KICKED-UP COLE SLAW

This cole slaw is marvelous. Don't be fooled by the amount of garlic powder-it's not a typo. It uses a lot, but the taste is divine.

5-6 cups shredded cabbage
1/4 cup shredded carrot
1 cup mayonnaise
1 tbs water
2 tbs cider vinegar
1 tbs garlic powder
2 tbs sugar
1/2 tsp kosher salt
1 tsp Old Bay Seasoning
1/4 tsp black pepper

Steps:

  • Place shredded cabbage and carrots in a large bowl.
  • Mix remaining ingredients in a small bowl. Pour over cabbage and mix well to coat. Coleslaw may appear "dry," but water will release as it sets (pickles).
  • Cover and refrigerate for at least 2 hours. The longer it sits, the more it "pickles" and there will be plenty of juice.
  • Serves 8-10 as a side dish

3/4 Cup mayonnaise
1/4 Cup Dijon mustard
1/4 Cup light brown sugar (packed)
3 Tablespoons apple cider vinegar
2 Tablespoons buttermilk
4 Teaspoons celery seeds
1 Teaspoon salt
1/4 Teaspoon freshly ground black pepper
1/8 Teaspoon cayenne
3 Cups shredded green cabbage (about 1/2 head)
3 Cups shredded red cabbage (about 1/2 head)
1 green bell pepper, finely diced
1 large carrot peeled, shredded
1/2 Cup grated yellow onion
1/4 Cup minced fresh parsley

Steps:

  • 1 In a bowl, combine the mayonnaise, mustard, sugar, vinegar, buttermilk, celery seeds, salt, pepper, and cayenne, and whisk well to dissolve the sugar. 2 In a large bowl, combine the remaining ingredients. 3 Toss with the dressing until evenly coated. Adjust seasoning, to taste. 4 Place in the refrigerator, covered, to chill slightly before serving.

I've been lucky enough to live and travel a lot in Asia, and the most important lesson I try to take with me every day is not to be afraid of bold flavor. This dish is a perfect example of that. Yes, coleslaw is a somewhat ubiquitous and familiar side, but that doesn't mean it has to be boring. You can subtly change the flavors without alienating the traditionalists and make it more exciting for everyone. A coleslaw is just a cabbage salad, and if you skip the mayonnaise-based dressing, it's a blank canvas. With ginger, salt, and zesty lime, this dish is light and fresh and frames cabbage in a whole new way.

4 cups sliced green or red cabbage (about 1 cabbage)
1 cup roasted unsalted peanuts, chopped
1/2 cup carrot peels
1/2 cup thinly sliced scallions
1 1/2 tablespoons soy sauce, plus more if needed
1 tablespoon sesame oil
1 tablespoon red wine vinegar
2 teaspoons grated fresh ginger
Juice of 1 lime (about 1 tablespoon lime juice), plus more if needed
Pinch kosher salt, plus more if needed

Steps:

  • Toss all ingredients in a bowl and taste, adding additional soy sauce, lime juice or salt as needed. Serve.

½ cup light olive oil
⅓ cup lime juice
½ teaspoon ground cumin
2 cloves garlic, crushed
1 tablespoon hot pepper sauce, or to taste
salt and pepper to taste

Steps:

  • In a large bowl, combine green cabbage, red cabbage, red bell pepper, yellow bell pepper, red onion, carrots, and cilantro. In a small bowl, mix together olive oil, lime juice, cumin, garlic, and hot pepper sauce. Toss dressing with cabbage mixture until evenly coated. Season with salt and pepper. Let stand 30 to 60 minutes before serving.

This is a recipe that gives regular old coleslaw a spicy kick. Very easy to make with great results! If you have never had wasabi, please, start out with a teaspoon and work your way up from there. Wasabi is Japanese horseradish and it is powerful stuff! But it sure does goes well with the rest of the ingredients.

1 (16 ounce) bag coleslaw mix
2/3 cup mayonnaise
1/4 cup sugar
2 tablespoons apple cider vinegar
8 ounces crushed pineapple, drained (reserve the juice, it's an ingredient!)
3 tablespoons pineapple juice
1 -2 tablespoon wasabi (again, if this is new to you, please work your way up)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Mix everything but the coleslaw together.
  • Pay special attention to be sure the wasabi is well blended. A trick I learned that works very well, is to put all the ingredients but the coleslaw mix into a big ziploc bag, then squish, shake, and massage the ingredients into a nice smooth blend.
  • Then add the coleslaw mix and the ingredients together in a large bowl and mix well.
  • Cover and put it in the fridge for a couple hours to overnight to allow all the flavors to blend inches It will be soupy on the bottom, but the salad will be crisp.
