HOMEMADE KETCHUP
This ketchup does come close to those name brands in terms of taste, texture and color. I've never had a tomato paste-based ketchup that I liked, so I decided to cook down crushed tomatoes instead. By using the slow cooker, we take most of the labor out of the process.

Steps:
- Pour ground tomatoes into slow cooker. Swirl 1/4 cup water in each emptied can and pour into slow cooker. Add sugar, vinegar, onion powder, garlic powder, salt, celery salt, mustard powder, black pepper, cayenne pepper, and whole clove; whisk to combine.
- Cook on high, uncovered, until mixture is reduced by half and very thick, 10 to 12 hours. Stir every hour or so.
- Smooth the texture of the ketchup using an immersion blender, about 20 seconds.
- Ladle the ketchup into a fine strainer and press mixture with the back of a ladle to strain out any skins and seeds.
- Transfer the strained ketchup to a bowl. Cool completely before tasting to adjust salt, black pepper, or cayenne pepper.

Steps:
- Core and cut big tomatoes into 4s. Put all ingredients into a pot, bring to a boil stirring occasionally.
- When mixture comes to a boil, reduce heat to medium and let boil for 10 minutes. Then remove from heat allow to cool for 5 minutes, then either put in a blender or food processor (I used a food processor) and process until it is smooth in consistency (about 1 minute.)
- Then put in a container and serve. Refrigerate for storage. Lasts 4 weeks in the fridge in an airtight container.

KETCHUP CHICKEN
I always argue with my husband when he dumps ketchup on prime cuts of beef, but an article in last week's paper gave this recipe in a story about chefs using humble ingredients to make great sauces - and this one really put me in my place!! I am no longer a ketchup snob! I did use Heinz low-carb ketchup to keep this more in line with my low-carb lifestyle.

Steps:
- Chop the chicken into small (1") chunks.
- Dust with flour.
- Heat 2 tbsp.
- oil in a large skillet; when very hot, add chicken chunks.
- You may have to do this in several batches.
- Sprinkle S& P on the chicken, and set it aside.
- After chicken is done, add remaining oil; when that is hot, add garlic and cayenne.
- Saute this mixture for two minutes, stirring frequently.
- Add the ketchup to the garlic/cayenne mixture; bring it to a boil, and simmer for about five minutes.
- Return chicken to the pan and mix to cover the chicken with the sauce.
- Serve over white rice.

- 1- (Fresh Tomatoes) rough chop (Canned Tomatoes) Smash by hand 2- Begin stewing tomatoes over medium heat 3- Coarsely chop onion and peppers (seeds and all) and add to tomatoes. Stew for 30 minutes. 4- Add the spices, herbs, vinegar and sugar (use cheese cloth or tea strainer if you like, I don't) 5- Stew for 30 minutes 6- Process with a food mill using medium size disk. The poulp and sauce should be about the consistency of a thin tomato juice. 7- place back on medium heat and simmer until the ketchup will not drain through a large holed slotted spoon. Water Bath Process for 30 minutes using hot pack method and leaving 1/2 inch head space.

- Toss chicken with flour so that it is lightly dusted. Put 2 T oil in a large skillet, preferably nonstick, and turn heat to high. When oil smokes, add chicken in one layer. Sprinkle with salt and pepper.
- When chicken browns on one side, turn or toss and cook on other side. This shouldn’t take more than 5-10 minutes. Remove from pan. Turn off heat and let pan cool for a few minutes.
- Add remaining oil to pan and turn heat to medium high. Add garlic and cook, stirring for about 2 minutes. Add ketchup and stir; cooking until ketchup bubbles and darkens slightly. Return chicken to pan and stir to coat with sauce. Taste and drool.
- (Once removed the chicken from the pan, I tossed in some slivered onion and cooked that briefly. I then added a package of yakisoba noodles and stirred then around until warm. This picked up the flavors of the ketchup and garlic and was yummy with the chicken.)
