- Preheat the oven to 425 degrees F (220 degrees C).
- Place the chicken breast, smooth-side up, on a work surface. Holding it down with one palm, slice breast horizontally, stopping 3/4 of the way through. Open like a book. Spread some salsa on one half, then close. Coat with cooking spray and sprinkle with salt and pepper. Transfer to a baking dish and top with more salsa.

- How to Cut Avocados Start by slicing the avocados in half, working the knife around the pit. Slowly work the two halves apart. This should be very easy to do if the avocado is perfectly ripe. Remove the pit by stabbing it carefully with the tip of the knife and working it loose from the fruit. Make several vertical slices into the green flesh. Be sure to reach the skin but try not to not pierce through it. Repeat by making horizontal slices, making a checkerboard effect. Take a medium-sized spoon and gently skim it between the skin and the fruit, releasing the cubed pieces into the bowl. Discard the skins into the trash or composter. How to Make Guacamole Finely chop the onions, cilantro, and the chile. Be very careful when handling the chile! If possible, wear food preparation gloves. If not, then be sure to wash everything thoroughly and do not touch the eyes or nose. (This has been learned the hard way, by the way.) Combine all the ingredients, including the lime juice and tequila into a medium bowl and carefully mash the ingredients into a thick, chunky paste. Use the back of a large spoon, a potato masher, or use a mortar and pestle if one's available! Add salt and pepper to taste, or even a light sprinkling of smoked paprika for a little extra oomph!
