coated in the chocolate.
  • Then, mix in drops of liquid Stevia.
  • Spoon clusters into the mini baking cups and sprinkle with coarse sea salt.
  • Place pan in freezer to firm, about 5-10 min. Enjoy and store leftovers in an airtight container in the fridge.
