3/4 cup almond flour
2 cups mozzarella cheese, shredded (divided into 1.5 and 1/2 cups)
4 Tbs. cream cheeses, softened
1 large egg
3-4 cloves garlic, minced (or substitute 1/2 tsp. garlic powder)
1 Tbs. italian seasoning
pinch salt
pinch pepper
1/3 cup parmesan cheese, shredded
1 Tbsp. fresh basil, chopped

Steps:

  • Preheat oven to 425-degrees
  • In a medium microwave-safe bowl, combine 1 1/2 cups mozzarella cheese and cream cheese. Microwave for 30 seconds, stir. Continue microwaving for 30 second intervals and stirring until cheese and cream cheese are combined. This happened at 2 minutes for me.
  • Add egg, almond flour, italian seasoning, garlic salt and pepper. Stir. Use a spatula to combine everything into a ball.
  • Transfer ball to parchment paper on a cookie sheet or a silicone cooking mat. Cover ball with plastic wrap. Roll dough out until it is 1/4 inch thick.
  • Put cookie sheet in the oven for 5 minutes. After 5 minutes, take it out and sprinkle remaining mozzarella and parmesan cheese over dough. Put cookie sheet back in oven for another 5 minutes and edges are golden brown.
  • Take dough out of oven, cut into strips and sprinkle with fresh basil. Serve plain or with marinara sauce.

Steps:

  • First, gather all of your ingredients in one place for an easy preparation.
  • Preheat the oven to 150 ° F / 300 ° C and prepare a baking sheet. Add a little butter or oil to the mold and cover very well with the waxed paper.
  • Next, in a mixing bowl, integrate the cheeses one by one, starting with the cheddar cheese, then add the mozzarella cheese and finally the Parmesan cheese.

  • Then cut the low carb breadsticks with a pizza cutter or a sharp knife, first transversely, dividing the dough into two and then longitudinally forming the breadsticks approximately 2 cm wide by 10 cm long.

1 tablespoon minced garlic
1 tablespoon Italian seasoning

2 large eggs (if extra large is all you have reduce to 1)
2 cups shredded mozzarella cheese
For the topping:
1 cup shredded mozzarella cheese
red pepper flakes and basil (optional)

Steps:

  • Preheat the oven to 425 degrees
  • Shred the zucchini and place in a sturdy dish towel. Squeeze as much moisture as possible from the zucchini. When you feel like you've gotten as much as you can out unroll the towel and allow it to rest for several minutes then try again. Do not skip the second step, the zucchini needs to be extremely dry.
  • Transfer the dry zucchini to a mixing bowl and combine with the garlic, spices, eggs and cheese.
  • Place the dough on a greased or silicone lined baking sheet and spread into a rectangle. **Do not pat too thin, or it will be more like a thin crust pizza than breadsticks**
  • Bake for 20-22 minutes until the breadsticks have browned slightly and dried out.
  • Remove from the oven and top with remaining cheese. Bake for 5-7 more minutes until melted and bubbly.
  • Cut into 12 strips.

1 oz cream cheese (softened)
4 eggs
¼ teaspoon salt

1⅓ cup mozzarella cheese (shredded)
1/2 cup parmesan cheese (shredded)
2 cups mozzarella cheese (shredded)
1/4 cup parmesan cheese (shredded)

Steps:

  • Preheat oven to 400 degrees and grease an 11X7 baking pan.
  • Combine melted butter (I cool mine by popping the bowl in the fridge for 5 min), eggs, salt, and cream cheese then whisk together.
  • Add coconut flour, baking powder, and spices to the mixture and stir until combined.
  • Stir in cheeses.
  • Pour batter into rectangular casserole dish.
  • Top bread mixture with the additional mozzarella, parmesan cheese, and Italian spices.
  • Halfway through baking use a pizza cutter to cut horizontally down the middle then vertically every inch or so to create a division in the individual breadsticks. I cut mine into 16 half breadsticks.
  • Bake for 15 minutes or until breadsticks are done.
  • Move pan to top rack of the oven and broil for 1-2 minutes so that the cheese is browned and bubbly.
  • Serve with low carb marinara sauce. .

Nonstick cooking spray, for coating the parchment
1 small head cauliflower, chopped into florets (about 4 cups)
1 small clove garlic
1/2 teaspoon dried Italian seasoning
1/4 teaspoon crushed red pepper flakes, optional
2 large eggs, beaten
2 cups shredded Cheddar (about 8 ounces)
1 cup shredded Parmesan (about 5 ounces)
Kosher salt and freshly ground black pepper
Marinara sauce, for dipping

Steps:

  • Preheat the oven to 475 degrees F. Line a rimmed baking sheet with parchment and coat with cooking spray.
  • Add the cauliflower and garlic to a food processor and pulse until finely ground and the consistency of couscous. Transfer the cauliflower mixture to a large bowl. Add the Italian seasoning, red pepper flakes if using, eggs, 1 cup Cheddar, 1/2 cup Parmesan, 1/2 teaspoon salt and a few grinds of pepper and combine until the mixture holds together when squeezed.
  • Spread the cauliflower mixture into an 8-by-12-inch rectangle about a 1/4 inch thick on the prepared baking sheet. Use the straight edge of the parchment as your guide to keep the cauliflower mixture edges straight too. Bake until the crust turns golden brown all over, 18 to 20 minutes.
  • Remove the baking sheet from the oven and lay another piece of parchment on top of the crust. Fit a second rimmed baking sheet on top so the bottom of the baking sheet is touching the parchment. Using oven mitts, hold the 2 baking sheets together and flip them over so the crust is now on the parchment on the upside-down baking sheet. Remove the first parchment from the crust, cut the crust into 1 1/2-inch-thick strips (you should have 8 to 9 strips) and spread them apart a little. Sprinkle with the remaining 1 cup Cheddar and 1/2 cup Parmesan. Bake on the upside-down baking sheet until the cheese is melted and turning brown in spots and the visible crust is a deep golden brown, 8 to 10 minutes.
  • Let cool for 5 minutes, then transfer the sticks on the parchment to a serving plate and serve with the marinara sauce for dipping.

  • Preheat oven to 425˚F (220˚C).
  • Melt ¾ cup (75 g) mozzarella and cream cheese together in the microwave for 1 minute, stirring every 20 seconds, or until fully melted.
