Number Of Ingredients 9

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
6 tablespoons butter or 6 tablespoons margarine
1 3/4 cups packed light brown sugar
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups pecans, coarsely chopped
3/4 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350°F.
  • Grease 13 x 9-inch baking pan.
  • In small bowl, combine flour, baking powder and salt.
  • In saucepan, melt butter over low heat.
  • Remove from heat.
  • Stir in brown sugar and vanilla; add eggs, stirring until well blended.
  • Stir in flour mixture into sugar mixture just until blended.
  • Stir in coconut and pecans.
  • Spread batter evenly in prepared pan.
  • Bake until toothpick inserted 2 inches from edge of pan comes out clean, about 30 minutes.
  • Do not overbake; blondies will firm as they cool.
  • Cool completely in pan on wire rack.
  • When cool, cut lengthwise into 4 strips and then cut each strip crosswise into 6 pieces.
  • Variations: Pecan Blondies--leave out coconut.
  • Chocolate Chip Blondies--leave out coconut and stir in 1 (6 oz) package semisweet chocolate chips.

A healthy take on low carb keto blondies that are also sugar free and gluten free. You'll love this easy variation of the classic blondie that'll quickly become a family favorite.

1 1/3 cup almond flour
1 tsp baking powder
1/2 tsp salt
1 cup Swerve brown sugar substitute
1/2 cup butter
1 egg
1 tsp vanilla extract

Steps:

  • Preheat the oven to 350 and position the rack to the center position. Grease a 9x9 baking pan and set it aside
  • Whisk together the almond flour, baking powder, and salt in a small bowl.
  • In a medium-sized bowl, melt the butter in the microwave. Add the Swerve brown sugar and blend well.
  • Mix in the egg and vanilla, mix until well combined.
  • Stir the flour mixture into the sugar mixture. If you're adding chocolate chips or nuts, add them now.
  • Spread the mixture evenly into the greased baking pan.
  • Bake for 20-23 minutes until the blondies are starting to set but aren't completely firm. They'll continue cooking during cooling.
  • Set on a baking rack and wait until they've cooled completely to cut the gluten-free keto blondies. Enjoy!

When you are in the mood for a soft, fluffy cake our Dairy Free Low Carb Coconut Blondies are just perfect. They are also nut-free and ideal for those with dietary restrictions.

4.5 ounces Coconut Oil ( melted)
4.5 ounces coconut butter
3 ounces Natvia (aka Swerve)
1 ounce coconut flour
1 teaspoon Baking Powder
1 teaspoon vanilla essence
2 large eggs (room temperature)
1/4 cup unsweetened coconut flakes

Steps:

  • Preheat the oven to 180C/355F.
  • Line a 9x9in baking pan with parchment paper.
  • In a large mixing bowl, add the coconut oil and butter and mix well using your hand mixer on medium speed.
  • Add the natvia, coconut flour, baking powder and vanilla essence and mix well with your hand mixer until all ingredients are combined.
  • Add the eggs and mix again until the batter is smooth.
  • Place the mixture into the prepared pan, smooth out and top with the shaved coconut.
  • Bake for 15-20 minutes. Your Blondies are baked when an inserted skewer comes out clean. The Blondie will be very fluffy and will drop slightly when cooled.
  • Allow to cool for 10 minutes before cutting into 16 pieces and enjoying.
