There's nothing more satisfying than making bread from scratch. Turn your kitchen into a lab, and let the kids watch yeast bubble and dough rise as they participate in the experiment. For both little and big kids: Let them help measure, stir and knead.

1 teaspoon sugar
One 1/4-ounce packet dry active yeast (2 1/4 teaspoons)
3 cups all-purpose flour, plus more for dusting and kneading
1 cup whole-wheat flour
2 teaspoons kosher salt
1/2 cup extra-virgin olive oil, plus more for greasing and drizzling
Flaky sea salt, for sprinkling

Steps:

  • Combine 1 1/2 cups warm water (about 110 degrees F) with the sugar in a large bowl. Sprinkle the yeast over the top, and set aside until bubbly, 5 to 10 minutes.
  • Meanwhile, whisk together both flours and the kosher salt in a medium bowl.
  • Once the yeast is ready, add the oil to the bowl, then the flour mixture, and stir with a wooden spoon until a shaggy dough forms. Transfer to a floured work surface and knead the dough until it is smooth, elastic and slightly tacky, about 5 minutes.
  • Lightly oil the bowl that held the flour mixture, put the ball of dough in it, cover and let rise in a warm place until doubled in size, about 1 hour.
  • Generously oil an 11-by-17-inch rimmed baking sheet. Punch the dough down, and transfer it to the baking sheet. Gently stretch and pat the dough to the edges of the baking sheet with your hands (it will recede slightly from the edges). (If the dough is resistant, let it rest for about 10 minutes, then try again.) Dimple the dough all over with your fingers. Loosely cover, and let rise in a warm place until almost doubled in size, about 30 minutes.
  • Meanwhile, preheat the oven to 425 degrees F. When the dough is ready, uncover, generously drizzle with olive oil and sprinkle with sea salt. Bake until golden brown, 20 to 25 minutes. Let cool in the baking sheet on a wire rack. Serve warm or at room temperature.

Steps:

The dough should clear the bottom and sides of the bowl. If yours doesn’t clear the sides of the bowl, add a tablespoon of flour at a time until the dough does so. IF by chance the dough sticks to the bottom of the bowl a little bit, that’s ok. We just don’t want a dry dough. (My dough always cleans the sides and bottom of the bowl).

  • AUTOLYSE: In a large mixing bowl, stir together the flour and water until well combined. The mixture will be incredibly sticky and wet. Cover and let sit for at least 30 minutes and up to 2 hours. This will help the flour fully hydrate and will jump start the gluten formation.
  • FINAL DOUGH MIX: Add in the dry yeast or the sourdough starter along with the olive oil. Begin pinching and folding the dough by hand until the yeast and oil are somewhat combined. Then sprinkle the salt over top and continue pinching and folding the dough until everything is evenly combined. This is a very wet dough and it will take about 2 minutes of mixing by hand to combine everything.
  • SHAPE: Grease a 9x13" pan with about 1 tbsp of the olive oil. Transfer the dough into the pan and turn to coat it in oil. Start stretching the dough to fit the pan. It will likely not stretch completely and will want to fight you and snap back in place. Cover the pan with plastic wrap and let it sit for 20-30 minutes to relax.
  • FERMENT: After the dough has relaxed, stretch it again until it fits the pan completely. Cover the pan with plastic wrap and let it ferment at room temperature for about 8 hours or in the refrigerator for at least 24 hours and up to 72 hours. The cold temperature will slow down the yeast activity and will allow the dough to develop more flavor.

  • Make the dough: In a large bowl, whisk together the flour, salt, and instant yeast. Add the water. Using a rubber spatula, mix until the liquid is absorbed and the ingredients form a sticky dough ball. Rub the surface of the dough lightly with olive oil. Cover the bowl with a damp tea towel or plastic wrap and place in the refrigerator immediately for at least 12 hours.
  • Line two 8- or 9-inch pie plates or a 9×13-inch pan (see notes above) with parchment paper or grease with butter or coat with nonstick cooking spray. (Note: This greasing step may seem excessive, but with some pans, it is imperative to do so to prevent sticking. With my USA pans, I can get away with olive oil alone; with my glass baking dishes, butter is a must.)
  • Pour a tablespoon of oil into the center of each pan or 2 tablespoons of oil if using the 9×13-inch pan. Using two forks, deflate the dough by releasing it from the sides of the bowl and pulling it toward the center. Rotate the bowl in quarter turns as you deflate, turning the mass into a rough ball. Use the forks to split the dough into two equal pieces (or do not split if using the 9×13-inch pan). Place one piece into one of the prepared pans. Roll the dough ball in the oil to coat it all over, forming a rough ball. Repeat with the remaining piece. Let the dough balls rest for 3 to 4 hours depending on the temperature of your kitchen.
  • Set a rack in the middle of the oven and preheat it to 425°F. Pour another tablespoon of oil over each round of dough. Rub your hands lightly in the oil to coat, then, using all of your fingers, press straight down to create deep dimples. If necessary, gently stretch the dough as you dimple to allow the dough to fill the pan. Sprinkle with flaky sea salt all over.

  • A naturally leavened rise is best. You can use a sourdough starter or other means of natural leavening to give focaccia dough its rise. A long rise with natural leavening is the best way to make focaccia, as this method creates subtle new flavors and deeper complexity.
  • Proof your dough for an hour or so before baking. An hour or more before you bake your focaccia, shape your dough for proofing. There are all kinds of intricacies that bakers consider at this stage, like the art of folding dough for individual loaves or sheets of bread.
  • Test different cooking vessels: sheet pan, stone, cast iron. Different surfaces affect focaccia texture in different ways. Baking sheets give a thinly crunchy bottom.
  • Lightly dimple the shaped dough surface—and add olive oil. After you’ve shaped focaccia on your cooking surface, lightly dimple its top, carefully using your fingertips.
  • Top with other fresh ingredients, letting your mind wander. We come to the best part of focaccia: toppings. Here, there are no limits. Flaky sea salt and rosemary.
  • Enjoy bread oven-hot, or cut from the leftover loaf just before eating. Like many foods, focaccia peaks hot out of the oven. Of course, you won’t always eat a whole sheet then and there, especially if you’ve made a large one.

In a large bowl, combine the whole-wheat flour, all-purpose flour, salt and Italian dried herbs and mix together. Add olive oil to the flour mixture and slowly add the yeast mixture into the flour mixture a little at a time until the dough comes together. I do not have one of those fancy dough mixers so just used a fork and then my hands to get the dough to come together and it worked just fine. The dough should eventually form a ball and it will be slightly sticky. If too sticky add a little more all purpose white flour. The dough should not be stiff.
  • Knead the dough on a floured surface for just about a minute and shape it into a ball. Clean, dry and grease your bowl and put the dough ball into the bowl covered tightly with plastic wrap for about 1.5-2 hours until doubled in size. (Bread loves to rise in a warm place so I usually turn on my oven and get it to temperature (about 190 degrees Celsius and then crack open the oven just a tad and turn off the oven, your bread might rise a little faster this way)
  • Line a baking sheet with parchment paper and coat with olive oil. Place the dough ball in the centre of the baking pan and press it out with your fingers until you shape it into a rectangle. Give it some time, because of the gluten in the bread, it wants to constrict. Slowly press down and out and eventually the dough will relax enough and take the shape of the pan. (My boys loved helping out with this part of the bread making process as it is quite fun and they love working dough with their hands) Cover with a damp tea cloth and let rest for 30 minutes.
