HOMEMADE KETCHUP



Homemade Ketchup image

This ketchup does come close to those name brands in terms of taste, texture and color. I've never had a tomato paste-based ketchup that I liked, so I decided to cook down crushed tomatoes instead. By using the slow cooker, we take most of the labor out of the process.

2 (28 ounce) cans peeled ground tomatoes
½ cup water, divided
⅔ cup white sugar
¾ cup distilled white vinegar
1 teaspoon onion powder
½ teaspoon garlic powder
1 ¾ teaspoons salt
⅛ teaspoon celery salt
⅛ teaspoon mustard powder
¼ teaspoon finely ground black pepper
1 whole clove

Steps:

  • Pour ground tomatoes into slow cooker. Swirl 1/4 cup water in each emptied can and pour into slow cooker. Add sugar, vinegar, onion powder, garlic powder, salt, celery salt, mustard powder, black pepper, cayenne pepper, and whole clove; whisk to combine.
  • Cook on high, uncovered, until mixture is reduced by half and very thick, 10 to 12 hours. Stir every hour or so.
  • Smooth the texture of the ketchup using an immersion blender, about 20 seconds.
  • Ladle the ketchup into a fine strainer and press mixture with the back of a ladle to strain out any skins and seeds.
  • Transfer the strained ketchup to a bowl. Cool completely before tasting to adjust salt, black pepper, or cayenne pepper.

5 Ingredient Quick Homemade Ketchup image

This 5 ingredient quick homemade ketchup is delicious and so much more healthy than the store-bought version. Plus, it's made in under 30 minutes!

1 cup tomatoes (I used two big tomatoes and half a cup cherry tomatoes)
2 teaspoons light brown sugar
2 teaspoons apple cider vinegar
1 1/2 teaspoons salt
1 teaspoon paprika
1 teaspoon Worcestershire sauce

Steps:

  • Core and cut big tomatoes into 4s. Put all ingredients into a pot, bring to a boil stirring occasionally.
  • When mixture comes to a boil, reduce heat to medium and let boil for 10 minutes. Then remove from heat allow to cool for 5 minutes, then either put in a blender or food processor (I used a food processor) and process until it is smooth in consistency (about 1 minute.)
  • Then put in a container and serve. Refrigerate for storage. Lasts 4 weeks in the fridge in an airtight container.

I always argue with my husband when he dumps ketchup on prime cuts of beef, but an article in last week's paper gave this recipe in a story about chefs using humble ingredients to make great sauces - and this one really put me in my place!! I am no longer a ketchup snob! I did use Heinz low-carb ketchup to keep this more in line with my low-carb lifestyle.

1/2 lb boneless chicken thighs
1/2 cup flour
4 tablespoons vegetable oil
2 tablespoons finely sliced garlic
1/4 teaspoon cayenne pepper
1 cup ketchup
salt and pepper

Steps:

  • Chop the chicken into small (1") chunks.
  • Dust with flour.
  • Heat 2 tbsp.
  • oil in a large skillet; when very hot, add chicken chunks.
  • You may have to do this in several batches.
  • Sprinkle S& P on the chicken, and set it aside.
  • After chicken is done, add remaining oil; when that is hot, add garlic and cayenne.
  • Saute this mixture for two minutes, stirring frequently.
  • Add the ketchup to the garlic/cayenne mixture; bring it to a boil, and simmer for about five minutes.
  • Return chicken to the pan and mix to cover the chicken with the sauce.
  • Serve over white rice.

22 Pounds (or 3 #10 cans) tomatoes
6 Medium Sweet Onions
3 Green Peppers
1 Small Jalapeno
8 Cloves Garlic
3 tsp Salt
3 tsp Pepper
1 1/2 tsp Cayenne Pepper
1 tsp Whole Cloves
1 tsp Whole Allspice
1 Cinnamon Stick (whole)
1 1/2 tsp Fennel Seed
1 1/2 tsp Celery Seed
1 1/2 tsp Ground Mustard
1/3 Cup FRESH Rosemary (don't chop it, just pack it medium tight)
1/3 Cup FRESH Sage (don't chop it, just pack it medium tight)
1/4 Cup FRESH Oregano
4 1/2 Cups Cider Vinegar (5%)
3 Cups Brown Sugar (I use light)

Steps:

  • 1- (Fresh Tomatoes) rough chop (Canned Tomatoes) Smash by hand 2- Begin stewing tomatoes over medium heat 3- Coarsely chop onion and peppers (seeds and all) and add to tomatoes. Stew for 30 minutes. 4- Add the spices, herbs, vinegar and sugar (use cheese cloth or tea strainer if you like, I don't) 5- Stew for 30 minutes 6- Process with a food mill using medium size disk. The poulp and sauce should be about the consistency of a thin tomato juice. 7- place back on medium heat and simmer until the ketchup will not drain through a large holed slotted spoon. Water Bath Process for 30 minutes using hot pack method and leaving 1/2 inch head space.

  • Toss chicken with flour so that it is lightly dusted. Put 2 T oil in a large skillet, preferably nonstick, and turn heat to high. When oil smokes, add chicken in one layer. Sprinkle with salt and pepper.
  • When chicken browns on one side, turn or toss and cook on other side. This shouldn’t take more than 5-10 minutes. Remove from pan. Turn off heat and let pan cool for a few minutes.
  • Add remaining oil to pan and turn heat to medium high. Add garlic and cook, stirring for about 2 minutes. Add ketchup and stir; cooking until ketchup bubbles and darkens slightly. Return chicken to pan and stir to coat with sauce. Taste and drool.
  • (Once removed the chicken from the pan, I tossed in some slivered onion and cooked that briefly. I then added a package of yakisoba noodles and stirred then around until warm. This picked up the flavors of the ketchup and garlic and was yummy with the chicken.)
